Easy savory bites made with sausage and cheese.

Provided by ©Amy Johnson | She Wears Many Hats

Time 45m

Number Of Ingredients 7

3 cups all-purpose flour
4 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cayenne/red pepper
3 tablespoons melted butter
1 pound sharp cheese, grated
1 pound ground sausage (I like the sage flavored sausage for this recipe.)

Steps:

  • Preheat oven to 400-degrees F.
  • In a large bowl, whisk together flour, baking powder, salt, cayenne/red pepper and butter. Add grated cheese and toss to coat. Crumble up sausage as it is added in and using your (clean) hands, combine well. The best way to fully incorporate the mixture is to squeeze and squish, almost kneading it together. It takes a few minutes but it works.
  • Firmly roll into approximately 1 1/2-inch balls and place on un-greased baking sheets about an inch or so apart.
  • Bake at 400-degrees F for 15 minutes.

SAUSAGE BALLS

Sausage Balls image

Sausage balls are a classic party appetizer for a crowd and they couldn't be simpler--just mix, shape and bake. We've included thinly sliced scallions in our version for subtle onion flavor and a touch of color.

Time 40m

Yield 40 balls

Number Of Ingredients 4

1 pound ground pork sausage, such as Jimmy Dean, at room temperature (see Cook's Note)
2 cups biscuit baking mix, such as Bisquick (see Cook's Note)
1/2 cup thinly sliced scallions, optional
One 8-ounce package sharp Cheddar, grated

Steps:

  • Preheat the oven to 350 degrees F and line 2 baking sheets with parchment.
  • Combine the sausage, baking mix and scallions if using in a large bowl and gently knead with your hands until the baking mix is fully incorporated. Add the Cheddar and continue to mix until the cheese is evenly distributed.
  • Using a tablespoon to scoop, divide the mixture into walnut-size pieces and shape into balls with your hands. Arrange on the lined baking sheets about 2 inches apart, about 20 balls per baking sheet.
  • Bake until the sausage balls are golden brown and cooked through, about 26 minutes. Serve warm or at room temperature.

AUNT MARJORIE'S SAUSAGE BALLS

Aunt Marjorie's Sausage Balls image

I'm posting this for my relatives. Aunt Marjorie was married to my father's brother, Luther. She was an Army nurse during WWII, and boy, could she cook! Her granddaughter Jessica compiled all her recipes into a book, which is where I got this one. These are not good if overcooked. So watch them - don't let them get too...

Time 25m

Number Of Ingredients 4

1 lb loose pork sausage
1 lb cheddar cheese, shredded (i usually use the smoked cheddar)
3 c bisquick baking mix
1-2 dash(es) cayenne pepper

Steps:

  • 1. Preheat oven to 375°. Break sausage up into very small pices before beginning this. Combine all ingredients (have them at room temperature) in a large bowl with your hands. Shape into balls about the size of a large grape - should make about 48 balls. Don't make the balls too big, because they swell a bit when cooking.
  • 2. Place the sausage balls on an ungreased baking sheet. Bake at 375° until slightly browned, about 18-20 minutes. Remove from oven and cool. The last time I made them it took 23 minutes. Don't let them get too brown because they will dry out. Store leftovers (if any!) airtight.
