AUNT FANNY'S BUTTERMILK PIE
If you're not familiar with it, buttermilk pie is made with a creamy custard. Some call it sugar pie down here. From the book Country Cooking from a Redneck Kitchen.

- Preheat the oven to 350F
- In a medium bowl, whisk together the eggs, buttermilk, and vanilla.
- In a large bowl, stir together the sugar, cornstarch, and salt. Pour the melted butter on top and mix well. Pour in the egg mixture and stir until incorporated.
- Line each of the two 9-inch deep-dish pie pans with the crusts. Divide the custard mixture between the pie shells.
- Bake until the filling is a little jiggly when you tap the pans but not runny. 50 minutes to 1 hour. Do not over bake the pies. Let cool completely on a wire rack before serving. The pies can be refrigerated overnight and brought to room temperature before serving.

A deep-dish double crust apple pie using Granny Smith apples. Tart and tasty.

- Preheat oven to 375 degrees F (190 degrees C.)
- Shred the apples into a large bowl. Stir in sugar, cinnamon, cloves and nutmeg. Mix well and place in bottom crust. Dot the top with 3 tablespoons butter.
- On a cutting board, place rolled out (or packaged) pie crust. With a leaf or apple cookie cutter, cut shapes from the pie crust. Position the cutouts all over the top of the pie, leaving small spaces between cutouts for the vent holes.
- Bake in the preheated oven for 30 minutes. Remove pie from oven and brush with 3 tablespoons melted butter. Return to oven and bake an additional 15 minutes, or until golden brown. Place a piece of aluminum foil under the pan in case it boils over.

AMISH BUTTERMILK PIE
There's a hint of lemon in this custard-like buttermilk pie. Simple, quick, and easy to make. Top with whipped cream, powdered sugar, or serve just as-is.

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine sugar and lemon zest in a bowl. Using your hands, rub zest into sugar to release the natural oils of the zest. Add flour and mix well.
- Whip in buttermilk, lemon juice, eggs, butter, and lemon extract. Pour batter into pie crust.
- Bake in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake until center is slightly jiggly in center, 50 to 65 minutes. Custard will continue to set as pie cools.

- Prepare a 9-inch pie shell and set aside.
- Mix sugar an flour.
- Blend in butter, eggs, buttermilk, orange extract and orange rind. Beat until mixture is very smooth.
- Pour into unbaked pie shell and bake at 350° until pie is set, about 45 minutes.
- Serve warm or chilled, topped with slices of kiwi and strawberries, if desired.
- If you like, add whipped cream for garnish.

AUNT HATTIE'S BUTTERMILK CUSTARD PIE
Steps:
- Preheat the oven to 450 degrees. Cream butter and sugar Add egg yolks, flour and vanilla then beat lightly. Add buttermilk and stir well. Fold in whipped egg whites just enough to combine. If wanted brush pastry shells with egg white slightly beaten with fork. Pour in filling and bake 10 minutes at 450 degrees. Reduce heat to 300 and bake until firm about 15 minutes.
