After testing many apple cake recipes with fresh apples, this old-fashioned cake is moist, dense and down-home delicious. Even better, it 's quick to fix and, served warm with whipped cream or a dollop of frozen custard, one of my family's very favorite recipes for decades. -Sherry Ashenfelter, Waterville, Ohio

1-3/4 cups sugar
1 cup vegetable oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/4 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
2 cups finely chopped peeled tart apples
1 cup chopped walnuts
1-1/4 cups whipped topping

Steps:

  • Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

This was one of my favorite recipes that my grandmother made. She always seemed to have the ingredients on hand and would whip one up in no time!

3 eggs, beaten
2 cups sugar
3 cups chopped unpeeled apples
1 cup vegetable oil
3 cups self rising flour
1 cup chopped pecans or 1 cup chopped walnuts

Steps:

  • Cream eggs, oil and sugar together and then add flour and mix well.
  • Add apples and nuts and mix well.
  • Bake in a greased and floured 9x13 pan in 275 degree oven for 1 hour.

3 tablespoons sugar
3 cups sugar
3 teaspoons cinnamon
3 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon nutmeg
1 1/2 cups vegetable oil
3 eggs
3 cups chopped apples (about 3 apples)
2 teaspoons vanilla extract
1 cup chopped pecans
1/2 cup raisins
prepared frosting, melted (from a can)

Steps:

  • Preheat oven to 325°F Grease 10" tube pan, combine 3 Tablespoons sugar with 1 teaspoon cinnamon, coat pan with sugar mixture.
  • Mix flour, soda, salt, nutmeg, and cinnamon; set aside. Beat oil and sugar until blended. Beat in eggs, one at a time, and then stir in apples and vanilla. Add flour mixture until blended; stir in pecans and raisins.
  • Transfer to pan and then drop and shake the pan to release bubbles.
  • Bake 1 1/2 hours - 1 3/4 hours until toothpick comes out clean. Cool on rack 15 minutes, remove from pan and glaze.

My friend Robin's Aunt Mary, both of whose parents were born in Hungary, was a legendary cook. This is one of her cakes--a very moist and delightful cake.

2 1/2-3 cups apples, peeled, cored, chopped
1 cup sugar
1 egg, beaten
1/2 cup unsalted butter, melted
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon cinnamon (or 1/2 teaspoon cinnamon and 1 teaspoon vanilla)
1/2 cup raisins
1/2 cup nuts, chopped (optional)

Steps:

  • Preheat over to 350 degrees F.
  • Sprinkle apples with sugar and let stand.
  • Mix beaten egg and butter.
  • Sift in flour, soda, salt and cinnamon and mix very well.
  • Fold into apples and make sure the apples are well and evenly coated.
  • Mix in raisins and, if desired, nuts.
  • Note: we use raisins which have been soaked in bourbon.
  • Note 2: If using regular raisins, make sure you plump them in warm water or rum or the like, then drain before adding.
  • Place in a buttered 8" x 8" square baking dish or in a buttered bundt pan and bake for about 50 minutes.
  • Cool briefly on rack in pan; turn out of the pan and allow to cool to room temperature on a rack.

2 tablespoons canola oil

6 cups chopped peeled tart apples
1/2 cup chopped pecans
FROSTING:
4 ounces reduced-fat cream cheese

1 cup confectioners' sugar

Steps:

  • Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat sugar, eggs, applesauce, oil and vanilla until well blended. In another bowl, whisk flour, baking soda, cinnamon and salt; gradually beat into sugar mixture. Fold in apples and pecans., Transfer to prepared pan. Bake 35-40 minutes or until top is golden brown and a toothpick inserted in center comes out clean.
