My late Aunt Evelyn, who was diabetic for many years, was a creative cook who shared this recipe with my mother, who shared it with me. This is a proven hit for potlucks, barbecues, and church suppers, and no one would guess it was a low-sugar and low fat recipe.

2 packages jello-o fat-free sugar-free instant vanilla pudding mix
4 cups skim milk
1 (8 ounce) container reduced fat or 1 (8 ounce) container nonfat sour cream
1 (8 ounce) container cool whip sugar-free whipped topping, thawed
4 -5 firm but ripe bananas
11 ounces box nilla reduced-fat vanilla wafers

Steps:

  • Combine pudding mix and milk in large bowl. Beat or whisk for 2 minutes until thickened. Refrigerate for 5 minutes. Fold sour cream and whipped topping into pudding and set aside. Crumble 6 vanilla wafers into coarse crumbs by hand and set aside for garnish. In a 9x13 dish or deep round bowl, layer vanilla wafers, sliced bananas, and pudding mixture until layers run out (about 4 layers), ending with pudding mixture. Sprinkle top with reserved vanilla wafer crumbs. Cover and refrigerate about 4 to 6 hours to allow vanilla wafers to soften.

2 (6 1/2 ounce) packages jell-o vanilla instant pudding mix
1 (8 ounce) package Cool Whip
1 (8 ounce) package sour cream
1 (12 ounce) package vanilla wafers
4 -6 bananas

Steps:

  • Mix pudding as box directs.
  • Add to pudding the Cool Whip and sour cream; stir.
  • When pudding is mixed, layer pudding, vanilla wafers, bananas, pudding, vanilla wafers and bananas, etc.

1 (14 ounce) can Eagle Brand Condensed Milk (sweetened condensed, not evaporated milk!)
2 cups whipping cream, whipped (I use 1-2 containers Cool Whip)
1 1/2 cups cold water
36 vanilla wafers, more if desired
1 (3 1/2 ounce) package vanilla flavor instant pudding and pie filling mix (I also like the banana cream pudding mix)
3 medium bananas, sliced and dipped in
lemon juice

Steps:

  • In large bowl, combine sweetened condensed milk and water.
  • Add pudding mix; beat well.
  • Chill 5 minutes.
  • Fold in whipped cream.
  • Spoon 1 cup pudding mixture into 2 ½ quart glass serving bowl.
  • Top with 1/3 each of the wafers, bananas and pudding.
  • Repeat layering twice, ending with pudding.
  • Chill thoroughly.
  • Garnish as desired.
  • Refrigerate leftovers.

This Banana Pudding is so creamy and delicious, you'd never know unless you made it yourself and saw the fat free ingredients!!! I altered a very fattening, but heavenly delicious recipe found on recipezaar as the #1 rated banana pudding (thank you to the poster, because it was heavenly) and when I made it this way, it tastes not a bit different. I even tried it on my skeptical family and they loved it! I have also included the options to make it into my normal "lite, sugar-free" recipe!

1 (11 ounce) box reduced-fat vanilla wafers (You can use regular or reduced fat, which is what I use)
8 -10 bananas, sliced (They should be black on the outside and very soft on the inside)
1 (8 ounce) package fat free cream cheese (or 1/3 less fat, which is what I normally use)
1 (14 ounce) can fat-free sweetened condensed milk (or regular or low fat, which is what I normally use)
1 (5 ounce) sugar free fat free French vanilla pudding and pie filling mix (INSTANT. You may have to use 1 1/2 packages of 3.4 oz if they don't carry the 5oz packages)
2 -3 cups 1% low-fat milk (I normally use the 1%) or 2 -3 cups skim milk (I normally use the 1%)
1 (16 ounce) container fat-free whipped topping (I normally use the lite)

Steps:

  • Line a 9 x 13 glass dish with nilla wafers.
  • Top them with 3/4 the sliced bananas (leave some to mix in the pudding mixture, or you can line them all on top of wafers).
  • In a bowl mix the pudding and milk with a mixer until smooth and creamy, but not too thick, to taste.
  • In a separate bowl, mix cream cheese and condensed milk with mixer until smooth.
  • Fold whipped topping into pudding mixture.
  • Mix cream cheese mixture into pudding mixture.
  • If you left any bananas, mix them into the final mixture and pour over the bananas in the dish.
  • Refrigerate overnight for best results.

8 chocolate marshmallow moon pies, cut into pieces
2 cups sugar
6 eggs, beaten
4 tablespoons cornstarch
4 cups whole milk
1 tablespoon vanilla extract
4 ripe bananas, sliced
1 (8 ounce) container Cool Whip

Steps:

  • Cut your Moon Pies into pieces, and place 4 pies worth of pieces into the bottom of a large oblong serving dish. Add a layer of two of the sliced bananas over that.
  • Mix sugar and eggs together, blending well, in a large heavy saucepan. Add cornstarch and milk.
  • Bring to a boil over medium-high heat stirring constantly. Cook until thickened.
  • Remove pan from heat and add vanilla, mixing well. Allow to cool slightly.
  • Pour half of the pudding mixture over the Moon Pies and bananas. Add your final 4 chopped Moon Pies and the 2 remaining sliced bananas on top of the pudding, then top with the rest of the pudding.
  • Cover the top of the pudding with plastic wrap, laying it down on the pudding to prevent a "skin" from forming.
  • Once the pudding is completely cooled, top with Cool Whip and refrigerate until ready to serve.
