10.75 oz can cream of mushroom soup (or cream of celery soup*)
1 c. sour cream
1 c. shredded Cheddar cheese
1/2 c. finely chopped onion
2 cans French Style green beans, drained (14.5 oz each)
2 c. frozen corn (thawed)
1/4 c. crushed cheese crackers
Butter flavored spray

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl combine soup, sour cream, cheese and onion. Mix in corn and beans.
  • Transfer to 2 quart baking dish prepare with non-stick cooking spray.
  • Cover and bake 25 minutes in preheated oven. Uncover and sprinkle crushed crackers around outside of edge of pan. Spritz crackers with butter flavored spray. Bake 15 more minutes.

1 package (16 ounces) frozen French-style green beans, thawed and drained
2 cups frozen corn, thawed and drained
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup chopped onion
1 cup sour cream
1 cup shredded cheddar cheese
Salt and pepper to taste
1-1/2 cups crushed butter-flavored crackers (about 36 crackers)
1/2 cup french-fried onions

Steps:

  • Preheat oven to 350°. Grease a 13x9-in. baking dish; set aside. Combine beans, corn, soup, onion, sour cream, cheese, salt and pepper. Transfer to a prepared baking dish. Sprinkle with crackers and french-fried onions. Bake, uncovered, until heated through, 25-35 minutes.

1 (14.5 ounce) can French-cut green beans, drained
1 (14.5 ounce) can corn, drained
1 (10.75 ounce) can cream of celery soup
1 cup shredded Cheddar cheese
½ cup sour cream
½ cup diced celery
½ cup onion, chopped
1 sleeve buttery round crackers (such as Ritz®), finely crushed
¼ cup butter, melted
7 tablespoons slivered almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine green beans, corn, soup, Cheddar cheese, sour cream, celery, and onion in a bowl. Mix thoroughly. Pour vegetable mixture into a 8-inch square baking dish and spread evenly.
  • Combine crackers and melted butter in a small bowl. Mix well, coating crackers with the butter. Pour over the vegetable mixture in the baking dish and spread evenly without stirring. Sprinkle almonds on top.
  • Bake in the preheated oven until set, about 30 minutes.

Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my Great Aunt Effie.

1 can(s) french style green beans, drained
1 can(s) shoe peg corn, drained
1/2 c chopped onion
1/2 c chopped celery
1/2 c chopped green bell pepper
1/2 c shredded cheese
1 can(s) cream of celery soup
1/2 c sour cream
1 stick butter
1 c crushed cracker crumbs

Steps:

  • 1. Mix green beans, corn, onion, celery, bell pepper, cheese, soup and sour cream together well and place in a buttered baking dish.
  • 2. Melt 1 stick butter and mix with 1 cup crushed cracker crumbs.
  • 3. Spread buttered cracker crumbs over mixture and bake 40 minutes at 350°F.

REFRIED BEAN, ZUCCHINI AND CORN GRATIN



Refried Bean, Zucchini and Corn Gratin image

This is my own interpretation of a traditional Southwestern dish (that has many interpretations) called Three Sisters Casserole. Three Sisters refers to the Native American practice of growing corn, beans and squash in the same field. I've seen many different recipes for Three Sisters Casserole and Three Sisters Gratin, some using winter squash, more using summer squash. Sometimes the vegetables are combined and topped with a layer of polenta. In this version, each element gets its own flavorful layer. Although you can use canned beans for the dish, I urge you to use simmered beans because the refried beans will taste best if you reduce them in their flavorful broth.

3 cups simmered black beans or pinto beans, with liquid (see recipe)
2 tablespoons grapeseed or sunflower oil
2 teaspoons cumin seeds, ground
1 chipotle in adobo, seeded and minced (optional)
Salt to taste
1 teaspoon mild or hot chili powder (more to taste)
2 tablespoons extra virgin olive oil
1/2 cup minced onion
Salt to taste
2 garlic cloves, minced
1 1/2 pounds zucchini or mixed zucchini and yellow squash, sliced about 1/4 inch thick
1/2 to 1 teaspoon oregano, preferably Mexican oregano, to taste
2 cups corn kernels (fresh or frozen)
1 1/4 cups milk
1 serrano chile, minced
1/4 cup cornmeal or polenta
Salt to taste
1/2 cup grated asadero, Monterey Jack or pecorino
1/4 cup crumbled queso cotijo, queso fresco, or feta
1 tablespoon butter or extra virgin olive oil

Steps:

  • Heat oven to 375 degrees. Oil or butter a 2-quart baking dish or gratin dish.
  • Refry beans: Drain off about 1/2 cup of liquid from beans, retaining it in a separate bowl to use later for moistening beans, should they dry out. Heat oil over medium-high heat in a large, heavy nonstick frying pan and add ground cumin and chili. Cook, stirring over medium heat, for about a minute, until the spices begin to sizzle and cook. Add beans and optional chipotle. Fry beans, stirring and mashing with the back of a spoon, until they thicken and form a thin crust on the bottom of the pan. Stir up crust and mix into the beans. Cook until beans are thick but not dry, about 10 minutes. Add liquid you saved from the beans if they seem too dry. Taste refried beans and adjust salt (they probably won't need any as the broth reduces when you refry them). Spread in an even layer in the baking dish. (Note: If you use canned beans, do not drain. The frying process will go more quickly.)
  • Clean and dry skillet. Heat over medium heat and add olive oil. Add onion and cook, stirring, until tender, about 5 minutes. Add a pinch of salt and garlic and cook, stirring, until garlic is fragrant, about 30 seconds. Add squash, oregano, salt and pepper, and turn up heat slightly. Cook, stirring often or tossing in pan, until squash is translucent and tender, 5 to 10 minutes. Taste and adjust seasoning. Spread in an even layer over the beans.
  • Combine corn and milk in a saucepan and bring to a simmer. Simmer 5 minutes, until corn is just tender. Stir in cornmeal and minced serrano, add salt to taste, and continue to simmer until mixture is thick, 3 to 5 minutes. Stir in grated cheese. Remove from heat and spread in an even layer over squash. Sprinkle crumbled cheese over top. Dot with butter or drizzle on oil.
  • Place in oven and bake 25 minutes, until bubbly and crumbled cheese is lightly browned. Serve hot or warm.

French style green beans are regular green beans that have been thinly sliced. If all you have is the regular kind, simply slice them into thin strips with a knife or use them whole.

2 c shredded cheddar cheese
1 c sour cream
1/2 c chopped green onion

2 sleeves of Ritz Crackers
butter (dot to taste)

Steps:

  • 1. Preheat oven to 350 degrees. Combine all ingredients except Ritz crackers and butter.
  • 2. Place into a greased 9 x 13 pan.
  • 3. Crush the Ritz crackers and add to top of casserole.
  • 4. Dot with butter.
  • 5. Bake for 45 minutes.
