My friend's mother, Miss Betty, served this to her family on special occasions. This version is for 2. It can easily be increased. The dressing amounts are guesstaments; Miss Betty did not measure......

Number Of Ingredients 7

2 ripe banans
a few lettuce leaves, head lettuce or bibb
chopped walnuts
DRESSING
1/4 c or so mayonnaise
2-3 tsp sugar - to taste
a little water or milk

Steps:

  • 1. Divide lettuce leaves between 2 plates.
  • 2. Peel bananas, slice in half lengthwise then slice each half in two. Place on lettuce leaves.
  • 3. Whisk together mayonnaise and sugar until sugar has dissolved. Thin with a little milk or water to desired thickness.
  • 4. Drizzle over bananas. Top with chopped walnuts.

1 can (20 ounces) pineapple chunks, drained
1 can (15-1/4 ounces) sliced peaches, drained and cut into bite-size pieces
1 can (11 ounces) mandarin oranges, drained
3 bananas, sliced
2 unpeeled red apples, cut into bite-sized pieces
FRUIT SAUCE:
1 cup cold whole milk
3/4 cup sour cream
1/3 cup thawed orange juice concentrate
1 package (3.4 ounces) instant vanilla pudding mix

Steps:

  • In a large bowl, combine fruits; set aside. Whisk sauce ingredients until smooth. Gently fold into fruits. Cover and chill for 3-4 hours before serving.

Betty's Salad is a regional, Midwest salad created by Betty Timko and featured as a menu item at her restaurant, Timko's Soup and Such, in Toledo, Ohio. The restaurant was located in a brick building at the Northwest corner of Sylvania and Douglas Roads of the Devaux Village strip mall in West Toledo. After Betty died, the restaurant closed, and her signature salad dressing is still produced and distributed at regional grocery stores.

1 (12 ounce) package spinach
6 hard-boiled eggs, sliced
1 (6 ounce) can bean sprouts, drained
1 (6 ounce) can water chestnuts, drained and sliced (a second can is optional, depending on the recipe you follow )
1 lb fried bacon, crumbled
1 cup salad oil
3/4 cup sugar
1/4 teaspoon salt or 1/4 teaspoon salt, to taste
1/3 cup catsup
1/4 cup white vinegar
1 tablespoon Worcestershire sauce
1 small-to-medium onion

Steps:

  • Layer salad ingredients in order listed below.
  • Half (1/2) Package Spinach
  • Six (6) Hard Boiled Eggs, sliced
  • One (1) Can Bean Sprouts, drained
  • 1-2 Cans Water Chestnuts, drained and sliced (optional, depending on the recipe you follow
  • Add crumbled bacon.
  • Mix dressing in blender and pour over salad.

1 cup orange juice with lots of pulp, or more as needed
3 ripe, sweet apples, such as Red Delicious
One 8-ounce can crushed pineapple
1/2 cup frozen grated coconut, thawed
1/4 cup sugar

Steps:

  • Pour the orange juice into a medium bowl. Peel and core the apples, and then grate them into the orange juice using the large-hole side of the grater. Add the pineapple, coconut and sugar. Mix well, adding more orange juice if the mixture is not juicy enough. Store in the refrigerator until ready to serve. The apples will continue to absorb juice, and orange juice can be added as needed to keep it as juicy as you like. 1 (6 ounce) package of any flavor Jello gelatin, I use Cherry
1 (14 ounce) can chunk pineapple, reserve juice
1 (6 ounce) can mandarin oranges, reserve juice
1 (14 ounce) can peaches, reserve juice
some fresh green grape
1 (10 ounce) jar maraschino cherries, drained
1 cup walnuts, chopped (optional)

Steps:

  • Drain the canned fruit. Use up to 2 cups of it for 2 cups of the liquid in the jello.
  • Make up the jello using 2 cups of boiling water, and 2 cups of juice from the canned fruit, mixing well.
  • Put into the mold.
  • Refrigerate for about 1 1/2 hrs., or until jello is partially set.
  • Stir in the drained fruit and nuts, and refrigerate until set.
  • When ready to serve, tip bottom of mold into hot water for a few seconds. This will help to release mold onto serving plate.
  • When ready to serve, place serving plate on top of mold and invert.
  • Serve.

2 (3.4 ounce) packages instant vanilla pudding mix
1 cup milk
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container sour cream
1 (8 ounce) container frozen whipped topping, thawed
6 bananas, sliced
½ (12 ounce) package vanilla wafers

Steps:

  • In a medium bowl, combine pudding mix and milk and stir until mix is dissolved. Refrigerate 15 minutes, until partially set.
  • Stir condensed milk into pudding mixture until smooth. Fold in sour cream and whipped topping. Fold in bananas.
  • Make a single layer of vanilla wafers in the bottom of a 9x13 inch dish. Spread pudding evenly over wafers. Crush remaining wafers and sprinkle on top. Refrigerate until serving.

¾ pound sliced bacon
1 large head iceberg lettuce, shredded
¼ cup sliced onion
¼ cup thinly sliced celery
1 (8 ounce) can water chestnuts, drained and sliced
1 (10 ounce) package frozen peas
1 cup mayonnaise, or to taste
1 tablespoon white sugar
2 tablespoons grated Romano or Parmesan cheese
4 tomatoes, cut into wedges
2 hard-cooked eggs, sliced
1 tablespoon chopped fresh parsley for garnish

Steps:

  • Spread the lettuce out on a large serving dish or bowl. Sprinkle the onion, celery, water chestnuts and frozen peas (unthawed) over the lettuce in layers. Spread mayonnaise over the top like a frosting. Sprinkle with sugar and grated cheese. Cover and refrigerate overnight.
  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Before serving, sprinkle crumbled bacon over the top, and garnish with tomato wedges, slices of hard-cooked egg, and parsley.
