First words out of DH mouth was Atomic! This is not for Wimps! Go with the flow it is said------ If you can't move to this then you probably are dead------- So wave your hands in the air------ Bust a few moves run your fingers through your hair--------- This is it for a winner-------- Dance to this and you're gonna get thinner Can't touch this------------- Can't touch this!------------ A blend of Habanero, Jalapeno and Bell Pepper. Try it on scrambled eggs make hot wings with it add a couple drops into a salsa, dip or to kick up anything for a fiery, euphoric experience! I roasted all the peppers and bulb of garlic outdoors on the grill. The prep (peeling of the Habaneros)of this is time consuming

Number Of Ingredients 10

1 1/2 lbs bell peppers (2 cups roasted, peeled and seeded)
1 lb habanero (mixed habaneros and jalapenos = 1 1/2 cups roasted ,peeled and seeded)
1 ounce garlic (1 bulb= 1/2 cup roasted and peeled)
1 lb tomatoes, peeled and seeded making 3 cups crushed
1 large sweet onion (Peeled and Chopped)
2 chipotle peppers, crushed (optional)
2/3 cup sugar
1 teaspoon ground allspice
2 teaspoons canning salt
3 cups vinegar

Steps:

  • Roasted all the peppers and bulb of garlic outdoors on the grill is best for fumes may over take the home. I also peeled the hot peppers outdoors.
  • Place all but vinegar in food processor and blend till smooth and fine.
  • Place in a large pot, mix in vinegar. Heat ad boil stirring often for 30 minutes.
  • Fill sterilized hot bottles or jars. Give jar a hot water bath for 10 minutes. Pepper jar invert.

FRIED SHRIMP IN ATOMICOCKTAIL SAUCE

Number Of Ingredients 20

2 large eggs
1/2 cup buttermilk
1/2 cup all-purpose flour
1/2 teaspoon freshly ground black pepper
1 1/2 teaspoon kosher salt
1 1/2 pounds U21-25 shrimp, peeled and deveined, tails on
1 quart peanut or vegetable oil
1 1/2 cups panko breadcrumbs
1/2 cup fine ground yellow cornmeal
1 teaspoon granulated garlic
1/2 teaspoon sweet paprika
1/4 teaspoon cayenne pepper
AtomiCocktail Sauce, recipe follows
Lemon wedges, to serve
1 cup ketchup
2 tablespoons prepared horseradish
1 1/2 tablespoons very coarsely cracked toasted black pepper (like...hit with a mallet twice)
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
2 dashes fish sauce

Steps:

  • In a large bowl whisk together the eggs, buttermilk, flour, pepper and 1 teaspoon salt. Add the shrimp and let it chill out in the fridge for at most 30 minutes.
  • Preheat the oven to 200 degrees F. Heat the oil to 350 degrees F in a deep-fryer or Dutch oven. Fit a sheet pan with a rack.
  • In a wide shallow bowl or baking dish, whisk together the breadcrumbs, cornmeal, garlic, paprika, cayenne and remaining 1/2 teaspoon salt.
  • Working in batches, use tongs to transfer the shrimp from the buttermilk mixture to the breading mixture. Make sure the shrimp is completely coated. Holding the shrimp by the tails, gently drop into the oil, one at a time. Fry in batches until golden brown, about 2 minutes per batch, allowing the oil to return to 350 degrees F between batches. Transfer the shrimp to the prepared sheet pan. Keep the shrimp warm in the oven.
  • Serve with the AtomiCocktail Sauce and lemon wedges.
  • Mix the ketchup, horseradish, pepper, lemon juice, Worcestershire sauce and fish sauce in a bowl. Chill for at least 1 hour before serving.

KRISTINA'S ATOMIC WINGS DRY-RUB STYLE

Dry rub for chicken wings to either bake or grill or fry. They go great with beer, blue cheese dressing and celery. I absolutely love spicy food so if you do too you are in for a treat! If they are too hot for you, milk will help with the heat.

1 tablespoon ground cayenne pepper
1 tablespoon ground jalapeno pepper
1 tablespoon ground habanero pepper
½ teaspoon dried oregano
½ teaspoon salt
⅛ teaspoon white sugar
⅛ teaspoon ground black pepper
⅛ teaspoon ground cinnamon
12 chicken wings, thawed if frozen

Steps:

  • Combine cayenne pepper, jalapeno pepper, habanero pepper, oregano, salt, sugar, black pepper, and cinnamon in a small bowl; mix well to make dry rub.
  • Place chicken wings in a large resealable bag or container. Add dry rub mixture to wings; seal container and shake well until evenly distributed.
  • Preheat a grill for medium heat and lightly oil the grate.
  • Cook the chicken wings on the preheated grill, turning occasionally, until the chicken is well-browned and no longer pink, 15 to 20 minutes.
