1 1/2 pounds boneless chicken breasts cut into pieces
2/3 small yellow onion, chopped (1/2 cup)
1 carrot, thinly sliced (3/4 cup)
2 celery stalks, thinly sliced (3/4 cup)
1/2 tsp fennel seeds crushed
1/2 cup heavy cream
2 tbsp. thick it up
2 tbsp fresh parsley chopped

Steps:

  • 1. preheat oven to 350 2. place chicken, broth, onion, carrot, celery and fennel seeds in a medium saucepot. Bring to a boil. Reduce heat and simmer 15 minutes until chicken is cooked through and vegetables are tender. Strain stock into a small saucepan. 3. Mix in cream, bring to a boil. Stir in thickener; cook 2 minutes until mixture thickens. Pour sauce over chicken and vegetables; stir to coat. Mix in parsley. season to taste with salt and pepper. 4. Spoon chicken mixture into a 9 in dish pie plate. 5. Bake 25-30 minutes makes 6 servings

1/3 cup whole wheat flour
1/3 cup soy flour
1/4 cup vital wheat gluten
3 tablespoons wheat germ
1/2 cup butter, cut into 1/2 cubes, cold
1 tablespoon cold water

Steps:

  • Mix dry ingredients together, then mix in butter until you have a coarse meal.
  • Add water and continue mixing until dough comes together.
  • Wrap in plastic and freeze for 15 minutes.
  • Roll dough in between two sheets of wax paper (to avoid adding extra flour).
  • Press into 9 inch pie plate.
  • Freeze for another 15 minutes.
  • Use in your recipe, or for a prebaked crust, prick the botom with a fork.
  • Cover the crust with foil and pile dried beans on top, to keep the foil right on the crust.
  • Bake at 400 for 16 minutes.
  • Remove the beans, re-cover with the foil (loosely this time) and bake another 5 minutes.
