KITTENCAL'S GREEK LEMONY RICE WITH FETA
Make this only if you are a lover of Greek food, this is a full flavored rice with intense flavor and not for those with a plain palette! --- since not everyone has a taste for olives I have left them as optional, I most always add them in -- after making this a few times you will most likely want to adjust some of the ingredients to suit your taste, or you may not, the amounts listed are close to what I use when I make this rice --- this is very good!

Steps:
- In a saucepan heat olive oil over medium-high heat.
- Add in onion, oregano, chopped garlic and black pepper; cook stirring constantly for about 3 minutes.
- Add in the rice and stir using a wooden spoon for 3 minutes.
- Slowly add in the broth and lemon juice; bring to a boil.
- Reduce heat cover and simmer until the rice is tender (about 20 minutes).
- Remove from heat and stir in the feta cheese (and kalamata olives if using).
- Season with salt and more black pepper if desired.
- Transfer to plate and drizzle the top with more lemon juice if desired.

- In a skillet on medium heat, melt butter. Once bubbling, combine lemon zest and garlic. Stir to combine.
- Add precooked rice to skillet. Stir to combine. Turn burner off once rice is warm throughout.
- Stir in feta cheese, and parsley. Drizzle with lemon juice, and season with salt and pepper to taste. Serve and enjoy!

Steps:
- Over medium heat in a saucepan, combine the rice, broth, and water, and bring to a boil.
- Cover, reduce the heat to medium low, and let simmer for 15 to 18 minutes or until the rice has absorbed the liquid; transfer to a serving bowl and keep warm.
- In a skillet over medium heat, melt the olive oil and butter together, then add the onion, mushrooms, and garlic for 5 to 7 minutes, then stir in the lemon juice and oregano.
- Add the spinach and pepper, then sprinkle with the sherry and toss until the spinach is slightly wilted; remove from heat.
- Add the crumbled feta and toss until the cheese begins to melt.
- Add to the cooked rice, toss well, and serve immediately.

GREEK LEMON AND DILL RICE WITH FETA (RICE COOKER)
From The Ultimate Rice Cooker Cookbook. The combination of dill and lemon is seen throughout Greek cooking, and is wonderful! The authors call for using a 6 cup rice cooker, but I've had no problems using my 3 cup model. Cooking time includes 20 minutes resting time for the rice. This can also be made with brown rice- just increase the chicken stock to 2 2/3 cups.

- Coat the rice bowl with cooking spray.
- Add the rice and stock to the bowl.
- Set the machine for the regular white rice cycle and start.
- When the machine switches to keep warm, let it sit and steam for 10 minutes.
- While the rice steams, heat the olive oil in a small skillet, then add the onions and cook for 5 minutes, stirring frequently, until soft.
- Add the pine nuts and cook, stirring constantly until they turn golden (just a minute or so).
- When the 10 minutes of steaming are up, add the onion and pine nut mixture to the rice, along with the lemon juice, dill, and mint (if using). Stir with a plastic rice paddle or a wooden spoon to combine.
- Close the cover and continue on 'keep warm' for 10 more minutes.
- Transfer the rice to a serving dish, and top with the feta and lemon wedges.

Steps:
- Preheat oven to 375°F.
- Heat oil in a large nonstick skillet.
- Add garlic and sauté for 2 minutes.
- Add drained tomatoes, basil, oregano, chili flakes and salt; bring to a simmer.
- Cook for 10 minutes, stirring frequently and breaking up the tomatoes as they cook.
- In a medium bowl, toss artichoke quarters, rice and feta together.
- Pour into a medium oiled casserole dish When tomato sauce is ready, pour over the rice mixture, shaking the dish so the tomato sauce settles.
- Cover and bake for 20 minutes.
- Uncover and bake an additional 20 minutes.
- Serve immediately.

- Place stock and bay leaf in a medium saucepan and bring to a boil.
- Add rice; return to a boil.
- Reduce heat, cover and simmer for 20 minutes or until rice is just tender.
- Add lemon juice, butter and 1/2 the oregano.
- Stir well and remove from heat, let cool to room temperature.
- Remove bay leaf.
- Heat oil in a large nonstick skillet over medium heat.
- Cook onion, garlic, hot-pepper flakes and the rest of the oregano , stirring, for 4 minutes or until softened.
- Add tomatoes and red pepper; cook for 3 minutes until softened.
