8 fresh asparagus spears
2 boneless skinless chicken breast halves (5 ounces each)
1 tablespoon Dijon mustard
4 fresh sage leaves
2 slices provolone cheese (1 ounce each)
2 slices deli ham (3/4 ounce each)
1/4 cup all-purpose flour
1 egg, lightly beaten
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1-1/2 teaspoons butter
1-1/2 teaspoons olive oil
1/4 cup white wine or chicken broth

Steps:

  • In a large skillet, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry., Flatten chicken to 1/4-in. thickness. Spread mustard over one side of each chicken breast. Down the center of each, place two sage leaves, a cheese slice, ham slice and four asparagus spears. Fold chicken over asparagus; secure with toothpicks., Place flour and egg in separate shallow bowls. In another shallow bowl, combine bread crumbs and Parmesan cheese. Dip chicken in the flour, egg, then bread crumb mixture., In a large skillet, brown chicken on all sides in butter and oil. Transfer to an 8-in. square baking dish coated with cooking spray. Add wine to skillet, stirring to loosen browned bits from pan. Pour over chicken. , Bake at 350° for 20-25 minutes or until chicken is no longer pink. Discard toothpicks.

1/4 cup all-purpose flour
2 cups milk
1/2 cup shredded cheddar cheese
1/4 teaspoon salt

1/4 cup dry bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, melt butter; stir in flour until smooth. Gradually stir in the milk. Bring to a boil. Cook and stir until thickened, 2-3 minutes., Stir in cheese, salt and pepper. Remove from the heat. Place three asparagus spears on each ham slice. 4 boneless, skinless chicken breasts (6 to 8 ounces each)
Salt and pepper
2 tablespoons olive oil
1 tablespoon chopped garlic
1 cup grated Asiago or Parmesan cheese
2 beefsteak tomatoes, cut into 1/8-inch-thick slices (8 slices)
8 spears asparagus, trimmed, halved lengthwise, then crosswise

Steps:

  • Preheat oven to 375 degrees. Using a sharp knife, split each chicken breast in half horizontally, then pound between 2 pieces of plastic wrap until about 3/8 inch thick (you should have 8 flattened pieces). Season on both sides with salt and pepper.
  • Heat oil in a large skillet over medium-high heat. Working in batches, saute chicken breasts and garlic until chicken is light brown on one side only, about 2 minutes; discard garlic.
  • Transfer chicken to a baking sheet, browned side down. Sprinkle chicken pieces with half the cheese; layer each with a tomato slice and 4 asparagus pieces. Roll up; secure with a toothpick. Sprinkle remaining cheese over rolls; bake until chicken is cooked through, 15 to 20 minutes. Remove toothpicks. Serve hot.

1/4 cup mayonnaise or salad dressing
1 tablespoon Dijon mustard
1 teaspoon chopped fresh thyme leaves
6 slices (1/16 inch thick) cooked ham (from deli; about 10 oz)

Steps:

  • Fill 13x9-inch (3-quart) glass baking dish half full with water and ice; set aside.
  • In 12-inch skillet, heat 1 inch water to boiling over high heat. Snap or cut off tough ends of asparagus spears. Add asparagus to boiling water; cook uncovered 2 to 3 minutes or until crisp-tender. Remove asparagus from skillet; place in baking dish with ice water. Let stand 3 to 5 minutes or until chilled. Drain; pat dry with paper towels. Set aside.
  • Meanwhile, in small bowl, mix mayonnaise, mustard and thyme.
  • Spread about 1 teaspoon mayonnaise mixture over each ham slice to within 1 inch of edges. Cut each ham slice in half lengthwise. Roll 1 ham strip tightly around each asparagus spear. Store tightly covered in refrigerator.

24 thin asparagus spears, trimmed
1/2 cup soy sauce
1/4 cup sugar
1/4 cup mirin or 1/4 cup dry sherry
1 tablespoon fresh ginger, grated
1 garlic clove, minced
1 bunch green onion, greens portions only
1 1/2 lbs beef tenderloin
fresh ground black pepper, to taste

Steps:

  • Preheat grill pan until hot; bring salted water to a boil over medium high heat in a saucepan.
  • Blanch asparagus spears for 1 minute; drain and plunge in an ice water bath to stop cooking.
  • In a small saucepan combine soy sauce, sugar, mirin (or dry sherry), ginger, and garlic; heat over medium heat until reduced and slightly thickened; set aside to cool.
  • Cut green onions in fourths, lengthwise, so you have long strips.
  • Slice beef in 1/4 inch slices, then pound to tenderize and thin out.
  • Dip beef slice in soy sauce mixture and place on a clean work surface; season with pepper.
  • Place an asparagus spear and a piece of green onion on the beef slice and roll up.
  • Do the same with the remaining asparagus and beef.
  • Grill beef rolls about 2 minutes until slightly charred and medium rare. Turn several times and brush with soy sauce mixture.
  • Remove to a serving platter and drizzle generously with soy sauce mixture.

2 large egg yolks, lightly beaten with 2 tablespoons cold water
5 ounce finely grated Parmigiano-Reggiano (1 3/4 cups packed)
28 (3/4-inch-thick) asparagus (2 pounds), stalks trimmed to 6-inch lengths and tips reserved if desired
3 tablespoons white or black truffle oil (1 1/2 ounces; optional)

Steps:

  • Unfold pastry sheets and halve each parallel to fold lines. Roll out 1 half (keep remaining 3 halves chilled, covered with plastic wrap) into a 20- by 7-inch rectangle with a floured rolling pin on a well-floured surface. (Pastry will shrink slightly after rolling.) Brush off excess flour from work surface and both sides of pastry, then trim all edges with a sharp knife to make even. Cut crosswise into 6 (6 1/2- by 3-inch) rectangles.
  • Brush rectangles with some egg wash and sprinkle each evenly with 1 packed tablespoon cheese, leaving a 1/2-inch border on long sides. Lay an asparagus stalk along 1 long side, then roll up asparagus in pastry, pressing seam to seal. Make more rolls with remaining pastry, cheese, and asparagus.

  • Transfer with a metal spatula to a cutting board and trim about 1/2 inch from ends. Halve each roll crosswise, then, starting about 1/2 inch from either end, cut each section diagonally in half (see photo, opposite). Stand asparagus rolls on end, 2 by 2 on platters, and drizzle each with 1 drop of truffle oil (if using). Serve warm.

24 asparagus spears
6 bonless and skinless chicken breasts
6 tsp dijon mustard
6 fresh sage leaves (nice size)
12 slices provolone cheese
12 slices of prosciutto
3/4 to 1 c flour
1 c italian style bread crumbs
1/2 c grated parmesan cheese
3 eggs lightly beaten
olive oil or melted butter

Steps:

  • 1. In a large skillet bring 1/2 inch of water to a boil. Add asparagus; cover and boil for 3 minutes, dran and immediately place the asparagus in ice water. Drain and place on a paper towel to dry.
  • 2. Flatten your chicken breast to about 1/4 inch thickness. Spread mustard over the chicken breast and then place 1 sage leaf, 2 slices of cheese, 2 slices of prosciutto, and 4 asparagus spears down the center. Roll up and secure with toothpicks.
  • 3. Place your flour and eggs in a separate bowl. In another bowl mix your bread crumbs and parmesan cheese. Dip the chicken in the flour, then the egg, then finally the bread crumb mixture.
  • 4. Place on a meat plate and chill for at least one hour. (Note: you can do these the night before and bake them the next day if you want to). Take out of frig and place in a baking dish coated with cooking spray. Drizzle the olive oil or melted butter over the chicken. You can also just use your cooking spray.
  • 5. Bake at 350° for 20 to 25 minutes or until the chicken is nice and brown. Remove toothpicks and serve.

2 cups shredded cabbage
4 carrots, julienned
10 -12 asparagus spears, cut into 1/4 inch pieces
3 -4 scallions, thinly sliced
1 lb lump crabmeat
2 inches ginger, grated
2 cloves garlic, finely minced or grated
2 -4 tablespoons soy sauce
1 tablespoon canola oil
1 teaspoon sesame oil
freshly ground white pepper
20 -25 egg roll wraps
canola oil, for frying
1/4 cup rice wine vinegar
3/4 cup shrimp stock or 3/4 cup vegetable stock (your choice)
1/4 cup dark soy sauce
2 tablespoons minced ginger
2 tablespoons lemons, zest of
2 teaspoons brown sugar, to taste
1 cup apricot preserves
3 -4 tablespoons yellow mustard (can add ½ yellow and ½ Dijon or spicy honey mustard your choice)
1 cup unsalted peanuts
1/4 cup low sodium soy sauce
2 teaspoons red chili paste (I like sambal)
1/2 teaspoon cayenne pepper, to taste
2 tablespoons dark brown sugar
2 limes, juiced
1/2 cup hot water
chopped peanuts, for garnish

Steps:

  • For egg rolls: Heat 1 tbsp canola oil in wok or sauté pan over medium high heat.
  • Add ginger and garlic, toss in oil.
  • Sauté cabbage, carrots and asparagus for 1-2 minutes, to heat through.
  • Add soy sauce, sesame oil and sauté for one minute more.
  • Lower heat to medium and fold in crab meat and scallions.
  • Add white pepper to taste.
  • Keep over heat to warm through.
  • Remove from heat, and let filling cool.
  • Place egg roll wrapper in front of you, point down.
  • Place about 3 tbsp of filling towards the lower half.
  • Roll the bottom up, and the sides in, like an envelope.
  • Fold over and seal the end of the egg roll with a bit of water to keep closed.
  • Repeat until all egg roll wrappers are filled.
  • Heat canola oil in wok or deep frying pan.
  • I fry four egg rolls at a time and use just enough oil to cover the egg rolls about ½ to ¾ of the way over.
  • Heat oil over medium high heat, to about 350 degrees, and fry egg rolls until golden brown on each side.
  • Remove from oil and place on metal wrack or paper towels to drain excess oil.
  • Serve with your choice of dipping sauces.
  • For sweet soy dipping sauce: Combine all ingredients and stir to dissolve sugar.
  • Allow to sit for at least one hour.
  • Can be stored covered in refrigerator for up to 2 weeks.
  • For duck sauce: Combine mustard and apricot preserves.
  • Ready to serve.
  • For peanut sauce: Blend peanuts, soy sauce, chili paste, cayenne pepper, brown sugar, and lime juice until mixed thoroughly, into a paste.
  • Add as much as hot water is needed until sauce is at desired consistency, thinner or thick, depending on taste.
  • Garnish with peanuts.

These tasty little appetizers are perfect for anything from a treat at home to elegant party nibbles. It will always be Jenny W.'s recipe to me, a lovely woman I worked with when I first came to New Zealand. She used to make them for morning tea, something I had never experienced before - a tea break where you actually talk to your workmates and share food. Brilliant idea! 5 sheets of frozen ready rolled puff pastry
400 g chicken breasts
425 g tinned asparagus
1/2 teaspoon chicken stock powder
salt
pepper
1 egg
4 tablespoons sesame seeds

Steps:

  • Preheat the oven to 220°C.
  • Lay out the sheets of puff pastry. They will defrost while you prepare the chicken.
  • Cut the chicken breast into long strips. You will need half a large chicken breast or half a medium chicken breast plus the tenderloin from the other half.
  • Sprinkle the stock powder over the chicken. I use an organic vegetable stock but use whatever you have. I have tried soy sauce but it makes the chicken too wet. Dry ingredients are better and light flavours don't overpower the asparagus. Add a grind or two of black pepper and a good pinch of salt. Make sure all the chicken is coated with some seasoning.
  • Drain the asparagus well. Tinned/canned asparagus works really well in this recipe.
  • The pastry should be defrosted enough to be able to cut the sheets in half. Cut each sheet in half to give you 10 strips.
  • Put asparagus spears down the middle of each strip. Then lay a strip of chicken beside the asparagus.
  • Beat an egg lightly and then brush some eggwash along the cut in the middle of the sheet of pastry.
  • With a sheet in front of you with the cut going left to right (not up and down), take the edge near you and fold it over the chicken and asparagus. Use the folded edge to shove the filling nearer to you until it is tucked around the filling quite tightly.
  • Now roll up the pastry to the eggwash and make sure the cut edge stays on the bottom of the roll.
  • Brush the top with egg and sprinkle plenty of sesame seeds on top.
  • Cut into 6 pieces.
  • Repeat for the other 9 strips to give you 60 little bites.
  • Place on a lightly greased baking sheet and bake in the oven for 20 minutes or until the top is golden brown and the pastry is cooked through. The chicken will cook in this time and will still be moist and tasty.
  • Take the rolls off the baking tray and cool slightly on a wire rack. Then serve warm or leave on the rack and serve cold. They are equally good warm or cold. They can be reheated but, like all pastry dishes, are better freshly baked.
  • The rolls in the photograph I have posted were made with a low-fat puff pastry. As expected, they haven't puffed up as much as usual pastry but still tasted good. Let's face it, pastry is never going to be a low-fat food so you may as well enjoy it but just not eat it all the time. I'll be going back to the usual next time. 14/12/07 - Edited to add an updated photo of rolls made with regular puff pastry. Also, I increased the amount of chicken.
  • Note: put the sesame seeds in a dish and discard any that you don't use. They could be contaminated by the chicken so you don't want to put them back in the bag.

  • Bring a pot of salted water to a boil. Cook asparagus until tender, about 3 minutes depending on thickness. Drain asparagus and shock it in ice water to stop the cooking; pat dry and set aside.
  • In a large bowl, whisk together the olive oil, 1 1/2 tablespoons lemon juice and 1/2 teaspoon lemon zest; season with salt and pepper. Add arugula and asparagus spears to bowl and toss gently to coat, being careful not to break asparagus.
  • On a large cutting board or work surface, arrange 3 slices prosciutto vertically and slightly overlapping to form a rectangle, about 6 by 8 inches.

This is an easy dish to prepare, yet elegant enough for company. I'm always asked for the recipe. I adapted it from one of my mother's recipes. And now, this is one of the few ways I can get our daughters to enjoy asparagus!

1-1/2 pounds fresh asparagus, trimmed
16 slices sandwich-type ham
Prepared mustard
6 tablespoons butter, cubed
6 tablespoons all-purpose flour
2 cups whole milk
Salt and pepper to taste
1-1/2 cups shredded cheddar cheese
6 green onions, thinly sliced, optional

Steps:

  • Cook asparagus until crisp-tender. Spread one side of each ham slice with mustard. Roll ham around 2-3 asparagus spears. Layer rolls, seam side down, in an 11x7-in. baking dish. Set aside. , In a saucepan, melt butter over medium heat. Blend in flour until smooth. Slowly stir in milk, salt and pepper. Bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in cheese and, if desired, onions. Pour over ham rolls. , Cover and bake at 350° for 20 minutes or until heated through.

I can guarantee you that people will LOVE this recipe and these things will fly off the plates, so I'd advise making more than one portion as serving 6-8 with this is probably a bit of a stretch! I got this recipe whilst doing a cookery course at The Grange in Somerset, England. NB. To prevent your phyllo from drying out, cover the unused phyllo with a damp cloth and work quickly.

2 garlic cloves
55 g butter
8 asparagus spears
55 g parmesan cheese, grated
8 sheets phyllo pastry
8 slices parma ham
black pepper

Steps:

  • Preheat the oven to 200°C.
  • Crush and finely chop the garlic and put it with the butter in a small pan over a low heat. Heat it until the butter has melted - be careful! Butter burns very easily, as does garlic.
  • Remove from the heat and allow to stand for 10 minutes. Sieve the butter/garlic mixture into a bowl.
  • Peel and trim the bases of the asparagus stalks.
  • Brush a sheet of phyllo with the flavoured butter, double it over and sprinkle it with parmesan and freshly ground black pepper. Lay a slice of Parma Ham on top, then place an asparagus spear across and roll the phyllo pastry around it. Brush the roll with more butter, cut off the ratty ends to tidy it up, then cut the phyllo-wrapped asparagus diagonally into 5cm lengths and place on a sheet of greaseproof paper on a baking tray. Repeat with the rest of the asparagus, phyllo and Parma ham.
  • Bake for 10 minutes or until golden brown.
  • Remove to a serving dish and watch them disappear.

These rolls can be great for an appetizer, side, or as a main course with a crisp salad. The seasonings work very well with the asparagus, and the walnuts give it almost a meaty bite and mellow flavor. They are a bit labor-intensive, but well worth the effort.

1 (8 ounce) package phyllo dough, thawed
1/2 cup canola oil
1 bunch asparagus
1/2 cup walnuts, coarsely ground
salt
pepper
garlic powder
tarragon

Steps:

  • Snap off the ends of the asparagus and rinse. Place into a large pan and pour in enough water to almost cover. Cover, with the lid vented. Place over medium heat until the water begins to boil. Close the lid completely and turn down the heat. Steam for 2-5 minutes, until bright green and tender-crisp. Take off the heat and drain.
  • Open the package of phyllo dough and lay onto a flat surface. Cover with plastic wrap and place a damp paper towel or wash cloth on top.
  • Pulse the walnuts in a food processor until coarsely chopped.
  • Heat the oil in a small sauce pan over medium heat for 3 minutes, until hot. Preheat the oven to 375 and grease a baking sheet.
  • Take a sheet of phyllo dough and brush with oil. Place another sheet on top and brush again. Make it 3-4 layers thick.
  • Take 3-4 asparagus stalks and stack them in a pyramid at the end of the phyllo dough that is closest to you. Sprinkle with walnuts, and a bit of the pepper, salt, garlic powder and tarragon.
  • Begin to roll it all up in the dough. Stop after every rollover and brush the dough with more oil, and close the ends up as you roll. It should resemble a large egg roll. Seal up the end of the sheets with oil and place on the greased pan. Brush the top with oil so it doesn't dry out.
  • Repeat this with the dough and asparagus until it is all used up. Bake for 15-20 minutes, until golden brown. Let cool for a few minutes and slice diagonally into thirds. Serve over a salad, or arranged on a platter as an appetizer.

PORK OR CHICKEN ROLLS WITH FONTINA AND ASPARAGUS



Pork or Chicken Rolls with Fontina and Asparagus image

Rollatini are a popular dish in Italy. They can be made with chicken, veal, or pork, and the stuffing can be just about anything you like, but do include cheese. The delight of rollatini is the oozing cheese when you cut into them. So, whatever you do, do not skimp on the cheese. This dish was very popular on the menus of Italian American restaurants in the sixties and seventies. Fontina has great melting qualities; when it is not readily available, Muenster cheese is often substituted.

Number Of Ingredients 14

1 1/2 teaspoons kosher salt, plus more for pot
12 medium asparagus spears
1 cup chicken stock (see page 40)
1/4 cup dried porcini
2 1/2 pounds boneless pork loin, trimmed
2 plum tomatoes, seeded and sliced into thin strips
8 ounces Italian fontina, cut into thin strips
1 tablespoon chopped fresh Italian parsley
All-purpose flour, for dredging the pork
6 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
8 fresh sage leaves
1 pound mixed mushrooms, sliced (button, cremini, shiitake, chanterelles, etc.)
1 cup dry white wine

Steps:

  • Preheat oven to 450 degrees F. Bring a medium pot of salted water to boil. Slip in the asparagus, and blanch until crisp-tender, about 3 minutes. Run the asparagus under cold water and pat dry. Bring the chicken stock to simmer in a small pot, then add the dried porcini and remove from heat. Let soak.
  • Slice the pork crosswise into twelve slices. Pound the pork slices to an even 1/2-inch thickness with a meat mallet. Season the pork with 1/2 teaspoon salt. Lay the pork on your work surface, and evenly divide the tomato strips on top, lining them along the longer side of the pork slice. Put an asparagus spear on each slice, and cut to fit on the meat. Divide the fontina evenly among the pork slices, and sprinkle with the parsley. Roll up the pork snugly around the asparagus, tomato, and cheese, tucking the ends in, to enclose the filling. Close each roll with a toothpick or two.
  • Drain the porcini from the broth, reserving the soaking liquid, and coarsely chop. Spread the flour on a rimmed plate. Dredge the pork rolls in the flour, tapping off the excess. Heat 3 tablespoons of the butter and the oil in a large Dutch oven over medium heat. When the butter is melted, add the pork rolls and brown on all sides, about 5 to 6 minutes. Remove the browned rolls to a plate.
  • Toss the sage leaves into the Dutch oven. When the sage is sizzling, add the sliced fresh mushrooms and chopped porcini. Season with the remaining 1 teaspoon salt, and sauté until the mushrooms are browned and softened, about 6 minutes. Pour the white wine into the Dutch oven with the remaining 3 tablespoons butter. Bring to a boil, and let the wine reduce by half, about 2 minutes; then pour in the porcini soaking liquid. Bake the pork, uncovered, until cooked through, about 18 to 20 minutes. If the pork is cooked but the sauce is too thin, remove the pork to a plate and reduce the sauce on the stovetop. Remove toothpicks before serving.
