ASPARAGUS & NEW POTATO FRITTATA
A simple, low-calorie spring main that uses the season's finest ingredients and is ready in just 20 minutes

Steps:
- Heat the grill to high. Put the potatoes in a pan of cold salted water and bring to the boil. Once boiling, cook for 4-5 mins until nearly tender, then add the asparagus for a final 1 min. Drain.
- Meanwhile, heat the oil in an ovenproof frying pan and add the onion. Cook for about 8 mins until softened.
- Mix the eggs with half the cheese in a jug and season well. Pour over the onion in the pan, then scatter over the asparagus and potatoes. Top with the remaining cheese and put under the grill for 5 mins or until golden and cooked through. Cut into wedges and serve from the pan with salad.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Heat the olive oil in a large skillet over medium heat; cook and stir the shredded potato and onion in the hot oil until the potatoes begin to brown, about 5 minutes.. Season with salt and pepper. Add the asparagus and ham and continue cooking until the asparagus is tender, another 5 to 7 minutes; transfer to the prepared baking dish. Whisk the eggs and milk together in a small bowl; pour evenly over the dish. Scatter the mozzarella and white Cheddar cheeses over the top of the potato mixture.
- Bake in the preheated oven until set in the middle, 20 to 25 minutes. Garnish with the basil to serve.

ASPARAGUS AND POTATO FRITTATA
Steps:
- Cut or snap off the tough ends from the asparagus and place the spears on a steamer rack over boiling water. Cover and steam until tender, about 2 minutes. Remove from the steamer and cut into 1-inch lengths. Set aside. In a large nonstick sauté pan over medium heat, warm 3 Tbs. olive oil. Add the green onions and sauté until soft and translucent, about 4 minutes. Add the potatoes, the 1 tsp. salt, tarragon and pepper and sauté until the potatoes glisten, about 3 minutes, adding the remaining 1 Tbs. oil if needed to prevent sticking. Cover and cook until the potatoes are nearly tender, 6 to 8 minutes. Uncover, increase the heat to high and cook, stirring constantly, until the potatoes are browned, 7 to 8 minutes. Stir in the chives and asparagus and remove from the heat. Preheat an oven to 375°F. In a nonstick fry pan or ovenproof sauté pan over medium-high heat, melt the butter. Meanwhile, in a bowl, whisk the eggs until blended. Stir in the pinch of salt and the Parmigiano-Reggiano cheese and season with pepper. Pour the eggs into the hot pan. Stir gently in the center and, using a fork or spatula, carefully lift the edges and gently push the eggs to one side of the pan, tilting the pan slightly to allow the uncooked eggs to flow underneath. Cook until thickened, 3 to 4 minutes. Spread the vegetables evenly over the eggs. Sprinkle the Swiss cheese on top. Transfer the pan to the oven and bake until the eggs are set and the cheese melts, about 15 minutes. The cooking time will depend on the size of the pan and whether the vegetables are still hot. Remove from the oven and let stand for a few minutes, then cut into wedges and serve, garnished with watercress sprigs and chive blossoms. Serves 8 to 10. P-A-C-T FRITTATA (POTATO-ASPARAGUS-CARROT-TOMATO)
Colorful not too eggy frittata. Perfect for brunch ar a light supper. Key here is the patience to NOT turn the potatoes until they are nice and crispy golden. - In small mixing bowl, beat eggs, parmesan, basil and oregano.
- Season with salt and cayenne pepper to your taste, set aside.
- Cook asparagus and carrots in boiling water until tender crisp, about 5 minutes.
- Dice and set aside.
- In medium skillet, heat 3 TBS olive oil over medium heat.
- Add onion, cover and cook on low til limp, about 10 miuntes.
- Remove lid, turn to medium and add garlic.
- Cook and stir until golden in color, about 5 minutes.
- Add bell pepper and stir until tender about 5 minutes.
- Remove from skillet with slotted spoon and mix with carrots and asparagus.
- Season with salt and pepper to your taste.
- Preheat oven to 350.
- Combine in 12 inch skillet, preferably cast iron and MUST BE OVERPROOF, 2 TBS olive oil and 3 TBS butter.
- Heat over medium heat til hot.
- Add sliced potatoes in layers, overlapping if necessary.
- Reduce to medium low and season with salt and pepper to your taste.
- Cover and cook until potatoes are golden on the bottom at least 15-20 minutes-- PATIENCE.
- Carefully turn potatoes in the pan until the browned one are on top adding the remaining butter.
- Cook for about 5-8 more minutes over medium heat tll the bottom is golden also.
- Spread Ricotta cheese over the potatoes.
- Sprinkle the onion-asparagus-carrot mixture over the ricotta.
- Arrange sliced tomatoes over the other veggies.
- Pour egg mixture over the top.
- Place skillet in oven and bake about 15 minutes until eggs are set.
- Carefully invert frittata on large platter.
- Sprinkle with chives.
- Cut into wedges and serve immediately.

- Preheat oven to 350f.
- Put potato in saucepan and cover with water by 3 inches. Cover pan and bring to boil over high heat; boil 5 minutes.
- Add asparagus and boil an additional 2 minutes.
- Drain and set aside to cool.
- Combine whole eggs and egg whites, milk, salt, baking powder, and three tablespoons of the parmesan cheese in a bowl. Mix in the potato and asparagus.
- Heat an oven proof nonstick pan, spray with nonstick spray and add the onion.
- Cook, stirring occasionally for two minutes.
- Add the egg mixture and reduce heat to medium.
- Cover and cook until almost set, about ten minutes.
- Uncover the skillet and sprinkle remaining parmesan cheese.

- Preheat the broiler. Heat 2 teaspoons oil in a large, ovenproof, nonstick skillet over medium heat. Add onion, garlic, rosemary and half of the tomato; cook, stirring until the onion is tender (about 8 minutes). Add potatoes and cook, stirring until they start to brown (about 4 min.). Add asparagus and cook until heated through. Remove the vegetables from the pan; season with salt and pepper. Wipe out the pan, brush with the remaining 1 tsp. oil, and return to low heat. Lightly whisk whole eggs, egg whites and cheese in a medium bowl. Add the vegetables to the egg mixture and pour into the pan, gently stirring to distribute the vegetables. Cook over low heat until the underside is light golden, 5-8 minutes. Place the pan under the broiler and broil until the top of the frittata is puffed and golden brown (1-2 min.). Loosen the frittata and slide it onto a platter. Garnish with chives or scallions and the remaining tomatoes.

- Place potatoes in a steamer; steam until almost tender, about 3 minutes. Add asparagus and steam for 1 minute more; remove vegetables from steamer and set aside.
- Preheat broiler.
- In a large bowl, whisk together eggs, egg substitute, salt, pepper and chives.

- Slowly stir together AllWhites and ricotta cheese in small bowl, stirring until smooth. Set aside.
- Heat oil on medium-high in 10-inch nonstick skillet. Gently stir potatoes, asparagus, red pepper and mushrooms in large bowl.
- Add potato mixture to skillet. Cook 5 to 6 minutes. Flip potato mixture.
