Steps:
- For the Vegetable Saute: Warm the oil in a large skillet over medium-high heat. Add the shallot and the garlic and cook until tender, about 2 minutes. Add the mushrooms and asparagus to the pan and cook until tender. Add the artichoke hearts and season with salt and pepper, then cook until the artichoke hearts are heated through. Remove the skillet from the heat, then add in the tomatoes and stir to warm them up.
- For the Tarragon Vinaigrette: Combine the oil, vinegar, tarragon, salt and pepper in a glass screw-top jar. Seal the jar and shake vigorously to mix the vinaigrette.
- Toss the vegetables with the vinaigrette and serve.

This is a quick and easy dish that could be served any night of the week. It is also elegant enough to be served at a dinner party. I think the flavor combination of asparagus and mushrooms best accompanies beef, but you could serve with any meat of your choice. This dish could also be served over brown or white rice as a main dish vegan alternative (Note: This would reduce the number of servings from four to two).

- To prepare asparagus, snap off the fibrous end of each spear and slice each diagonally into 2-inch pieces.
- Heat olive oil in a large skillet over medium-high heat until glistening.

- In a large skillet, heat 1 tablespoon oil over medium heat until shimmering. Add mushrooms to the pan in an even layer. Sear, stirring a few times, until the moisture from the mushrooms has evaporated and the edges begin to crisp, 1-2 minutes. (If the pan seems dry as the mushrooms cook, add remaining ½ tablespoon oil.) Add the shallots and thyme; stir to coat and cook, 1 minute. Add asparagus and a pinch of salt, and continue cooking until the asparagus are bright green and slightly soft, 1-2 minutes depending on asparagus size.
- Add sherry and swirl the pan until the liquid has reduced by ¾. Add heavy cream and let it reduce until it has thickened slightly, 2 minutes. Stir in one tablespoon of butter and one tablespoon of porcini butter, and continue sautéing until the sauce coats the vegetables, 1 more minute. Turn off heat. Taste and adjust seasoning with salt if necessary, and finish with lemon juice. Serve immediately. Porcini Butter: In a small saucepan combine mushrooms with just enough water to cover them. Bring to a boil; reduce to a simmer and cook on low heat for 45 minutes. Mushrooms should be soft, with a bit of liquid in the pan. Purée mushrooms and remaining liquid with butter until smooth. Transfer to a lidded container and refrigerate until ready to use. Porcini butter can be stored in the refrigerator up to 2 weeks and in the freezer up to 3 months.

- Sauté bacon. Set aside.
- Reserve 1 tablespoon bacon fat.
- Add olive oil (optional).
- Clean, stem and slice mushrooms.
- Clean leeks, slice into small slices, separating the rings. Discard the dark green end.
- Sauté mushrooms and leeks in bacon fat/olive oil until mushrooms are slightly done. Don't overcook.
- Cut asparagus into bite size pieces, discarding the tough ends.
- Blanch asparagus in hot boiling water until slightly crunchy. Don't overcook.
- Combine asparagus, bacon, mushrooms and leeks in fry pan.
- Add salt/pepper. Sprinkle with parmesan cheese. Serve warm. Enjoy.
MOREL MUSHROOM AND ASPARAGUS SAUTE
Blanching the asparagus before the saute helps preserve the color and texture, making for a more enjoyable dish.

- 1. Bring 3 quarts water to a boil in a large saucepan. Peel the botto 2 inches of white and green asparagus. Cook white asparagus in boiling water 5 minutes or until crisp-tender; remove with a slotted spoon to a colander. Rinse under cold water; drain well.
- 2. Cook green asparagus in boiling water 2 minutes or until crisp-tender; remove with a slotted spoon to a colander. Rinse under cold water; drain well.
- 3. Cut asparagus diagonally into 1 1/2 inch pieces.
- 4. Melt butter in a large nonstick skillet over medium-high heat; swirl to coat. Add shallot; saute 1 minute, stirring constantly. Add morels and 1/4 teaspoon salt; saute 5 minutes or until mushrooms are lightly browned.
- 5. Add asparagus, remaining 1/4 teaspoon salt, oil, and pepper; toss gently to coat. Cook 2 minutes or until the asparagus is thoroughly heated.
MOREL MUSHROOM AND ASPARAGUS SAUTÉ
Steps:
- Bring water to boil. Peel bottom 2" of asparagus. Cook in water for 5 minutes or until crisp-tender; remove to colander. Rinse under cold water; drain. Cut diagonally into 1/5" pieces. Melt butter; add shallot; sauté 1 min. Add morels and 1/4t salt; sauté 5 min. Add asparagus and remaining salt, oil and pepper. Cook 2 min. and serve.
ASPARAGUS, ARTICHOKE, AND SHIITAKE MUSHROOM SAUTE
Steps:
- Fill large bowl with cold water. Squeeze in juice from lemon halves; add lemon halves. Cut stem and top quarter from 1 artichoke. Bend back dark green outer leaves and snap off at artichoke base until only pale green and yellow leaves remain. Cut artichoke lengthwise into quarters. Using point of small knife, remove any purple-tipped leaves from center of artichoke. Place artichoke in lemon water. Repeat with remaining artichokes. Cook asparagus in large pot of boiling salted water until almost tender, about 3 minutes. Using 4-inch diameter strainer, transfer asparagus to bowl of ice water to cool. Drain well. Return water in pot to boil. Add 1 tablespoon oil. Drain artichokes; add to boiling water and cook until almost tender, about 5 minutes. Drain. Heat remaining 2 tablespoons oil in heavy large skillet over medium-high heat. Add mushrooms and saute until tender, about 6 minutes. Add artichokes and saute until tender and golden, about 2 minutes. Add asparagus and stock; simmer 1 minute. Add butter; stir just until melted. Season to taste with salt and pepper.
BETSY'S ASPARAGUS & MUSHROOM SAUTE
Somthing I made up the other night. It turned out tasty so I thought I'd share. This made 2 good-size servings that I served along with salmon. It could serve 3 with smaller portions. For the mushrooms, I used half a 10 oz. bag of the pre-sliced ones at the grocery store. NOTE: Don't overcook the asparagus, or it will be mushy and you won't like the dish.

- Cut 1 to 1/1-2 inches off the bottom of the asparagus spears, discard those pieces. Then cut the spears into 1 inch pieces with a diagonal cut.
- Heat olive oil in medium sized pan, over medium high heat.
- Toss asparagus and onion into the olive oil in the pan and stir to coat well.
- Use salt and pepper to your liking.
- Continue stirring, and when the asparagus and onion mixture sizzles, drop in the butter and stir it around so it melts, blends in and coats the aspargus mixture.
- Now turn the heat down to medium or medium low (depending on your stove), cover the pan and let it simmer for a few minutes. Stir it a couple times and only cook until the asparagus turns a light green and softens a bit.
- Now stir in the mushrooms, raise the heat back to medium high and cook (stirring) just until the mushrooms begin to shrink and soften.
- TIME TO EAT!
