HAM, ASPARAGUS, AND PASTA CASSEROLE

I have no idea where this came from, but I'm pretty sure I tweaked it from some cookbook or another. This is not only easy, it's incredibly tasty. Not too heavy, and doesn't take long in the oven so it's not bad for a summertime casserole.

3 3/4 cups broad egg noodles, uncooked
2 1/2 cups asparagus, chopped into 1-inch lengths
1/4 cup flour
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup milk
1 cup chicken broth
1 tablespoon butter
3/4 cup red onion, minced
1 tablespoon fresh lemon juice
2 cups cooked ham, cubed
1/4 cup flat leaf parsley, chopped
2 tablespoons grated parmesan cheese
1/2 cup breadcrumbs

Steps:

  • Cook pasta in boiling water seven minutes.
  • Add asparagus; cook an additional 2-3 minutes; drain.
  • Meanwhile, melt butter in large frying pan and preheat oven to 450°F.
  • Add onion to butter and saute 4-5 minutes, just until softened.
  • Combine flour, thyme, salt, and pepper in a bowl.
  • Add milk and chicken broth; combine well with a whisk.
  • Add milk mixture to frying pan.
  • Cook over medium heat, stirring frequently, until thickened (about 5 minutes).
  • Remove sauce from heat; stir in lemon juice.
  • Combine all ingredients except parmesan and bread crumbs in a large casserole dish.
  • Combine parmesan and bread crumbs, and sprinkle over top of casserole.
  • Bake at 450F for approximately 10 minutes, until casserole is bubbly and the bread crumbs are golden brown.

8 oz linguini, or your favorite pasta
1 Tbsp olive oil
3/4 lb ham or canadian bacon, cubed into bite size pieces
1 bunch scallions, chopped (reserving 1/2 cup darkest green pieces
6 eggs
2 c grated sharp cheddar cheese (or a good swiss), divided
16 oz (2 cups) ricotta
1/2 c milk
1 Tbsp dijon mustard
1 tsp salt
1/2 tsp fresh cracked pepper
1 lb asparagus, cut into 1/2 inch pieces

Steps:

  • 1. Preheat oven to 350°F. Put a large pot of salted water on to boil. Grease a 9" X 13" baking dish.
  • 2. In a large skillet heat oil over a medium heat. Add ham and scallions to skillet, setting aside reserved green parts for topping. Saute until onion begins to soften. Set aside.
  • 3. In a mixing bowl or food processor, combine eggs, 1 1/2 cups of the grated cheese, ricotta, milk, mustard, salt and pepper. Beat until very smooth.
  • 4. Boil pasta according to directions on box, adding asparagus during last minute of cooking. Rinse under cold water until cooled, and drain.
  • 5. Add drained noodles back to pot. Add ham and egg mixtures to noodles. Mix until well combined and pour into prepared dish.
  • 6. Bake for 30 minutes. Remove from oven and top evenly with remaining 1/2 cup cheese and reserved scallions. Bake 15 minutes more. Let rest for 5 minutes and serve.

4 cups bow tie pasta, uncooked (or small pasta of your choice)
1 (10 ounce) package of frozen cut asparagus or 1 (10 ounce) package baby broccoli florets
1 (6 ounce) package cooked ham, cut into thin strips
1 (8 ounce) container soft style cream cheese with chives and onions
1/3 cup milk (skim is ok)

Steps:

  • In a large dutch oven, add pasta to boiling water and cook 6 minutes less than recommended on package; add frozen asparagus or broccoli the last 5 minutes of pasta cooking time.
  • Add ham for the last 1 minute before draining just to heat through.
  • Remove from heat and drain pasta-ham mixture thoroughly.
  • In a small bowl mix together cream cheese and milk until smooth.
  • Add cheese mixture to asparagus-ham mixture and stir over medium heat just until heated through and mixture is well coated.
  • Serve immediately.

1 1/2 tablespoon olive oil
1/2 onion, thinly sliced
1 slice ham, chopped into cm-wide cubes
1/2 pound asparagus, slivered
1/2 cup chicken broth
1/2 pound spaghetti
1/2 cup milk
1/4 cup parmesan cheese, grated
Pepper to taste

Steps:

  • Heat butter and oil, saute onion until golden. Add ham, saute briefly. Add asparagus and chicken broth. Simmer 15 minutes. Meanwhile, cook spaghetti, drain and return to pot. Add asparagus mixture, milk, parmesan and pepper. Cook over medium-low until warmed.

1 (10 ounce) package cut frozen asparagus or 1 (10 ounce) package frozen broccoli
8 ounces cooked ham, cut into thin strips

fresh chives (optional)

Steps:

  • Cook the pasta according to package directions, adding the frozen asparagus the last 5 minutes and the ham the last 1 minute of the cooking time. Drain and return pasta to pan.
  • Stir together cream cheese and milk; add to the pasta mixture in the pan. Stir gently over medium heat until the mixture is heated through. If desired, garnish with fresh chives. Makes 4 servings.

1 (0.6-oz) packet zesty Italian salad dressing mix
¼ cup white balsamic vinegar
½ cup olive oil
3 Tbsp water
1½ Tbsp sugar
1 tsp red pepper flakes
¼ tsp salt
¼ tsp black pepper
½ lb penne pasta
½ lb steamed asparagus
1 cup cubed provolone cheese
1 cup cubed smoked ham
½ pint cherry tomatoes, halved
⅓ cup purple onion, thinly sliced
⅓ cup whole Kalamata Olives
3 Tbsp grated Parmesan cheese
2 Tbsp chiffonaded fresh basil

Steps:

  • In a medium mixing bowl, whisk together all of the ingredients for the dressing. Set aside.
  • Cook the pasta in salted water per the instructions on the box, until al dente. Drain well then add to the mixing bowl.
  • Steam the asparagus until crisp tender, then slice into 1 inch pieces.
  • Add the sliced asparagus and the remaining ingredients to the pasta and dressing. Toss until all of the ingredients are well coated.
  • Place into the refrigerator to chill for 3 hours. Garnish with with a sprinkle of grated Parmesan cheese and chiffonade of basil before serving.

1 pound fresh asparagus spears or one 10 oz pkg frozen cut asparagus
2 cans 14 1/2-oz low-sodium stewed tomatoes, cut up
1 tablespoon dried parsley flakes
1/2 teaspoon dried basil, crushed
1/2 teaspoon dired oregano, crushed
1/8 teaspoon ground red pepper (optional)
1 cup evaporated skim milk
10 ounces multicolored pasta, such as wagon wheel or corkscrew
6 ounces lean fully cooked ham, cut into bite-size srips
1 small red or green sweet pepper, cut into thin strips

Steps:

  • Snap off and discard the woody bases from the fresh asparagus, if using. Bias-slice asparagus into 1-inch pieces. (Or, thaw and drain the frozen cut asparagus.) Set aside.
  • For sauce, in a medium saucepan combine stewed tomatoes, parsley, basil, oregano, and ground red pepper, if desired. Bring to boiling. Simmer the sauce, uncovered, about 15 minutes or till reduced to 2 1/2 cups, stirring occasionally. Add the evaporated milk all at once, stirring constantly. Heat mixture through; do not boil.
  • Meanwhile, prepare pasta according to package directions except add the asparagus, ham, and sweet pepper to the boiling water during the last 4 minutes of cooking time. Drain pasta and vegetables.
  • To serve, place pasta mixture on a serving platter. Spoon the sauce over the pasta. Serve with Parmesan cheese, if desired. Serve at once.

8 oz penne pasta
12 oz fresh asparagus
4 - 6 oz cooked, cubed ham
1 1/2 c heavy cream
3 Tbsp butter
3/4 c grated parmesan cheese
salt & pepper to taste

Steps:

  • 1. Wash the asparagus; break off rough ends and cut into 1 inch lengths leaving the tips whole. Start cooking your pasta. Bring a large skillet of water to boil, adding a pinch of salt. Add the asparagus and cover pan. Cook no more than 2 minutes. Drain and allow to cool. Using the same skillet, melt the butter and add the ham and asparagus. Cook briefly. Add the cream and bring to a boil; cook for 4-5 minutes to thicken cream. Drain pasta and rinse under hot water. Toss the pasta in a bowl with the sauce and stir in Parmesan cheese to taste. Top with a grind of pepper. You could substitute broccoli spears or peas for asparagus.
