2 cups uncooked corkscrew or spiral pasta
3/4 pound fresh asparagus, cut into 1-inch pieces
1 medium sweet yellow pepper, julienned
1 tablespoon olive oil
6 medium tomatoes, diced
6 ounces boneless fully cooked ham, cubed
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/8 to 1/4 teaspoon cayenne pepper
1/4 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, saute asparagus and yellow pepper in oil until crisp-tender. Add tomatoes and ham; heat through. Drain pasta; add to mixture. Stir in parsley and seasonings. Sprinkle with cheese.

1 package (16 ounces) spaghetti, broken into thirds
2 pounds fresh asparagus, trimmed and cut into 1-1/2 inch pieces
2 eggs, lightly beaten
1/2 cup grated Parmesan cheese, divided
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 can (12 ounces) evaporated milk
1 cup milk
1/2 cup chicken broth
1/2 cup mayonnaise
2 tablespoons lemon juice
2 teaspoons grated onion
2 teaspoons prepared mustard
2 teaspoons minced fresh parsley
1/4 teaspoon dried rosemary, crushed
1/2 cup shredded cheddar cheese
3 cups cubed fully cooked ham

Steps:

  • Cook spaghetti according to package directions. Rinse with cold water; drain. Meanwhile in a large saucepan, bring 2 cups of water to a boil. Add asparagus. Cover and cook for 3-5 minutes or until crisp-tender; drain., In a large bowl, toss spaghetti with eggs and 1/4 cup Parmesan cheese. Spread into two greased 2-qt. baking dishes., In a large saucepan, melt butter. Stir in flour until smooth. Gradually add the evaporated milk, milk and broth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , Remove from the heat. Whisk in the mayonnaise, lemon juice, onion, mustard, parsley and rosemary. Stir in cheddar cheese and remaining Parmesan until blended., Sprinkle ham and asparagus over spaghetti crust. Pour cheese sauce over top. Cover and bake at 350° for 40 minutes. 2 tablespoons herb-infused extra-virgin olive oil
½ medium onion, chopped
1 pound fresh asparagus, cut into 1-inch pieces
1 (8 ounce) package sliced mushrooms
2 cups cherry tomatoes, halved
2 cloves garlic, minced
¼ teaspoon crushed red pepper flakes
1 pinch salt and ground black pepper to taste
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups 1% milk
⅔ cup grated Parmigiano-Reggiano cheese, divided
¼ cup shredded provolone cheese
⅓ cup Italian-seasoned bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 7x11-inch baking dish.
  • Bring a large pot of lightly salted water to a boil; cook gemelli at a boil until flexible but still firm to the bite, about 6 minutes.
  • Meanwhile, heat oil in a large skillet over medium heat until shimmering. Add onion and stir for 2 minutes. Add asparagus and mushrooms and continue to cook, stirring occasionally, until mushrooms begin to soften and asparagus is bright green, about 4 minutes.
  • Add tomatoes, garlic, red pepper flakes, salt, and pepper. Continue cooking for about 4 minutes, stirring occasionally.
  • Pour the vegetable mixture into a large mixing bowl. Drain pasta and stir into the bowl.

2-1/2 cups cut fresh asparagus (1-inch pieces)
1 medium onion, chopped

1 pound ziti pasta
1 (15 ounce) container ricotta cheese
1 (28 ounce) jar tomato sauce, divided
2 cups finely shredded mozzarella cheese, divided
⅓ cup chopped fresh parsley
½ pound asparagus, trimmed
3 tablespoons olive oil
1 medium onion, chopped
1 large red bell pepper, diced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil; cook ziti at a boil until tender yet firm to the bite, about 8 minutes. Drain and transfer to a large bowl.
  • Add ricotta cheese, 1 1/2 cups tomato sauce, 1 cup mozzarella cheese, and parsley to drained pasta. Mix and set aside.
  • Chop trimmed asparagus into 1/4-inch slices, separating stems and tips.
  • Heat oil in a pan over medium-high heat. Add onion and saute for 5 minutes. Stir in asparagus stems; cook for another 3 minutes. Add bell pepper and cook, 2 to 3 minutes. Add asparagus tips and cook, 2 to 3 minutes.
  • Spread 1 cup tomato sauce on the bottom of a 9x13-inch baking dish. Add 1/2 of the pasta mixture and smooth into an even layer. Sprinkle 1/2 of the vegetables on top. Top with 1/2 cup mozzarella cheese. Add remaining pasta in an even layer, followed by remaining vegetables. Cover with remaining tomato sauce. Sprinkle with remaining mozzarella cheese.
  • Bake, uncovered, on the middle rack of the preheated oven for 30 minutes. Move to the top rack and continue to bake until cheese is melted and bubbly, about 5 minutes more. Let stand for 5 to 10 minutes before serving.

8 oz linguini, or your favorite pasta
1 Tbsp olive oil
3/4 lb ham or canadian bacon, cubed into bite size pieces
1 bunch scallions, chopped (reserving 1/2 cup darkest green pieces
6 eggs
2 c grated sharp cheddar cheese (or a good swiss), divided
16 oz (2 cups) ricotta
1/2 c milk
1 Tbsp dijon mustard
1 tsp salt
1/2 tsp fresh cracked pepper
1 lb asparagus, cut into 1/2 inch pieces

Steps:

  • 1. Preheat oven to 350°F. Put a large pot of salted water on to boil. Grease a 9" X 13" baking dish.
  • 2. In a large skillet heat oil over a medium heat. Add ham and scallions to skillet, setting aside reserved green parts for topping. Saute until onion begins to soften. Set aside.
  • 3. In a mixing bowl or food processor, combine eggs, 1 1/2 cups of the grated cheese, ricotta, milk, mustard, salt and pepper. Beat until very smooth.
  • 4. Boil pasta according to directions on box, adding asparagus during last minute of cooking. Rinse under cold water until cooled, and drain.
  • 5. Add drained noodles back to pot. Add ham and egg mixtures to noodles. Mix until well combined and pour into prepared dish.
  • 6. Bake for 30 minutes. Remove from oven and top evenly with remaining 1/2 cup cheese and reserved scallions. Bake 15 minutes more. Let rest for 5 minutes and serve.

14 ounces penne pasta (or other short pasta)
2 lbs asparagus
4 ounces butter (1 stick)
chicken stock
salt and pepper
10 ounces ricotta cheese (or similar curd cheese)
1 tablespoon olive oil
4 ounces freshly-grated parmesan cheese
3 eggs

Steps:

  • Wash Asparagus.
  • Remove any tough stalks and cut into short lengths.
  • You may want to split the length in half.
  • Melt about 3 tbs of butter in pan and cook the asparagus over a low heat for about 20 min.
  • Every so often, add a little chicken stock to keep it moist.
  • When the asparagus is done, season to taste.
  • While the asparagus is cooking, process the ricotta cheese with the oil.
  • Cook the pasta for half the time stated on the package.
  • Drain and immediately toss in the remaining butter and half the Parmesan.
  • Butter a deep oven dish.
  • Make a thin layer of pasta, then one of asparagus, then one of pasta again and then one of ricotta.
  • Repeat, finishing with the layer of pasta.
  • Beat together the eggs and the remaining cheese and pour over the top.
  • Sprinkle with black pepper.
  • Bake in a medium oven, 350 degrees for 20 minutes.

1 pound short pasta, such as penne
1 bunch asparagus (about 1 pound), tips trimmed, stalks sliced into 1/2-inch pieces
2 cups whole milk
8 ounces cream cheese, cubed
8 ounces sharp cheddar, grated
4 ounces Gruyere, grated

Steps:

  • Preheat broiler, with rack 6 inches from heating element. Brush 4 small (8-ounce capacity) gratin dishes with butter. Bring a large pot of salted water to a boil; add pasta and cook according to package directions 1 minute less than al dente. Add asparagus and cook 1 minute more; drain.
  • Meanwhile, heat milk in a medium pot over medium-high until just simmering. Add cream cheese; whisk until smooth. I have no idea where this came from, but I'm pretty sure I tweaked it from some cookbook or another. This is not only easy, it's incredibly tasty. Not too heavy, and doesn't take long in the oven so it's not bad for a summertime casserole.

2 1/2 cups asparagus, chopped into 1-inch lengths
1/4 cup flour

1 tablespoon butter
3/4 cup red onion, minced

  • Cook pasta in boiling water seven minutes.

  • Combine parmesan and bread crumbs, and sprinkle over top of casserole.
  • Bake at 450F for approximately 10 minutes, until casserole is bubbly and the bread crumbs are golden brown.
