½ pound asparagus spears, trimmed and bottom thirds thinly peeled
3 tablespoons unsalted butter
¼ cup chopped pecans
2 (4 ounce) fillets salmon
salt and ground black pepper to taste
2 tablespoons olive oil
½ lemon, halved (juice only)
⅓ (8 ounce) package angel hair pasta
2 tablespoons butter
1 tablespoon minced parsley
1 tablespoon chopped fresh basil
2 tablespoons butter
1 tablespoon Dijon mustard
½ lemon, halved (juice only)

Steps:

  • Place asparagus spears into a large skillet, and pour in enough water to cover the bottom of the skillet about 1/2 inch deep. Place skillet over medium heat, bring to a boil, and reduce heat to medium-low. Simmer until the water has evaporated, about 5 minutes.
  • Stir unsalted butter and pecans into the skillet with asparagus, and let simmer until asparagus are beginning to brown and pecans are fragrant, about 2 more minutes. Remove from heat.
  • Season salmon fillets with salt and black pepper and set aside for about 5 minutes; pat off any excess moisture with paper towels.
  • Heat olive oil in a skillet over medium-high heat, and pan-fry the salmon fillets in the hot oil until browned and the flesh flakes easily and is nearly opaque in the center, 4 to 5 minutes per side. Squeeze half a lemon over the salmon fillets as they cook.
  • Fill a large pot with lightly salted water and bring to a boil; stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through but still slightly firm, 4 to 5 minutes. Drain well and return to saucepan.
  • Stir 2 tablespoons butter, parsley, and basil into the cooked pasta until coated; sprinkle with salt and black pepper to taste.
  • To make sauce, melt 2 more tablespoons of butter in a small saucepan over low heat until melted; stir in Dijon mustard, and squeeze remaining lemon half into the sauce. Allow to simmer for about 3 minutes to blend flavors.
  • To serve, divide angel hair pasta between two plates, top each serving of pasta with half the asparagus and pecans, and arrange a fillet over the asparagus. Spoon Dijon dressing over fillets to serve.

1 teaspoon Worcestershire sauce
2 tablespoons honey

1/2 pound fresh asparagus, trimmed

  • Whisk together mustard, vinegar, and 1 tablespoon oil in a medium bowl. Season with salt and pepper.

1 small shallot, very finely minced
kosher salt
1 bunch asparagus, trimmed and cut into two inch pieces
1 tablespoon extra virgin olive oil
2 teaspoons extra virgin olive oil
cracked black pepper
1 lb baby red potato, cut into quarters
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 450 degrees.
  • In a lage salad bowl, combine vinegar, shallot, and salt to taste. Let stand 20 minute.
  • Place asparagus in a plastic zipper bag with 1 tsp olive oil and shake until well coated. Pour onto cookie sheet and season to taste with salt and pepper.
  • Place potatoes in same bag used for asparagus, add 1 tsp olive oil and shake until well coated. pour onto second cookie sheet and season to taste with salt and pepper.
  • Roast potatoes and asparagus 15 min or until potatoes are golden and crispy and can be pierced by a fork. Potatoes may take longer than asparagus.
  • Meanwhile, whisk remaining 1 TBS olive oil and dijon mustard into the bowl with the shallot and vinegar. Taste and adjust seasonings.
  • When the vegetable are done, add to bowl with dressing. Toss to combine. Taste and adjust salt and pepper and serve.

1/3 cup honey

1 (1 lb.) pork tenderloin, excess fat and silver skin removed*
1 lb. fresh asparagus spears, cut into thirds
1/3 cup chopped toasted pecans (optional)

Steps:

  • Preheat oven to 400°F. Place Reynolds® Oven Bag in 13x9x2-inch baking pan.
  • Add corn starch, honey, mustard, Worcestershire sauce, salt and pepper to oven bag. Squeeze bag to mix ingredients.
  • Slice pork tenderloin 1-inch thick. Place pork and asparagus in bag. Turn bag several times to coat pork and asparagus with sauce. Place ingredients in an even layer.

2 tsp corn starch
1 tsp dijon mustard
dash(es) white pepper

3 large eggs
2 bunches thick asparagus spears, bottom ends trimmed
1 tablespoon minced fresh chives, for garnish
1/2 cup mayonnaise, best quality such as Hellmann's or Duke's
2 tablespoons Dijon mustard
2 tablespoons water
1 tablespoon red wine vinegar
Pinch salt
A few grinds freshly ground black pepper

Steps:

  • Place the eggs in a small saucepan and cover with cold water by one inch. Heat over high heat until the water comes to a rapid boil. Remove the saucepan from the heat, cover with a lid and let stand for 14 minutes. Using a slotted spoon, transfer the eggs to a bowl of ice water to chill. Peel and chop the eggs and set aside.
  • Bring 6 cups water and 4 teaspoons salt to a boil in a large shallow pot. Add the asparagus and cook 3-4 minutes, or until tender-crisp. While the asparagus is cooking, fill a large bowl with ice and water. Transfer the cooked asparagus to the ice bath to stop the cooking process and preserve the bright green color. When cool, remove the asparagus from the ice bath and set on a clean dish towel to dry.
  • For the sauce, mix all of the ingredients together in a small bowl.
  • To serve, arrange the asparagus spears on individual plates or a platter and spoon the sauce generously over the middle of the spears. Sprinkle the chopped eggs and chives over the sauce.
  • Note: The nutritional information is calculated with the assumption that between the salted water the asparagus is cooked in and the added pinch of salt, there is approximately 1/2 tsp. added salt in the recipe.

DIJON HAM AND ASPARAGUS ROLL-UPS

12 -16 stalks green asparagus
one package crescent roll (8-ounce)
Dijon mustard
10 slices lean ham

Steps:

  • Preheat the oven to 375 degrees F.
  • Break off the woody parts of the stem so that only about the top 3 inches or so of the stalk remain.
  • Place the asparagus in a microwavable bowl with just enough water to cover. Place a towel over the top of the bowl. Microwave on 50 percent power until tender (2 minutes). Drain.
  • Open the package of crescent rolls and spread out the crescent roll dough sheets evenly on a large baking sheet. Roll out each sheet as much as possible. Coat the dough sheet with an even layer of Dijon mustard.
  • Wrap 1-2 asparagus stalks in 1-2 slices of ham. Place at the wide end of the crescent dough and roll up in the dough. Repeat for each crescent roll.
  • Bake until slightly golden brown (about 10-12 minutes). Remove from the oven, let cool slightly, and serve warm.

2 ounces linguine, broken in half
1 pound asparagus, cut diagonally into 1 1/2-inch pieces (1 3/4 cups)
9 cherry tomatoes, quartered
2 tablespoons chopped red or white onion
1/3 cup poppy seed salad dressing or coleslaw salad dressing
2 tablespoons Dijon-style mustard
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup toasted pine nuts or almonds

Steps:

  • In a large saucepan cook linguine in lightly salted boiling water for 5 minutes. Add asparagus and cook 3 to 4 minutes more or till linguine is tender and asparagus is crisp-tender. Drain and rinse with cold water. Drain well. Turn into a bowl. Add tomatoes and onion. In a small bowl combine salad dressing, mustard, salt and pepper. Add to pasta mixture; toss gently to coat. Cover and chill for 2 hours or overnight. Before serving, toss gently with pine nuts. This is my simple, healthy and tasty way to make asparagus! This is also good with balsamic vinegar in place of lemon juice. Yes, this is has very strong flavors but I love it! I recently made this with carrot ribbons made with my vegetable peeler and it was a great addition.

1 (12 ounce) bag frozen thin asparagus spears (I use Trader Joe's frozen) or 1 (12 ounce) bag fresh thin asparagus spears (I use Trader Joe's frozen)
1 lemon, juice of
1 tablespoon whole grain Dijon mustard
black pepper
cooking spray

Steps:

  • Spray large skillet with oil. Heat over medium-high.
  • Add asparagus spears. Try to get them all flat in the pan. Turn a few times until lightly browned and heated through, but still bright green and crisp tender.
  • Stir together juice of 1 lemon, Dijon mustard and black pepper to taste (I put a lot). Pour mixture into pan with asparagus and toss. Cook 1 minute until heated.
  • Serve immediately.
  • I like to serve this with simple baked chicken breasts or fish.

8-10 Fresh asparagus spears
1/4 cup canola oil
1/4 cube butter
Minced garlic to taste
Diced onion to taste
Kosher salt to taste
2 tbsp dijon mustard
2 tbsp rosemary
2 tbsp lemon juice

Steps:

  • In a sauce pan, cook until onions are done. Marinate asparagus (green beans work as well)for 15-30 minutes, then cook on BBQ grill until done (about 10 minutes over low heat), being careful not to burn the vegetable. Serve with small portion of sauce.
