2 tablespoons olive oil
3/4 cup cut fresh asparagus (1-inch pieces)
1 small onion, finely chopped
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 to 1/4 teaspoon pepper
1 can (14-1/2 ounces) chicken broth
1/2 cup fat-free half-and-half
1-1/2 cups cubed cooked chicken breast
3/4 cup frozen corn

Steps:

  • In a large saucepan, heat oil over medium heat. Add asparagus and onion; cook and stir until tender, 3-4 minutes., Stir in flour, salt, garlic powder and pepper until blended; gradually stir in broth and half-and-half. Bring to a boil, stirring constantly; cook and stir until slightly thickened, 3-5 minutes. Add chicken and corn; heat through.

This recipe was found in the Chattanooga Times. It makes a fantastic quick to make soup which is packed with vegetables. The addition of Parmesan Cheese is my idea.

1 tablespoon olive oil
1/4 cup chopped shallot
3 garlic cloves, minced
1 large sweet onion, chopped
2 medium carrots, scrubbed and diced
3 stalks celery, diced
6 cups chicken broth
1 bunch asparagus, tough ends removed, cut into 1-inch pieces
2 cups frozen corn
3 tablespoons chopped fresh thyme
parmesan cheese, freshly grated
salt and pepper

Steps:

  • Heat the olive oil in a stockpot over medium high heat. Add in shallots, garlic, onion, carrots and celery. Cover and allow to cook until crist tender, 6 to 7 minutes.
  • Add in the chicken stock and bring to a simmer. Add in the asparagus, thyme and corn. Cook until the asparagus is tender, 4 to 5 minutes. Season with salt and freshly ground black pepper to taste.
  • Ladle into bowls and garnish with freshly grated parmesan cheese as desired.

Note: This is for a 5-quart crock pot, which is larger than the usual. Cut down the proportions if you have a smaller crock pot.

1 lb fresh asparagus
2 onions, minced finely
2 potatoes, peeled, diced small
2 celery ribs, diced small, with tops included
2 carrots, diced
2 garlic cloves, minced
8 teaspoons vegetable bouillon granules or 8 bouillon cubes
1 bay leaf
1 tablespoon Worcestershire sauce
1/4 cup fresh parsley, chopped or 1 tablespoon dried parsley
2 sprigs fresh thyme or 1 teaspoon dried thyme
1 sprig fresh tarragon, chopped or 1 teaspoon dried tarragon
1/4 cup fresh basil, minced or 2 teaspoons dried basil
1 teaspoon seasoning salt (or to taste)
1/2 teaspoon white pepper
1/4 cup cornstarch
2 cups half-and-half
sour cream
chives, chopped

Steps:

  • Break off and discard the tough, thick end of each asparagus spear.
  • Chop the spears into 1/4-inch slices and add to the crock pot along with all remaining ingredients down to and including the white pepper.
  • Add water to within 1 inch of the top of the crock pot.
  • Cover the crock pot and cook on high for 6-7 hours.
  • About two hours before serving, use a slotted spoon to remove most of the vegetables to a blender.
  • Use a ladle to add some of the liquid from the crock pot to the blender.
  • Puree the mixture and add back in to the crock pot.
  • Repeat once or twice more as necessary (you can leave some of the pieces in the crock pot for effect.) Add approximately 1 cup of the half-and-half to the crock pot.
  • Add the corn starch to the remaining half-and-half in the carton.
  • Close the carton well and shake vigorously.
  • Add the mixture to the crock pot.
  • Continue to cook on high for 1 hour, stirring occasionally.
  • Serve in bowls with a dollop of sour cream and chopped chives sprinkled on the sour cream.

Coarse salt and freshly ground black pepper
2 bunches asparagus (about 2 pounds), trimmed and cut into 1 inch pieces, trimmings and 20 tips reserved
2 tablespoons extra-virgin olive oil, plus more for drizzling
1/2 large shallot, sliced crosswise, plus 1/2 large shallot
1/2 large clove garlic, finely chopped, plus 1/2 large clove garlic
1 medium Yukon gold or Russet potato (about 8 ounces), peeled and diced (about 1 cup)
1/2 cup heavy cream

Steps:

  • Bring 6 cups water to a boil in a medium saucepan; season with 2 teaspoons salt. Add asparagus tips and blanch until bright green and just tender, 2 to 3 minutes. Transfer to an ice bath with a slotted spoon; reserve for topping. Add trimmings, 1/2 shallot and 1/2 clove garlic to the same pot and return to a boil; reduce heat and simmer the asparagus stock 20 to 25 minutes to allow flavors to meld.
  • In another saucepan, heat olive oil over medium. Add sliced shallot and chopped garlic and cook until softened but not browned, about 5 minutes. Stir in potato and enough of the asparagus stock to cover the vegetables (about 1 cup), and simmer until the potato is tender, 10 to 12 minutes. Strain remaining asparagus stock directly into saucepan with the potatoes. Add remaining asparagus and cook until tender and bright green, about 5 minutes. Remove from heat and let cool slightly. Puree in a blender until completely smooth; remove 1 cup and reserve. Slowly stir in cream, and season to taste with salt and pepper; thin with reserved liquid as needed. Serve hot or chilled, topped with asparagus tips and a drizzle of oil.

4 tablespoons unsalted butter
1/2 onion, chopped
1 clove garlic, crushed
Kosher salt and freshly ground pepper
2 pounds asparagus, trimmed and cut into 1-inch pieces
6 cups chicken stock
1 pint sour cream, at room temperature
2 teaspoons Hungarian hot paprika, for garnish

Steps:

  • Melt the butter in a large saucepan over medium-high heat. Add the onion and garlic, and cook, stirring until tender, about 5 minutes; season with salt and pepper. Add the asparagus and sauté 4 minutes. Add the chicken stock and bring to a boil. Reduce to a simmer and cook until the asparagus is very tender, about 30 minutes. Remove from the heat and let cool at least 5 minutes.
  • Working in batches if necessary, carefully transfer the soup to a blender, filling it no more than halfway. Keep the lid slightly ajar and puree on high speed until smooth. Return the soup to the saucepan, stir in the sour cream and season with salt and pepper. Transfer to bowls, dust with the paprika and serve.

1/2 stick unsalted butter
1/2 onion, chopped, (about 1/2 cup)
1 clove garlic, crushed
Salt and freshly ground black pepper
2 pounds asparagus, ends trimmed and cut into 1-inch pieces
6 cups chicken stock
1 pint sour cream, room temperature
2 teaspoons Hungarian hot paprika, for garnish

Steps:

  • Melt butter in a large saucepan over medium-high heat. Add onion and garlic, and saute 5 minutes. Season with salt and pepper. Add asparagus and saute another 4 minutes. Add the chicken stock and bring to a boil. Reduce to simmer and cook for 30 minutes, until asparagus is very tender. *Carefully transfer to a blender and puree until smooth. Return to saucepan, stir in sour cream and season with salt and pepper, to taste. Transfer to serving bowls. Dust with paprika and serve.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

1 lb fresh asparagus or 1 (12 ounce) package frozen asparagus
1 1/2 cups chicken stock or 1 1/2 cups canned chicken broth
2 tablespoons chopped onions
1 cup milk or 1 cup cream
salt
pepper

Steps:

  • If using fresh asparagus, wash stalks and cut off the coarse ends.
  • Cook the asparagus in 2 cups boiling water until tender.
  • Drain, reserving 1 cup of the water.
  • Cut off the tips, chop them and reserve.
  • Put the chicken stock, onion, and reserved water in a pan and bring to boil.
  • Add the asparagus and simmer for 5 minutes.
  • Put through a strainer or vegetable mill or puree in a food processor or an electric blender.
  • Return to the pot and add the milk or cream and salt and pepper to taste.
  • Reheat and adjust the seasonings.
  • Before serving, sprinkle with reserved chopped tips.

2 cups thinly sliced leeks, white and light-green parts only, well washed and patted dry (from 2)
3/4 cup thinly sliced shallot
Kosher salt and freshly ground pepper
1 pound asparagus, trimmed and cut into 1-inch pieces (about 2 cups)
3 to 4 cups ( homemade or low-sodium store-bought)
Crème fraîche, for serving

Steps:

  • In a medium saucepan, melt butter over medium heat. Add leeks and shallot; season with salt and pepper. Cook, stirring, until translucent, about 5 minutes. Add asparagus and 3 cups broth; bring to a boil, then reduce heat and simmer, partially covered, until asparagus is very tender, 12 to 15 minutes. Let cool 5 minutes.
  • Working in batches (don't fill it more than halfway), purée asparagus in a blender until very smooth, 1 to 2 minutes a batch, thinning with more broth if necessary. Transfer to cleaned pan, and heat until steaming. Whisk crème fraîche with a little water until it has the consistency of heavy cream.   • Saute 1 chopped onion, 2 minced garlic cloves and 1 teaspoon fresh thyme in 2 tablespoons butter in a large pot over medium-high heat until softened, about 5 minutes. 12 fresh asparagus spears (garnish)
1 -2 cup half-and-half

Steps:

  • Melt butter in heavy large saucepan over medium-high heat.

3 tablespoons olive oil
10 ounces fresh shiitake mushrooms, sliced (or 1/2 pound white mushrooms)
2 teaspoons salt
1/4 teaspoon black pepper
1 large onion, chopped
1 quart water
1 quart chicken broth
1/3 cup long grain rice
2 lbs asparagus, trimmed and cut into 1 inch pieces

Steps:

  • In a large pot, heat 2 T oil over moderate heat. Add the mushrooms, ¼ t salt and the pepper and cook, stirring occasionally, until the mushrooms are golden; about 5 minutes.
  • Remove the mushrooms and set aside. Reduce the heat to low and add another tablespoon of oil to the pot.
  • Add the onion and cook, stirring occasionally, until translucent; about 5 minutes.
  • Add the water, broth, rice, and the remaining salt to the pot. Bring to a boil.
  • Continue boiling for 10 minutes, stirring occasionally.
  • Add the asparagus. Cook until tender; about 5 minutes.
  • Using a hand blender or food processor, puree the soup until smooth.
  • Return the soup to the pot and add the reserved mushrooms.
