Skip the Chinese takeout! This Asparagus and Beef Stir Fry is a healthy and easy dinner recipe that's ready in about 20 minutes!

½ cup less sodium soy sauce
½ cup cold water (plus additional as needed)
3 tablespoons cornstarch
½ teaspoon minced fresh ginger ((or about ¼ teaspoon dried ginger))
1 tablespoon minced garlic ((or about ½ teaspoon garlic powder))
¼ cup brown sugar
1 lb. asparagus, trimmed and cut into 1-inch pieces
1 small red bell pepper, cut into thin strips
1 small onion, diced
1 lb. beef top round steak or flank steak, trimmed and sliced thin against the grain
For serving: rice (or cauliflower rice); noodles; sliced green onions

Steps:

  • Prepare the Sauce: In a bowl whisk together soy sauce, cold water, cornstarch, ginger, garlic, and brown sugar until completely combined. Set aside.
  • Heat 2 tablespoons of canola oil in a large skillet over high heat. Add the asparagus and stir-fry for about 2 minutes (or until crisp-tender). Add the red bell pepper and onion. Stir-fry for about 2 more minutes, or until crisp-tender. Remove to a plate and set aside.
  • Add meat to the skillet in a single layer (still over high heat) and cook for about 1 minute - do not stir or move the meat while it is browning. Flip the meat, cook on the other side for about 30 more seconds, and then remove to the plate with the vegetables. Drain the fat from the skillet.
  • Pour the sauce into the skillet and bring to a boil; reduce heat to low and simmer while whisking until the sauce thickens (about 1-2 minutes). If the sauce gets too thick, just add additional water until it reaches desired consistency. Return beef and vegetables to the skillet and stir to coat with the sauce. Serve with rice and garnish with sliced green onions, if desired.

1 cup beef broth
3 tablespoons soy sauce
1/2 teaspoon sugar

2 medium onions, halved and thinly sliced
1 medium sweet red pepper, julienned
1 large carrot, cut into 2-1/2-inch strips
2-1/2 cups sliced cooked roast beef (2-1/2-inch strips)
1 cup salted cashew halves
Hot cooked rice

Steps:

  • In a small bowl, combine cornstarch and broth until smooth. Stir in soy sauce and sugar; set aside. In a wok or large skillet, heat oil; add garlic. Cook and stir until lightly browned, about 1 minute; discard garlic., Stir-fry the asparagus, onions, red pepper and carrot until crisp-tender, 15-20 minutes. Add beef and heat through. 1 tablespoon rice wine vinegar

This is another excellent stir fry written in a hand I don't recognize. It is quite good however. The times are a guess. Freezing the meat the night before makes slicing easier.

4 teaspoons cornstarch
1/2 cup chicken stock (homade is best)
1/4 cup rice wine (dry sherry will work)
1 1/2 tablespoons soy sauce
1 teaspoon toasted sesame oil
2 teaspoons oyster sauce
2 teaspoons thai sriracha chili sauce (I like "Flying Goose" brand)
peanut oil, as needed
1 lb top sirloin steak
10 scallions, cut into 3/4 inch pieces tops and all
1 inch fresh ginger, freshly grated
4 cloves garlic, freshly minced
1 cup roasted cashews
1 cup baby carrots, jullienne
4 -5 sprigs fresh thyme

Steps:

  • Cut the steak into 1 1/2 inch wide strips, with the grain.
  • Bag and freeze overnight.
  • Cut into 1/8th inch slices across the grain.
  • Allow to thaw.
  • Mix the sauce ingredients and set aside.
  • Heat wok over high heat.
  • Add 2 TBS oil, swirl to coat.
  • Add 1/3 of the meat.
  • Stir fry 4-5 minutes'til brown.
  • Remove, set aside.
  • Repeat'til all meat is browned and set aside.
  • Reheat wok.
  • Add 3 TBS oil.
  • Swirl to coat.
  • Add Scallions, Ginger, Garlic, and Cashews.
  • Stir fry 2 minutes.
  • Add sauce mixture and meat.
  • Cook, stirring all the while'til sauce thickens.
  • Serve over Jasmine or Basmati Rice cooked with a green cardamom pod, garnished with Carrots and Thyme leaves.

3 tablespoons soy sauce
2 tablespoons cornstarch
1 1/2 cups water or 1 1/2 cups vegetable stock
1 tablespoon gingerroot, minced
1 teaspoon toasted sesame oil
1/4 teaspoon dry crushed red pepper
1 dash white pepper
2 tablespoons safflower oil
1 lb fresh asparagus, woody and fibrous bits removed, tender part cut into 3" lengths (3 cups)
4 scallions, chopped
1 small sweet red pepper, chopped
1 clove garlic, minced
1 cup unsalted dry-roasted cashews or 1 cup slivered almonds
mandarin orange section (optional)
toasted sesame seeds (optional)

Steps:

  • Cook or reheat brown rice according to package directions.
  • In small bowl, combine soy sauce and cornstarch. Stir in remaining sauce ingredients; set aside.
  • Heat a wok or large heavy skillet over high temperature; when very hot, add the oil ("Hot wok, cold oil, food won't stick!").
  • Add the asparagus, scallions, pepper, and garlic and stirfy until vegetables are crisp-tender.
  • Stir the sauce mixture again, then pour it over the vegetables and stir until it is thickened and bubbly.
  • Reduce heat; add cashews and stir.
  • Cover and cook 1 minute, until cashews are heated through.
  • Garnish with mandarin orange sections and/or toasted sesame seeds, and serve over cooked rice.
  • Note: 3-4 cups broccoli florets may be substituted for asparagus, if desired.
