1 lb fresh asparagus, snipped off coarse ends,cut into 1 inch angled pieces
1 1/2 teaspoons olive oil
1/2 red bell pepper, cut into thin 1 inch strips
3 cloves garlic, minced
1/2 teaspoon balsamic vinegar
salt & pepper

Steps:

  • Heat oil in a skillet and add garlic cook 2 minutes then add the the bell pepper and asparagus Saute until the asparagus is heated through.
  • Remove from heat and season with salt& pepper and the vinegar.

The balsamic browned butter gives it a really good taste and the asparagus comes out perfect when baked in the oven.

40 asparagus spears, trimmed (about 2 pounds)
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons butter
2 teaspoons soy sauce
1 teaspoon balsamic vinegar

Steps:

  • Preheat oven to 400 degrees.
  • Arrange asparagus in a single layer on a baking sheet; coat with cooking spray.
  • Sprinkle with salt and pepper.
  • Bake for 12 minutes or until tender.

1 lb asparagus (1 bundle)
1 teaspoon olive oil
1/4 teaspoon sesame oil
1 tablespoon balsamic vinegar
salt and pepper (to taste)
1/4 cup water
2 tablespoons sesame seeds, toasted (optional)

Steps:

  • Heat the olive and sesame oils together in a large skillet over medium heat.
  • Meanwhile, cut tough ends off the asparagus and wash. Let dry for a few seconds on a paper towel.
  • Place asparagus spears in hot oil all spread out so they are not on top of each other. Roll spears around to coat with oil, then add balsamic vinegar and roll again.
  • Sprinkle salt and pepper over spears and cook over medium heat about 5 minutes, rolling spears around in pan once or twice for even cooking.
  • Add water and turn down heat to medium low. Cover and let steam until tender crisp. Do not overcook. Spears should be a bright green color. Sprinkle with toasted sesame seeds if you desire. Serve immediately.

Steps:

  • Snap off the tough ends of asparagus and wash asparagus thoroughly.

1/3 cup balsamic vinegar
3 tablespoons extra virgin olive oil
1 tablespoon dijon-style mustard

1 small red bell pepper, cut julienne
1/3 cup chopped pecans, toasted
