¼ cup balsamic vinegar
1 tablespoon olive oil
1 teaspoon Dijon mustard
1 teaspoon honey
1 teaspoon minced garlic
salt and ground black pepper to taste
1 pound fresh asparagus, cut into 2-inch pieces
1 cup grape tomatoes, halved
2 ounces goat cheese, cubed

Steps:

  • Bring balsamic vinegar to a boil in a small saucepan over medium-high heat. Boil for 3 minutes. Remove from heat and whisk in olive oil, Dijon mustard, honey, garlic, salt, and pepper. Set aside.
  • Bring a separate pot of water to a boil and cook asparagus for 3 minutes. Drain in a colander and run under cold water to stop the cooking process. Shake off excess moisture.
  • Combine asparagus and grape tomatoes in a large bowl. Drizzle dressing over the top and toss until evenly coated. Add goat cheese and toss again. Serve immediately.

1/4 cup red wine vinegar
1 tablespoon honey
1 tablespoon mustard
1/2 cup olive oil
Kosher salt and freshly ground black pepper
4 cups salted water or vegetable stock
2 teaspoons chopped fresh thyme
2 cups quinoa
16 spears asparagus, trimmed
Olive oil, for brushing
Kosher salt and freshly ground black pepper
1 cup pitted nicoise olives
4 ounces aged goat cheese, shaved
1/4 cup chopped fresh basil
1/4 cup fresh parsley leaves

Steps:

  • For the vinaigrette: Combine the vinegar, honey and mustard in a blender and blend until smooth. With the motor running, slowly add the olive oil and blend until emulsified. Add salt and pepper to taste and pulse a few times to incorporate.
  • For the quinoa salad: Bring the salted water or vegetable stock to a boil and add the thyme. Stir in the quinoa, bring to a boil, reduce the heat to low, cover and simmer until cooked through, about 30 minutes. Remove from the heat and let sit 5 minutes. Fluff with a fork.
  • Preheat the grill. Brush the asparagus with olive oil and season with salt and pepper. Grill on all sides until just cooked through, about 5 minutes. Remove from the grill and cut into 1/2-inch pieces.
  • Transfer the quinoa to a large bowl, fold in the asparagus, olives, goat cheese, basil and parsley. Add just enough vinaigrette to moisten the salad; don't make it too wet. Transfer to a platter and drizzle with more of the vinaigrette.

1 pound asparagus, trimmed and cut into 1 inch pieces
8 ounces mushrooms, quartered or sliced
1 tablespoon oil
salt and pepper to taste
4 strips bacon (optional)
8 ounces chicken breast, pounded thin
salt and pepper to taste
6 cups baby spinach
1/4 cup balsamic vinaigrette
1 large ripe avocado, sliced
1/4 cup goat cheese, crumbled

Steps:

  • Toss the asparagus and mushrooms in the oil, salt and pepper, place on a baking sheet in a single layer and roast in a preheated 400F/200C oven until they start to caramelize, about 20 minutes, mixing half way through.
  • Meanwhile, cook the bacon and set aside on paper towels to drain before crumbling.
  • Season the chicken with salt and pepper to taste, heat the grill (or a pan) to medium-high heat, brush with oil and cook the chicken until cooked through and golden brown, about 3-5 minutes per side, before letting rest for 5 minutes and slicing.
  • Assemble the salad, toss in the dressing and enjoy!

The brown rice cooks much faster and stays firm when it's cooked like pasta in a large amount of water so each grain absorbs the water evenly on all sides. " Boiling the rice (versus simmering it) also speeds up cooking because boiling water contains more energy than simmering water. " Water is precious here, so I plan to try making this with leftover cooked rice in the future, just to compare. I recommend their method for the first time you try this recipe.

1 tablespoon vegetable oil
1 lb asparagus, trimmed
salt and pepper
2 1/2 tablespoons extra-virgin olive oil
1 shallot, minced
1 teaspoon grated lemon zest plus 2 tablespoons juice
1 1/2 cups brown rice, cooked according to Brown Rice for Salad
4 ounces goat cheese, crumbled (1 cup)
1/2 cup slivered almonds, toasted
1/4 cup chopped fresh parsley

Steps:

  • Heat vegetable oil in 12-inch skillet over medium-high heat until shimmering. Add half of asparagus with tips pointed in 1 direction and remaining asparagus with tips pointed in opposite direction. Using tongs, arrange spears in even layer (they will not quite fit into single layer); cover and cook until bright green and still crisp, 2 to 5 minutes. Uncover, increase heat to high, season with salt and pepper to taste, and continue to cook until tender and well browned on 1 side, 5 to 7 minutes, using tongs to occasionally move spears from center to edge of pan to ensure all are browned. Transfer to plate and let cool completely. Cut into 1-inch pieces.
  • Whisk olive oil, shallot, lemon zest and juice, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a large bowl. Transfer cooled rice to the bowl. Add asparagus, all but 2 tablespoons goat cheese, and dressing; toss to combine. Let stand for 10 minutes.

1 Log (about 11 ounces) fresh mild goat cheese, preferably French Chevrion
½ Cup all-purpose flour
2 Large eggs, lightly beaten
1 Cup Panko bread crumbs
8 Spears jumbo asparagus
½ Cup soybean or corn oil
3 Small vine-ripened tomatoes, peeled, cored and cut into 8 wedges or slices
1 Cup baby greens, such as arugula or watercress, washed and dried
½ Cup Balsamic Vinaigrette (recipe follows)
For Balsamic Vinaigrette
2 Garlic cloves, thinly sliced
½ Cup extra-virgin olive oil
3 Tablespoons Balsamic vinegar
1 Teaspoon kosher salt and freshly ground pepper

Steps:

  • Put the garlic slices and oil in a small glass bowl and microwave on high power for 1 minute. Remove from the heat and stir in the balsamic vinegar, salt, and pepper to taste. Using a sharp knife dipped into hot water and wiped dry, a cheese wire, or a piece of (unflavored) thick dental floss, slice the goat cheese into 8 pieces slightly less than 1 inch thick. Place on a large plate. Line a baking sheet with parchment or waxed paper. Place the flour, eggs, and panko in three separate shallow bowls. Coat each slice of goat cheese with flour, shaking to remove any excess. Dip into the eggs and turn to coat well, and then dip into the panko, turning and pressing lightly to coat well. Place on the lined baking sheet. Refrigerate until ready to fry. Trim off the tough bottom ends of the asparagus spears. Peel the stems, and then cut into diagonal pieces about 2 inches in length. Cook the asparagus in a medium saucepan of boiling salted water for about 1 minute after the water returns to a boil. Immediately plunge the cooked asparagus into a bowl of ice water to stop the cooking. Drain well and refrigerate until ready to use. Heat the oil in a large non-stick skillet over medium heat. Add the cheese slices and cook until lightly browned on the first side, about 2 minutes. Turn and cook until golden on the second side. Remove and place on a baking sheet lined with several layers of paper towels to drain. The Cheese can be kept warm on a baking sheet in a 200-degree oven for up to 30 minutes. To serve, place 4 pieces of tomato in the center of each of four large chilled plates. Top with 2 spears of the asparagus. Place the greens on top of the vegetables, and spoon the vinaigrette over all. Place 2 slices of the warm goat cheese on one side of each salad and serve.

  • Directions Heat grill. Brush asparagus with olive oil and season with salt and pepper, to taste. Grill on both sides until just cooked through, about 2 minutes on each side. Remove from grill and cut in half. Bring 8 cups of salted water to a boil. Add quinoa and cook until soft. Drain and rinse with cold water and drain again. Place the quinoa in a medium bowl and add red wine vinegar, olive oil, parsley and 1/4 cup of olive vinaigrette. Stir to combine.   • Heat 2 tablespoons oil in 12-inch nonstick skillet over high heat until beginning to smoke; add red pepper and cook until lightly browned, about 2 minutes, stirring only once after 1 minute. Add asparagus, 1/4 teaspoon salt, and 1/8 teaspoon pepper; cook until asparagus is browned and almost tender, about 2 minutes, stirring only once after 1 minute. (I'm not possitive on the amounts, I'm guessing on a bottled dressing that they stopped selling. If you've made dressings before, I'm sure you'll figure it out. If not you could try to find one similar to this one.

  • Depending on how much salad you want to make will depend on how much Asparagus, but even if you make too much, you can always save it a few days. So, Roast the Asparagus brushed with olive oil. Let that cool. Preheat oven to 300°F. Brush large rimmed baking sheet with butter. Whisk egg white in bowl until foamy. Add sugar, spices, and salt. Whisk until mixture is thick and opaque. Add pecans; stir until coated. Using forks, transfer nuts to sheet, spacing apart; discard remaining coating. Bake nuts until deep golden brown, about 35 minutes. Cool completely on sheet. Transfer to container; cover and store at room temperature. Make the Dressing. Plac however much asparagus you want on your salad, then crumble goat cheese on top. Add the dressing and sprinkle with the pecans.

1 bunch of asparagus,on the thin side but thick enough to cut in half lengthwise.
1 cup fresh peas, or frozen and defrosted
½ cup of cooked and prepped fava beans, you could use frozen defrosted lima beans
5 radishes, thinly sliced
2 medium raw zucchini made into ribbons with a vegetable peeler, (no seeds)
½ bunch of red leaf lettuce chopped bite size and a generous handful of arugula mixed together or combination of salad greens of your choice
4 oz. of chevre goat cheese, I used the one with honey
the zest of one lemon, you can cut up a few slices for garnish after
½ cup of toasted hazelnuts, slightly cracked open
shaved Parmigiano Reggiano for top of salad
extra lemons for dressing
olive oil

Steps:

  • Roast your asparagus on a sheet pan drizzled with olive oil for maybe 5 or 10 minutes on 375 just until the raw taste is gone, you don't want limp asparagus they should still have a good bite to them, so keep checking. Cool them off and them slice them lengthwise.
  • Make a lemon and olive oil dressing using 2 parts fresh lemon juice to 4 parts olive oil.
  • In a bowl mash up your goat cheese and loosen it up with 2 tablespoons of the lemon dressing.
  • Gently toss and coat sliced asparagus into the mixture, adding salt and pepper to taste.
  • On a large platter assemble the greens, peas, fava beans, radishes, zucchini ribbons all over ending with the goat cheese coated asparagus on top.
  • Sprinkle the toasted nuts all around.
  • Spoon lemon dressing all around, as much as you think you need.
  • Add shavings of Parmiggiano Reggiano on top.
  • Garnish with a few lemon slices.

  • 1. Bring a large saucepan of water to a boil. Have a large bowl of ice water ready. Cook beans 3 to 4 minutes until just tender and transfer to ice water and pat dry. Repeat with peas, cooking for 1 minute, then into ice water and pat dry. Repeat with asparagus, cooking for 2 to 3 minutes, chill and pat dry. 2. Soak shallots in vinegar for a few minutes to soften. 3. Prepare dressing by whisking vinegar and shallots with lemon juice, Dijon mustard, salt and pepper and olive oil. Stir in herbs. 4. Just before serving toss beans peas and asparagus with dressing. Arrange on a platter and sprinkle with cheese and pine nuts.

  • Roast your asparagus on a sheet pan drizzled with olive oil for maybe 5 or 10 minutes on 375 just until the raw taste is gone, you don't want limp asparagus they should still have a good bite to them, so keep checking. Cool them off and them slice them lengthwise. Make a lemon and olive oil dressing using 2 parts fresh lemon juice to 4 parts olive oil. In a bowl mash up your goat cheese and loosen it up with 2 tablespoons of the lemon dressing. Gently toss and coat sliced asparagus into the mixture, adding salt and pepper to taste. On a large platter assemble the greens, peas, fava beans, radishes, zucchini ribbons all over ending with the goat cheese coated asparagus on top. Sprinkle the toasted nuts all around. Spoon lemon dressing all around, as much as you think you need. Add shavings of Parmiggiano Reggiano on top. Garnish with a few lemon slices.

1 cup walnut halves
1/2 teaspoon fennel seeds
2 pounds medium asparagus
1/4 cup extra-virgin olive oil
1 1/2 Tablespoons sherry vinegar
1 large scallion, white and light green part only, minced
1 Tablespoon chopped tarragon
1 Tablespoon chopped mint
Salt and freshly ground pepper
4 ounces goat cheese, such as Bucheron,rind removed and cheese crumbled

Steps:

  • 1. Preheat the oven to 350*. Spread the walnuts on a small baking sheet and bake for 8 minutes, or until lightly toasted. Transfer to a plate to cool, then break the walnuts into half lengthwise. 2. Meanwhile, in a small skillet, toast the fennel seeds over moderately high heat until fragrant, about 20 seconds. Transfer to a work surface, let cool, then finely chop. 3.Discard tough ends of asparagus and steam until just tender, about 4 minuts. Transfer to paper towels to cool, then cut on the diagonal into 2-inch lengths. 4. In a large bowl, whisk the olive oil with the vinegar, scallion, tarragon, mint and fennel seeds. Season with salt and pepper. 5. Add the asparagus and walnuts to the bowl and toss gently. Add the goat cheese. Season again with salt and pepper. Transfer to plates and serve.

2 pounds medium asparagus, tough ends removed
2 red bell peppers
2 tablespoons white wine vinegar
2 tablespoons capers, drained
1 tablespoon Dijon mustard
2 teaspoons chopped tarragon or dill
1 garlic clove, very finely chopped
1/2 small red onion, finely chopped
Salt and freshly ground pepper
1/4 cup plus 2 tablespoons extra-virgin olive oil
2 ounces soft mild goat cheese
12 Niçoise or Calamata olives, pitted and chopped
Shavings of Parmigiano-Reggiano cheese (optional)

Steps:

  • Directions 1. In a large pot of boiling salted water, cook the asparagus until bright green and tender, about 3 minutes; transfer to a colander and refresh under cold water. Drain and pat dry. 2. Roast the peppers directly over a gas flame or under the broiler, turning, until charred all over. Transfer to a medium bowl, cover with plastic wrap and let steam for 10 minutes. Peel the peppers and cut them into 1/4-inch-thick strips. 3. In a medium bowl, stir together the vinegar, capers, mustard, tarragon, garlic and onion; season with salt and pepper. Whisk in the olive oil. 4. Arrange the asparagus on a serving platter. Lay the roasted pepper strips over the asparagus and drizzle with half of the vinaigrette. Crumble the goat cheese on top. Garnish with the chopped olives and the Parmigiano shavings and serve, passing the remaining vinaigrette at the table. Make Ahead The recipe can be prepared through Step 3 up to 8 hours ahead. Refrigerate the asparagus, peppers and vinaigrette separately.

Asparagus, Beet and Goat Cheese Salad image

Fresh and easy salad to toss together for a light lunch or as a dinner appetizer.

Number Of Ingredients 13

4 large beets (or 6 medium, or 8 small)
1 pound asparagus
1/2 small onion, finely chopped
1 tbsp minced flat leaf parsley
1 1/2 tsp salt
1/2 tsp pepper
2/3 cup chopped pecans (or any nut you'd like)
1/4 cup maple syrup
3 tbsp cream of balsamic (use any flavor you like, but I prefer a berry infusion)
1/4 cup olive oil
squeeze of lemon juice
salt and pepper to taste
4 oz. goat cheese, chilled

Steps:

  • Peel beets and chop into 1-inch cubes. Steam beets for 12-15 minutes or until fork-tender. Set aside to cool.
  • Peel any tough ends from asparagus stalks and cut into 1-inch pieces. Steam asparagus for 6-8 minutes or until fork tender. Set aside to cool.
  • Place cooled beets and asparagus, onion, and parsley together in a large bowl. Sprinkle with salt and pepper and toss to combine.
