This was an experiment I tried for dinner one night, and it turned out incredibly well! It all started because I was craving shrimp scampi, but didn't have several of the necessary ingredients. Instead, I improvised. This is the result.

1 lb shrimp, cleaned, raw, and unpeeled
1 (12 ounce) bottle hard apple cider
1 tablespoon Old Bay Seasoning
2 tablespoons szechuan sauce
2 tablespoons hoisin sauce
1 tablespoon sriracha sauce
1 teaspoon garlic, freshly minced
1 teaspoon onion powder
1 teaspoon mixed Italian herbs, dried (basil, oregano, parsley, rosemary, etc)
1 teaspoon powdered hot pepper (optional)

Steps:

  • Combine 1/2 bottle of the cider and the rest of the ingredients (except the shrimp and the powdered hot pepper) in a gallon size sealable bag or marinating container, and mix well.
  • Add shrimp to the marinade, and lay flat in refrigerator, marinating for about 15 minutes on each side.
  • Pour the rest of the cider into a medium/large saucepan (one big enough to lay out all of the shrimp in a single layer) and bring to a boil.
  • Reduce heat to medium, and add marinated shrimp, along with all of the marinade liquid. Spread shrimp out in a single layer. Sprinkle with half of the hot pepper, if you're using it.
  • Saute shrimp for about 5-7 minutes per side, keeping it moving (but not allowing them to overlap - gently shaking the pan occasionally does the trick). The shrimp are done once they are pink throughout.

1 lb shrimp
1 (8 ounce) package tempura batter frying mix
2 cups panko breadcrumbs
2 cups vegetable oil

Steps:

  • Devein the shrimp and remove the shells. You may leave the shell on the tails if desired.
  • Pat the shrimp dry and set aside.
  • In a mixing bowl, make up the tempura batter per the package instructions.
  • Put the panko breadcrumbs in a shallow dish, like a pie plate.
  • Heat the oil in a saucepan or other vessel over medium-high heat until hot.
  • Dip each shrimp in the tempura batter and then coat well with the panko bread crumbs.
  • Fry the shrimp, in batches, until golden brown. Place the cooked shrimp on paper towels to drain, until all of the shrimp has been fried. Serve immediately.

BROILED BUTTERFLIED SHRIMP

Somewhere, I got the idea that Shrimp Scampi is supposed to be broiled, yet most recipes I found sauteed. So I made this last night and my husband loved it.

1 lb jumbo shrimp, thawed (if frozen)
2 garlic cloves, sliced thin
4 tablespoons butter
salt
cayenne pepper
1/8 cup Italian style breadcrumbs
1/8 cup panko breadcrumbs
1/8 cup parmesan cheese, grated
1/8 cup fresh parsley, chopped

Steps:

  • Preheat broiler. Peel, devein, and butterfly shrimps. Arrange butterflied shrimp in a shallow baking dish in a single layer. Season to taste with salt and cayenne pepper.
  • In a small skillet, melt the butter and saute garlic for 5 minutes or so. Do not allow to brown. Remove garlic. Pour about half evenly over shrimp.
  • Sprinkle arranged shrimp with both types of bread crumbs. Sprinkle with Parmesan cheese. Pour remainder of butter evenly over shrimp.
  • Broil about 3 to 5 minutes until shrimp or bread crumbs begin to brown and shrimp are opaque. Turn shrimps over and broil another 3 to 5 minutes until done.
  • Garnish with fresh chopped parsley.

1 lb medium raw shrimp
2 tablespoons dry sherry
2 1/2 teaspoons cornstarch, divided
1 teaspoon sugar, divided
3 tablespoons soy sauce, Low sodium
2 tablespoons water
1 tablespoon white vinegar
2 tablespoons vegetable oil
1/4 cup chopped green onion, with tops
1 teaspoon fresh gingerroot, minced
1 garlic clove, minced

Steps:

  • Peel and devein shrimp, leaving the tails on.
  • Combine sherry, 2 tsp of the cornstarch and 1/2 tsp sugar in bowl, stir in shrimp until well coated. Cover and refrigerate 30 minutes.
  • Meanwhile combine soy sauce, water, vinegar, remaining 1/2 tsp each of the cornstarch and sugar and set aside.
  • Heat oil in wok or large skillet over med-high heat. Add green onion, ginger and garlic, stir fry 30 seconds.
  • Add shrimp, stir fry 3 minutes, or until pink.
  • Pour in soy sauce mixture, cook and stir until sauce boils and thickens.
  • Garnish as desired, and serve as desired.

1/2 cup diced watermelon
1/2 cup blueberries
1/2 cup diced pineapple
1/4 cup diced red onion
1 tablespoon minced jalapeno
1/4 cup fresh herb (basil, mint and or cilantro)
1 lime, juice of
1/4 teaspoon fresh grated gingerroot
1/2 teaspoon soy sauce
1/2 teaspoon sesame oil
1 lb large shrimp, shelled and deveined
1/2 cup whole wheat flour
2 egg whites
1 tablespoon peanut butter
1/2 teaspoon sesame oil
1 teaspoon grated fresh ginger
2 ounces graham crackers, 1/2 cup crushed fine
oil (for frying)

Steps:

  • Spicy Fruit Salsa: Mix all ingredients together and chill for 1-6 hours.
  • Shrimp: Place cleaned shrimp on paper towels to dry.
  • Flour shrimp to coat shaking off excess, set aside.
  • To the remaining flour add the graham crumbs, set aside.
  • Place the egg whites in a bowl whisk lightly add peanut butter, sesame oil and ginger whisk to combine.
  • Dip into egg white mixture then coat with the graham crumbs and set aside.
  • Heat 1 inch peanut oil or vegetable oil till hot over medium high heat in a large frying pan. When oil is hot add half the shrimp fry for 1 minute flip and fry 1 more minute. Remove to a paper towel to drain.
  • Repeat with rest of shrimp.
  • Plate the shrimp with the bowl of chilled salsa.
  • This would be fun to enjoy wrapped in romaine lettuce or with rice.

1/2 teaspoon salt
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 1/2 cups water
1 lb raw shrimp, peeled and deveined
3 tablespoons cornstarch, in
1/4 cup water
3 eggs, slightly beaten
3 green onions, sliced thin

Steps:

  • Heat wok.
  • Stirfry pork, breaking apart any chunks.
  • Add garlic and salt.
  • Add soy, oyster sauce and water to pork.
  • Cover and boil five minutes.
  • Add shrimp and cook until pink and cooked through.
  • Thicken mixture with cornstarch slurry.
  • Cook until mixture is clear and thick.
  • Add green onions and beaten eggs, stirring constantly.
