2 cups lettuce (torn)
2 slices deli turkey (chopped)
1/4 cup cucumber (sliced)
1/4 cup grape tomatoes (sliced in half)
1/2 cup mandarin orange (drained, reserve juice)
0.25 (3 ounce) package ramen noodles (broken in small pieces)
2 tablespoons balsamic vinegar
1 teaspoon olive oil
1/2 teaspoon Mrs. Dash garlic and herb seasoning
1 tablespoon mandarin orange juice

Steps:

  • Toss all salad ingredients except ramen noodles.
  • Mix all dressing ingredients.
  • Pour dressing over salad and toss.
  • Add broken ramen noodles and enjoy.

Balsamic Vinegar Chicken Salad image

2 tablespoons olive oil
1/4 cup finely chopped onion
1 tablespoon garlic
1 pound boneless, skinless chicken breasts, sliced into 1/2-inch strips
1/4 cup balsamic vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
3 tablespoons pine nuts
Salt and pepper
Mixed greens
Fresh grated Parmesan cheese

Steps:

  • Heat oil in large non-stick skillet and cook onion until tender. Stir in garlic and chicken. Cook chicken until golden brown. Stir in the balsamic vinegar and let simmer for 1 minutes. Stir in honey and Dijon and toss to coat. Add pine nuts and season with salt and pepper. Top mixed greens with chicken mixture and fresh grated Parmesan.

2 cups cubed cooked turkey
1 tablespoon finely chopped onion
1/2 teaspoon salt
1 cup halved seedless red grapes
1 cup diced celery
1 can (15 ounces) mandarin oranges, drained
1 cup cooked macaroni
3/4 cup heavy whipping cream, whipped
3/4 cup mayonnaise
1/3 cup slivered almonds
Toasted almonds, optional

Steps:

  • In a large bowl, combine turkey, onion and salt; mix well. Add grapes, celery, oranges and macaroni; toss lightly to mix. Cover and refrigerate. , Just before serving, combine fold whipped cream into mayonnaise; fold into salad along with almonds. Top with toasted almonds if desired.

1/4 cup vegetable oil
3 tablespoons toasted sesame oil
3 tablespoons lemon juice
3 tablespoons soy sauce
1 tablespoon sugar
1/2 teaspoon ginger powder
1 teaspoon fresh minced garlic (optional)
1 1/2 cups cooked wild rice
2 cups chopped cooked chicken (or use turkey)
1/4 cup sliced water chestnuts (or to taste)
1 small onion, chopped
2 celery ribs, finely chopped
1 1/2 cups fresh snow peas (lightly steamed, or use frozen thawed)
salt and black pepper
1 cup crispy chow mein noodles (optional or to taste)
green onion, chopped

Steps:

  • For the dressing; whisk all ingredients together until the sugar is completey dissolved; let stand at room temperature for 45 minutes to blend flavors (or chill overnight) before using.
  • For the salad; Place the cooked wild rice, cooked chicken or turkey, water chestnuts, chopped onion, celery and snow peas in a large glass salad bowl; toss to combine.
  • Pour the dressing over; toss to combine well and chill for about 2 hours.
  • Just before serving, toss again and season with salt and black pepper.
  • Sprinkle with crispy noodles and green onions.
  • Delicious!

This is simple to throw together, light and tangy. I often vary the ingredients, using honey or orange juice instead of sugar, adding wasabi powder -- whatever I'm in the mood for. The joy of cooking is being creative! If you wish to substitute the oil, use a bland vegetable oil, extra virgin olive oil or "light" olive oil. Regular olive oil is too strong for this recipe.

3 tablespoons rice wine vinegar
1 tablespoon sugar
3 tablespoons soy sauce, pref. low-sodium
1 tablespoon ginger, fresh grated
1/2 teaspoon garlic, fresh minced
2 tablespoons sesame oil
1/2 cup peanut oil or 1/2 cup grapeseed oil
1 tablespoon sesame seeds, lightly toasted
1 tablespoon scallion, chopped (green onions)

Steps:

  • Mix first 5 ingredients in a bowl or food processor.
  • If using a bowl: SLOWLY drizzle in the sesame and peanut oil, whisking constantly so that the dressing will emulsify.
  • If using a food processor, leave it running while you drizzle in the oil.
  • When dressing is well combined, add sesame seeds and scallions.
  • Serve immediately or refrigerate and use within a week.
