1-1/4 pounds extra-lean ground turkey
1 package (16 ounces) frozen stir-fry vegetable blend, thawed
1/3 cup reduced-sodium teriyaki sauce
1/4 cup hoisin sauce
3 tablespoons reduced-fat creamy peanut butter
2 tablespoons minced fresh gingerroot
1 tablespoon rice vinegar
1 tablespoon sesame oil
3 garlic cloves, minced
4 green onions, chopped
10 Boston lettuce leaves
Additional hoisin sauce, optional

Steps:

  • In a large nonstick skillet coated with cooking spray, cook turkey over medium heat until no longer pink., Coarsely chop stir-fry vegetables; add to the pan. Stir in the teriyaki sauce, hoisin sauce, peanut butter, ginger, vinegar and oil. Stir-fry over medium-high heat for 5 minutes. Add garlic; cook 1 minute longer., Remove from the heat; stir in onions. Place a scant 1/2 cup turkey mixture on each lettuce leaf; fold lettuce over filling. Serve with additional hoisin sauce if desired.

2 tablespoons olive oil
2 pounds ground turkey
kosher salt and freshly ground black pepper to taste
2 medium red bell peppers, diced
2 small onions, diced
6 cloves garlic, minced
½ cup hoisin sauce
4 tablespoons soy sauce
1 teaspoon freshly grated ginger
2 cups cooked rice
6 stalks green onion, thinly sliced
2 heads butter lettuce, leaves separated

Steps:

  • Heat olive oil in a wok over medium-high heat. Add ground turkey; cook and stir until crumbly and browned, 8 to 10 minutes. Transfer turkey to a bowl; drain and discard grease from the wok.
  • Add bell peppers, onions, and garlic to the wok. Cook, stirring frequently, until tender, 3 to 5 minutes. Stir in hoisin sauce, soy sauce, and ginger. Add turkey and stir until well combined. Add rice and green onion; toss gently to combine.
  • Serve several tablespoons turkey-rice mixture taco-style in the center of the lettuce leaves.

1 tablespoon peanut oil
1 large onion, chopped
1 1/4 pounds lean ground turkey
1/2 cup purchased Asian peanut sauce
1 tablespoon hoisin sauce
1 tablespoon soy sauce, plus additional soy sauce for dipping
1 cucumber, peeled, seeded, chopped (about 1 1/4 cups)
1/3 cup coarsely chopped fresh mint plus 1/3 cup small mint sprigs
12 large butter lettuce leaves

Steps:

  • Heat peanut oil in heavy large skillet over medium-high heat. Add onion and sauté until beginning to brown, about 3 minutes. Add turkey and sauté until brown and cooked through, breaking up with back of spoon, about 7 minutes. Add peanut sauce, hoisin sauce, and 1 tablespoon soy sauce; heat through. (Can be made 8 hours ahead. Cover and refrigerate. Reheat in microwave or skillet, adding water by tablespoonfuls to moisten if necessary, before continuing.) Stir in cucumber and chopped mint. Season with salt and pepper.
  • Transfer turkey mixture to medium bowl. Place mint sprigs and lettuce leaves on platter. To make wraps, spoon turkey mixture onto lettuce leaf, add a few mint sprigs, fold in sides over filling, and roll up. Pass additional soy sauce alongside wraps for dipping.

1 -2 teaspoon dried chili pepper flakes (optional add in for extra heat)
2 tablespoons minced fresh garlic
1 tablespoon minced fresh ginger (can use more to taste)
1 1/2 cups white button mushrooms, chopped
1 (8 ounce) can water chestnuts, drained and finely chopped
1/3 cup teriyaki sauce
3 tablespoons reduced-fat peanut butter
1 tablespoon sesame oil
1 tablespoon rice vinegar
1/4 cup hoisin sauce
2 green onions, finely chopped
salt and black pepper
1 head iceberg lettuce, separated into leaves (or use a package of lettuce crispy wraps)

Steps:

  • In a skillet cook the ground chicken or turkey in 1 teaspoon oil with the chili flakes (if using) garlic, ginger and mushrooms until the meat is no longer pink (about 5 minutes).

3 tsp olive oil, (divided)
1 lb 93% lean ground turkey or chicken
4 - 5 Tbsp hoisin sauce, (to taste (I used Lee Kum Kee))
1 Tbsp soy sauce, ((low-sodium or regular))
2 tsp sriracha ((optional))
1 Tbsp rice vinegar
1 1/2 tsp sesame oil
1 tsp honey
1 Tbsp minced fresh garlic ((3 cloves))
1 Tbsp peeled and minced fresh ginger
2/3 cup sliced green onions, (white and light green portion, plus more green portion for serving)
1 medium carrot, (peeled and shredded (1/2 cup))
1 (8 oz) can water chestnuts, (drained and chopped small)
1 large head Bibb lettuce or iceberg lettuce

Steps:

  • Heat 1 1/2 tsp oil in a 12-inch non-stick skillet over medium-high heat.
  • Add turkey or chicken in large crumbles then let cook until slightly browned on bottom, about 3 minutes, then break up and continue to cook until it's fully cooked through, about 3 minutes longer.
  • Meanwhile while turkey is cooking in a mixing bowl whisk together hoisin sauce, soy sauce, sriracha, rice vinegar, sesame oil and honey, set aside.
  • Drain of excess liquid from turkey (if there is any) then push to one far side of pan and pull that side of pan off heat.
  • Heat remaining 1 1/2 tsp oil in now empty side of skillet.
  • Add green onions and carrots and saute 1 1/2 minutes. Add in garlic and ginger and saute 30 seconds longer.
  • Pour in sauce and water chestnuts then cook and toss 30 seconds longer.
  • Serve warm in lettuce leaves garnished with sliced green onions.

1 medium zucchini, chopped

  • Heat 2 T oil in a large skillet.

1/2 lb ground turkey
1 tsp canola oil
2 clove garlic, minced
1 1/2 tsp minced fresh ginger
1/4 tsp kosher salt
2 c bagged coleslaw mix with carrots
1/2 can(s) (8oz can) sliced water chestnuts, rinsed and minced
1/4 c sliced green onions (thin slices in diagnal)
2 Tbsp low sodium soy sauce
1/2 tsp sesame oil
1/2 lemon, zested and juiced (about 2 tsp juice)
2 dash(es) hot sauce (more or less to taste)
2 Tbsp roughly chopped cilantro
8 large ice berg lettuce leaves
SAUCE
4 Tbsp low sodium soy sauce
4 Tbsp rice vinegar
3 Tbsp water
2 tsp honey
1-2 tsp freshly minced ginger

Steps:

  • 1. Heat a very large skillet to medium-high heat on the stove top. When hot, add canola oil and then garlic and ginger. Saute for about 30 seconds, until fragrant, and then add ground turkey and kosher salt. Cook for about 5 minutes, stirring often, until chicken is cooked through. (If there is a lot of excess liquid, spoon out excess so the turkey can cook and not boil.) Add coleslaw, water chestnuts, and green onions. Cook for about 2 minutes, until cabbage/slaw starts to wilt. Add soy sauce, sesame oil, the zest from the lemon and the lemon juice, and hot sauce to taste. Remove from heat and stir in cilantro.
  • 2. Prepare dipping sauce by combining all ingredients in a bowl and whisk to combine.
  • 3. To serve take a few lettuce leaves and make an assembly line. Place turkey mixture in the leaves and serve on a platter or plates with a side of sauce.
