SEARED TUNA SALAD WITH ASIAN VINAIGRETTE

Steps:
- In a small bowl, whisk together the vinegar, soy sauce, lime, ginger, mustard and cilantro. Pour in the oil and continue to whisk until emulsified.
- Season the tuna fillets with salt and pepper; lightly coat with oil. Put sesame seeds on a plate. Coat top and bottom of each fillet with seeds. Heat a large, dry skillet over high heat. Add fillets; cook about 3 minutes. Turn; cook until desired doneness, about 3 to 4 minutes for rare. Slice the tuna into 1-inch thick strips.
- Mix the greens together and spread out on a platter. Add the green onions, rice noodles almonds, and orange segments. Lay the tuna strips on top then drizzle with the vinaigrette. Season with salt and pepper and serve immediately.

SPICY ASIAN TUNA SALAD
Do yourself a favor and try this fabulous variation on traditional tuna salad. It's good for everyday use on top of a salad with an asian vinagrette and can also be served with crackers at a dinner party. If you like a little crunch in your tuna salad feel free to substitute red onion for the green onion or add some chopped up celery. I created this recipe on a whim for use in my sushi rolls and have it posted under "Spicy Tuna Salad Sushi Roll" with a lot of detailed instructions on how to prepare the rolls.

- Prepare grill for direct-heat cooking over hot charcoal (high heat for gas); see Grilling Procedure .
- Whisk together olive oil, sesame oil, soy sauce, vinegar, and ginger.
- Combine coriander seeds, white peppercorns, and kosher salt in a small bowl.
- Rub vegetable oil all over tuna, then coat with spice mixture, pressing gently to help it adhere.
- Oil grill rack, then grill tuna, covered only if using a gas grill, turning onto all sides, until seared on all sides but still very rare inside, 6 to 8 minutes total. Transfer tuna to a cutting board and cut across the grain into 8 slices.
- Julienne jicama using an adjustable-blade slicer fitted with 1/8-inch julienne attachment or using a knife.
- Toss watercress and jicama with enough dressing to coat, then season with salt and pepper.
- Serve tuna over salad, sprinkled with scallions. Serve remaining dressing on the side.

- Cook somen noodles in large pot of boiling water until done, 2 to 3 minutes. Meanwhile, in a small bowl whisk together ginger, garlic, red-pepper flakes, sugar, soy sauce, rice vinegar, and oils; set aside. Drain noodles in a colander, rinse with cold water, and shake to drain noodles well. Place noodles in large bowl, toss with scallions and half of dressing, about 1/3 cup. Place on large round serving platter on one-third of the plate and set aside.
- Place cabbage, carrots, cucumber, radishes, cilantro leaves, and sesame seeds in the empty bowl and toss with remaining dressing. Place on serving platter adjacent to the noodles, covering another third of the platter; set aside.
- Dry tuna with paper towel, rub with oil, season with salt and five-spice powder, if using. Grill or pan-sear tuna over medium-high heat, about 1 1/2 to 3 minutes per side for rare to medium-rare steaks. Cut into 1/4-inch slices and place in a number of rows in fan pattern on remaining third section of serving platter. Place cilantro sprigs in center of platter and serve immediately.

- Mix all of the dressing ingredients in a blender or food processor except the sesame seeds and green onion. Then stir in the seeds and onion. Drizzle some of the dressing on both sides of the tuna. Sear the tuna over high heat on each side. Mix salad greens, spinach, green onion, avocado, and almonds with desired amount of dressing (you can refrigerate extra dressing for about a week). Plate the salad. Slice the tuna and place on top of the salad. Serve and enjoy!

- Cook noodles until done, 3 minutes
- Combine dressing by whisking or using an immersion blender to mix ginger, garlic, red pepper flakes, sugar, soy sauce, sesame and canola oils and rice vinegar.
- Drain noodles and rinse with cold water. Shake to drain well. Place noodles in large bowl, toss with scallions and half the dressing. Place on a large serving platter.
- Place cabbage/lettuce, carrots, cucumber, radishes, cilantro and sesame seeds in a large bowl. Toss with other half of dressing. Place around edges of tossed noodles.

- 1. Trim tuna into a block that can then be cut down into cubes and combine with soy, wasabi and sake. Allow tuna to marinate for 15mins in fridge. 2. Cook Soba noodles in boiling water for 4mins. Drain and rinse well with cold water. 3. Add Noodles to a large shallow salad bowl. Add greens, tomatoes, cucumber, olives. 4. Make dressing by combing all ingredients in a bowl, set aside. 5. Heat a fry pan over high heat, preferably non stick. Sear Tuna cubes for 10 seconds on two sides only. 6.
