This 5-Ingredient Ham and Noodle Casserole is an easy one dish meal that takes advantage of your delicious leftovers!

Number Of Ingredients 6

1 (12 ounce) package broad egg noodles
1 tablespoon mustard ((yellow mustard, honey mustard, or Dijon mustard will all work well, so pick your favorite))
2-4 cups diced cooked ham ((or any leftover meat))
1 (10.5 ounce) can condensed cream of mushroom soup (not diluted)
1 cup grated cheddar cheese
Optional addition: 4 cups frozen French-style green beans or other veggies of your choice

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook egg noodles just until al dente, according to package instructions. Drain.
  • While the noodles are cooking, place mustard, ham, condensed soup, and optional frozen green beans in a large bowl.
  • Pour the drained, cooked, hot noodles over the rest of the ingredients in the bowl and stir to combine.
  • Transfer noodle mixture to prepared baking dish. Top with grated cheese.
  • Cover with foil and bake for 20 minutes.
  • Remove foil, return to the oven (uncovered) for 20-25 more minutes, or until cheese is melted and casserole is heated through.

I never seem to make enough of this salad. When people see the recipe, they look at me as if I am a little odd...but when they eat it they can't seem to stop! This recipe is great for kids and adults alike. The garlic is optional. Also, to lighten up the salad, substitute light mayonnaise, light sour cream, and turkey ham.

8 ounces ziti pasta
1 pound cooked ham, cubed
1 large red bell pepper, cut into 1 inch pieces
1 large green bell pepper, cut into 1 inch pieces
1 large red onion, coarsely chopped
15 small sweet pickles, chopped, juice reserved
1 cup cherry tomatoes, halved
1 cup mayonnaise
½ cup sour cream
2 ½ teaspoons beef bouillon granules
1 tablespoon white vinegar
½ teaspoon salt
¼ teaspoon ground black pepper
2 cloves garlic, minced

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl, mix together the drained pasta, ham, peppers, onion, pickles and tomatoes.
  • In a small bowl, whisk together the mayonnaise, sour cream, beef bouillon granules, vinegar, salt, pepper, garlic and 1/2 cup of reserved pickle juice. Fold into the salad and toss gently until evenly coated. Chill overnight to allow the flavors to blend. Serve near room temperature.

1/2 cup mayonnaise, plus more if needed
2 tablespoons whole-grain mustard
1 pound leftover baked ham, cut into 1-inch chunks
1 1/4 cups drained bread-and-butter pickle chips and 1 tablespoon pickle juice, plus more if needed
2 inner ribs celery, finely chopped, plus 2 tablespoons coarsely chopped leaves from the inner ribs
1/2 small red onion, finely chopped

Steps:

  • Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.
