8 ounces uncooked angel hair pasta
1 cup sliced fresh mushrooms
1 cup fresh snow peas
3/4 cup shredded carrots
4 green onions, cut into 1-inch pieces
2 tablespoons canola oil
1 garlic clove, minced
1/4 cup reduced-sodium soy sauce
1 teaspoon sugar
1/4 teaspoon cayenne pepper
2 tablespoons sesame seeds, toasted

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute the mushrooms, snow peas, carrots and onions in oil until crisp-tender. Add garlic; cook 1 minute longer., In a small bowl, combine the soy sauce, sugar and cayenne. Drain pasta. Add pasta and soy sauce mixture to skillet and toss to coat. Heat through. Sprinkle with sesame seeds.

I adapted this reciped which was originally a single-serving , lunch dish, into a tasty and healthy family dinner. Feel free to add any types of vegetables and protein to this great dish!

6 ounces whole wheat spaghetti
6 cups bok choy (can substitute with shredded cabbage)
1 (8 ounce) bag frozen asian-style vegetables (I used Birdseye Asian Steamed Vegetables)
1/3 cup sweet chili sauce
2 tablespoons lime juice
1 1/2 teaspoons ground ginger
1 1/2 teaspoons garlic, minced

Steps:

  • Cook spaghetti.
  • While spaghetti is cooking, microwave frozen vegetables in order to defrost (about 3 minutes).
  • Drain spaghetti.
  • Combine all ingredients in the pot with the cooked spaghetti
  • Serve warm and enjoy!

I wanted something a little different for supper one night. Had some ground turkey, and some leftover teriyaki sauce, and this is what I came up with! The chili flakes gave it enough heat for me, but more can be added!! Amounts are estimated, as I don't measure when I'm "creating". lol

1 lb ground turkey
1 teaspoon garlic, minced
1/2 teaspoon dried onion flakes (or use real onion, I had none!)
1 (350 ml) jar teriyaki sauce (approximate, I can't remember amount in jar)
1 teaspoon sesame oil
1 teaspoon ginger (fresh or frozen)
1/2 teaspoon dried chili pepper flakes
1/2 cup carrot, julienned (or matchsticks)
1/3 cup sugar snap pea, cut into large pieces
1 green pepper, sliced
1/2 red pepper, sliced
soy sauce
salt or pepper

Steps:

  • Cook ground pepper in a pan or pot until browned. Add garlic & onion flakes.
  • Add teriyaki sauce, sesame oil, ginger, chili flakes, soy sauce & salt & pepper. Stir.
  • Add carrots & peas. Stir & allow them to cook slightly. Peppers can also be added at this point, but we like them very crisp, so we add them at the last minute - just to heat them through.
  • Serve over whole wheat spaghetti.

1/2 lb spaghetti, uncooked
1 tablespoon oil
3 tablespoons sesame seeds
3 tablespoons soy sauce
1 -2 green onion, trimmed and thinly sliced

Steps:

  • Bring large pot of salted water to a boil on high heat. Add spaghetti.
  • Boil according to package directions until al dente. Drain.
  • Heat oil in small skillet on medium heat.
  • Add sesame seeds. Saute 2 minutes or until brown.
  • Toss spaghetti with soy sauce, sesame seeds and scallions.
  • Serve immediately.

ASIAN-INSPIRED MEATBALLS AND SPAGHETTI

This one is hot off the press from Eat Boutique blog. The creator, Denise Woodward, said she's been developing this recipe for a year. She finally nailed it by using pork instead of beef, chicken or turkey and even veal. The sesame seeds add crunch to the meatballs and the sauce is definitely umami with it's sweet, sour and spicy flavors. Soba noodles completes the meal.

1 1/2 lbs ground pork
1/2 cup panko breadcrumbs
2 tablespoons sesame seeds
1/2 cup cilantro, roughly chopped
2 garlic cloves, minced
1/2 cup green onion, thinly sliced
1 egg
1/2 cup brown sugar
1/2 cup white wine
1/2 cup soy sauce
1 tablespoon grated fresh ginger
1 -2 teaspoon sriracha asian garlic sauce
safflower oil or vegetable oil
1 (12 ounce) package soba noodles

Steps:

  • In a saucepan, over low heat, add the brown sugar, white wine and soy sauce. Stir and cook just until the sugar melts, about 2 minutes. Add the ginger and Sriracha; stir and continue to simmer over very low heat, for 10 minutes. Remove from the heat; set aside.
  • In a large bowl, add all of the meatball ingredients. Using your hands, mix well. Form the mixture into small meatballs.
  • In a shallow frying pan, add about a 1/4 inch of safflower oil; heat until hot, about 2 minutes. Add the meatballs a few at a time. Brown each side. Remove to a paper towel. Repeat the process.
  • Once all the meatballs are browned, wipe out the excess oil from the frying pan with a paper towel (do not rinse or wash) and place the meatballs back into the pan. Pour the sauce over the top, and let simmer over very low heat for 15 minutes. Stir occasionally to prevent sticking.
  • Right before serving, cook the noodles according to the package direction. Drain. Toss with a teaspoon of safflower oil to prevent noodles from sticking.
  • Add the meatballs to the noodles. If the sauce is a bit thin, raise the heat and cook down a bit until it is thick. Pour over the noodles, gently toss.

1 Spaghetti squash

Steps:

  • Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper. Sprinkle each half of squash with salt & pepper, then place cut side down on baking sheet. Bake until interior of squash is fork-tender, 40-50 minutes. Let cool. Meanwhile, whisk fish sauce, brown sugar, ginger, garlic, lime juice, jalapeño, sesame oil in large bowl. Using a fork, scrape squash crosswise to pull strands. Heat vegetable oil in a skillet, add carrots and stirfry for 2 minutes, add peppers for another 2 minutes, add sugar snap peas, stir and then turn off the heat. Toss arugula and vegetables with dressing and squash.

- 2 (2 1/4-pound) spaghetti squash
- 1 clove garlic
- 2 tablespoons sesame or olive oil
- 2 tablespoons vegetable oil
- 2 tablespoons rice wine vinegar
- 2 tablespoons soy sauce
- 1 teaspoon sugar
- 1/2 to 1 teaspoon dried crushed red pepper
- 1/2 cup sliced green onions
- 1/2 cup grated carrot
- 1/2 cup snow pea pods, cut lengthwise into thin strips
- 2 tablespoons sesame seeds, toasted

Steps:

  • Cut squash in half lengthwise; remove seeds. Place squash, cut side down, in a shallow baking dish or pan. Add water to dish to depth of 1/2 inch.
  • Bake at 375° for 45 minutes or until skin is tender and strands may be easily loosened with a fork. Drain and cool slightly.
  • Position knife blade in food processor bowl; add garlic, and process until finely chopped, scraping down sides, if nesessary. Add sesame oil and next 5 ingredients. Process garlic mixture until blended, stopping once to scrape down sides. Set garlic mixture aside.
  • Remove spaghetti-like strands of squash, using a fork; discard shells. Combine squash, green onions, carrot, and snow peas in a large bowl. Add garlic mixture; toss gently. Sprinkle with sesame seeds. Serve immediately.
