GRILLED SKIRT STEAK WITH HOMEMADE ASIAN BARBEQUE MARINADE

Grilled Skirt Steak with Homemade Asian Barbeque Marinade image

The problem with bottled sauces and marinades is that the only words you recognize on the ingredients list are 'high fructose corn syrup,' and 'dehydrated garlic.' Hopefully, you will see just how simple this sauce is to make. Not only is it MSG-free, but the flavor is far superior to any of those supermarket bottles.

ASIAN PORK STEAKS (MARINADE)

Asian Pork Steaks (Marinade) image

My Vietnamese fiance taught this to me. It has a strong flavor, so I serve it over a bed of rice with steamed veggies on the side. Regular Soy sauce works fine, but I prefer the low-sodium to ease the saltiness. You can fry, grill or broil the steaks, depending upon your taste. Very simple though! Prep time includes marinating, and cook time is for frying the steaks. --ETA-- I've made these as a dump recipe, and they worked great! I pour all the ingredients into a freezer bag, and when I wanted to cook them, I let them thaw overnight in the fridge. NOTE-- When you marinate them in a zippered bag, you only need half of the sauce to cover all the pork.

  • Combine teriyaki, soy sauce, and garlic in a large zipped bag or casserole dish.

  • Fry the pork steaks over medium heat, with enough oil covering the bottom of the pan for 5-7 minutes per side (add more time for thicker cuts of pork).
  • OR You can broil the steaks in a 350°F oven for about 45 minutes, turning once after 20 minutes (depending upon thickness).

GRILLED FILET MIGNON IN A TANGY ASIAN MARINADE

GRILLED FILET MIGNON IN A TANGY ASIAN MARINADE image

Categories     Beef     Grill/Barbecue

Yield Serves 1 person per cut of Filet.

Number Of Ingredients 6

1 Filet Mignon per person*
1 1/2 tablespoons crushed garlic
3 tablespoons soy sauce
3 tablespoons Dijon mustard
1 cup high quality olive oil
This marinade will easily accommodate 6 steaks

Steps:

  • In a large mixing bowl add the garlic, soy and mustard. Whisking constantly and briskly, slowly pour in the olive oil. The oil will be incorporated by the soy-mustard-garlic mix and will form a thick light brown paste that will not separate afterwards. Do not add the oil faster than it can be incorporated by the soy-mustard mix. Only use enough oil to create the volume of marinade needed for your steaks (generally between 2/3 cup and 1 cup oil). Add the Filets to the bowl of marinade, covering them thoroughly. Cover and let sit from one to three hours (longer for more flavor) in the refrigerator. Take the bowl out of the refrigerator 1 hour prior to cooking to allow the meat to warm slightly before cooking. Preheat a covered BBQ grill to a fairly hot temperature. Place the Filets, still covered in marinade on the grill. Cover, and turn occasionally (basting with marinade each time) to your preferences of doneness - approximately 4 to 6 minutes per side depending on thickness. Remove from heat and let the meat rest 5 to 7 minutes in a serving pan (meat will continue cooking while resting; resting is important to allow the juices in the steak to expand from the center and infuse the entire cut). Drizzle accumulated pan juices on each Filet when serving. Serve with your choice of side dishes (some suggestions include corn salad, grilled corn on the cob, roasted new potatoes, and crusty French bread).

Asian marinade recipes are an essential part of Asian cuisine. They are often used to add flavor and tenderness to meats, poultry, and tofu, ensuring they are delicious and tender. Marinades are also used to infuse flavors into vegetables and seafood, creating a burst of flavor in every bite. These recipes have become popular worldwide due to their unique blend of ingredients and ability to transform bland dishes into flavorful and yummy meals.

Ingredients

The ingredients used in Asian marinade recipes vary depending on the region and the dish being prepared. However, it is common to find soy sauce, rice vinegar, honey or sugar, and sesame oil in many marinade recipes. Garlic, ginger, and green onions are also popular ingredients used for their aromatic properties. Other ingredients may include chili pepper, lemongrass, coconut milk, hoisin sauce, and fish sauce. Each ingredient serves a specific purpose, from adding flavor to creating that sought-after umami taste.

Importance of Marinating

Marinades play a crucial role in Asian cuisine. They help to tenderize meats and poultry, making them easy to chew and digest. The acidic properties of marinades also help to break down proteins in the meat, making them more tender. Marinade recipes that use yogurt, papaya juice, or kiwi fruit help to tenderize meat even further by breaking down enzymes. Marinating also helps to add extra flavors to the meat, ensuring that every bite tastes great.

Types of Asian Marinades

Asian marinade recipes vary from region to region. Some popular recipes include teriyaki, which is a sweet and savory sauce made with soy sauce, sugar, mirin, and sake. Bulgogi is another popular Korean marinade made from soy sauce, sugar, sesame oil, garlic, and pear juice. Satay is a Thai marinade that is used to flavor chicken or beef skewers. It consists of lemongrass, chili, and peanut butter and is often served with a sweet and sour dipping sauce.
Chinese Marinades
Chinese marinades often use soy sauce, rice vinegar, and Chinese five-spice powder. Five-spice powder is a blend of cinnamon, fennel, cloves, star anise, and Szechuan pepper. Hoisin sauce, oyster sauce, and sesame oil are also commonly used in Chinese marinades.
Japanese Marinades
Japanese marinades often use sake, mirin, soy sauce, and sugar. Ponzu sauce, a tangy sauce made from citrus juice and soy sauce, is also commonly used in Japanese marinades. Miso is another popular ingredient used in Japanese marinades for its rich and savory flavor.
Korean Marinades
Korean marinades often use gochujang, which is a spicy condiment made from red chili peppers, soybeans, and rice. Soy sauce, sugar, and sesame oil are also commonly used in Korean marinades. Korean marinades are often used for bulgogi, which is a popular Korean barbecue dish.
Southeast Asian Marinades
Southeast Asian marinades often use coconut milk, lemongrass, ginger, and chili peppers. Fish sauce and lime juice are also commonly used in Southeast Asian marinades. Satay sauce, a peanut sauce used for dipping or marinating, is a popular marinade used in Southeast Asian cuisine.

Conclusion

Asian marinade recipes are incredibly versatile and can be used to flavor different meats, poultry, tofu, and vegetables. They are simple to make, and the marinade ingredients can often be found in most Asian grocery stores or online. These recipes provide an easy and affordable way to add flavor to your meals and are a must-try for anyone looking to explore Asian cuisine. So next time you're planning a meal, why not try an Asian marinade recipe and add a delicious twist to your cuisine?
Asian marinades are a mixture of herbs and spices that are used to flavor meat, vegetables, and even tofu. These marinades are often made with a combination of sweet, sour, salty, and spicy flavors to create a complex and delicious taste profile. If you're looking to make your own Asian marinades, there are a few important tips to keep in mind. 1. Start with high-quality ingredients The first step in making any great marinade is to start with the best possible ingredients. This means using fresh herbs and spices, high-quality oils, and fresh citrus or vinegar. When you're making an Asian marinade, look for ingredients like soy sauce, ginger, garlic, lemongrass, and cilantro. These ingredients are staples in many Asian cuisines and will give your marinade an authentic taste. 2. Balance your flavors One of the keys to a successful Asian marinade is balancing your flavors. You want to create a mixture that is both sweet and sour, salty and spicy. Start by balancing your acid and sweetness, then add in your salt and finally your spice. Taste as you go and adjust the flavors as needed. Keep in mind that many Asian cuisines emphasize umami, the savory taste present in ingredients like soy sauce and fish sauce. 3. Don't be afraid to experiment While it's important to follow a basic recipe when making an Asian marinade, don't be afraid to experiment with different flavors and ingredients. You might try adding a little bit of honey to your marinade for extra sweetness, or experimenting with different spices like turmeric or cumin. The key is to taste as you go and adjust the flavors as necessary. 4. Let your meat marinate overnight When you're making an Asian marinade, it's important to let your meat marinate for at least a few hours (preferably overnight) in order for the flavors to permeate the meat. This is especially important for tougher cuts of meat like beef or pork. When you're ready to cook your meat, be sure to drain off any excess marinade and pat your meat dry before cooking. 5. Use your marinade as a sauce Once your meat is cooked, don't let your marinade go to waste! You can use it as a sauce for your meat, vegetables, or rice. Bring the marinade to a boil in a saucepan and let it cook for a few minutes until it thickens. This will create a rich and flavorful sauce that can be poured over your dish. 6. Use a variety of meats and vegetables Asian marinades can be used on a variety of meats and vegetables, so don't be afraid to experiment. Try marinating chicken or shrimp for a stir-fry, or marinating tofu for a vegetarian option. You can also use your marinade to flavor vegetables like bell peppers, onion, or zucchini. 7. Don't over-marinate While it's important to let your meat marinate for a few hours (preferably overnight), it's also important not to over-marinate. If you leave your meat in the marinade for too long, the acid in the marinade can break down the proteins in the meat and make it tough. Four to five hours is usually enough time for most types of meat. 8. Keep your marinade refrigerated Once you've made your marinade, be sure to keep it refrigerated until you're ready to use it. This will prevent it from spoiling and keep it fresh for longer. If you're using the marinade for a long period of time, you may need to store it in the freezer instead. 9. Use a sealable plastic bag When you're marinating your meat, it's best to use a sealable plastic bag. This will ensure that the meat is evenly coated with the marinade and will prevent any leaks or spills. You can also use a shallow dish, but be sure to turn the meat occasionally to ensure that it's evenly coated. 10. Use the right type of oil When you're making an Asian marinade, it's important to use the right type of oil. Many Asian cuisines use peanut oil, sesame oil, or coconut oil, which all have a distinct flavor that can enhance your marinade. Avoid using vegetable oil or canola oil, which are more neutral in flavor. Overall, making Asian marinades is a fun and easy way to add flavor to your dishes. With these tips in mind, you'll be able to create a delicious and authentic marinade that will take your cooking to the next level.
