Yield Makes 6 (first course) servings

Number Of Ingredients 17

1/4 cup Asian fish sauce*
1/4 cup fresh lime juice
1 teaspoon sugar
1 jalapeño chile, sliced into thin rings
1/3 cup soy sauce
1/4 cup unseasoned rice wine vinegar
1 tablespoon fresh ginger, peeled and minced
1 tablespoon fresh cilantro, chopped
2 tablespoons whole coriander seeds
1 1/2 pounds colossal (under 12 per pound; about 18), or jumbo (16 to 20 per pound; about 24 to 30) shrimp, peeled with tails left intact, deveined
9 scallions, white and light-green parts only, cut into 1-inch pieces
2 tablespoons vegetable oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly coarse-ground black pepper
*Called nuoc mam or nam pla; available at Asian markets and in the Asian foods section of some supermarkets.
Special Equipment
about 10 (8-inch) wooden skewers, soaked in water 30 minutes

Steps:

  • In small bowl, stir together fish sauce, lime juice, and sugar. Mix well to dissolve sugar, then stir in jalapeño rings. Set aside.
  • In small bowl, stir together soy sauce, vinegar, ginger, and cilantro. Set aside.
  • Prepare grill for cooking: If using charcoal grill, open vents on bottom, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 4 to 5 seconds. If using gas grill, preheat burners on high with hood closed 10 minutes, then turn down to moderately high.
  • Using electric spice grinder, pulse coriander seeds 2 to 3 times to crack. (Alternatively, place seeds on cutting board and crush lightly with small saut pan, using gentle rocking motion.) In large bowl, combine shrimp and scallions. Drizzle with oil and toss to coat. Sprinkle with coriander, salt, and pepper and toss to coat.
  • Thread shrimp and scallions onto skewers. Grill, turning once, until just cooked through, about 3 to 4 minutes per side. Arrange on platter and serve with dipping sauces.

SOUTHEAST ASIAN-STYLE GRILLED SHRIMP WITH AROMATIC HERBS

Southeast Asian-Style Grilled Shrimp with Aromatic Herbs image

Even more impressive than the presentation is how these grilled jumbo shrimp pack a punch. They're marinated with Asian-inspired ingredients such as sesame oil, lemongrass, hot chile pepper, curry powder, and Thai basil.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Shrimp Recipes

Number Of Ingredients 14

24 jumbo shrimp, head-on, peeled and deveined
2 tablespoons toasted sesame oil
Coarse salt and freshly ground pepper
2 tablespoons chopped fresh ginger
1 tablespoon chopped fresh garlic
1 tablespoon chopped fresh hot chile
1 tablespoon curry powder
1 tablespoon chopped fresh lemongrass
1/4 cup chopped fresh Thai basil
1/4 cup chopped fresh mint
1/4 cup chopped fresh cilantro
1/4 cup freshly squeezed lime juice
1/4 cup fish sauce
1 tablespoon sugar

Steps:

  • Preheat a grill: If using a charcoal grill, make a fire in your grill with the coals placed off to one side. When the coals are completely covered in gray ash, hold your hand about 5 inches above the grill grid; count how many seconds you can comfortably leave it there. When you can hold it there for 2 to 3 seconds, you have medium-high heat and are ready to grill. If you are using a gas grill, heat the grill for 15 minutes with the lid closed. Before beginning to cook, reduce the temperature by turning the knobs to medium-high.
  • Brush shrimp with sesame oil and season with salt and pepper. Place shrimp on grill near, but not directly over, the coals and cook, turning once, until shrimp are opaque, 3 to 4 minutes per side. Remove from heat and transfer to a large nonreactive bowl.
  • Add ginger, garlic, chile, curry powder, lemongrass, Thai basil, mint, cilantro, lime juice, fish sauce, and sugar to bowl with shrimp. Toss to combine. Serve immediately.

TOASTED SESAME SEED ASIAN GRILLED SHRIMP

Toasted sesame seed Asian grilled shrimp image

I wanted to try this out first before I made this for company coming in a couple of weeks. It really turned out good, phew...and when I make the marinade next time I'll make a lot more of it to freeze. We had this with risotto & fresh asparagus and a garden salad. These were suppose to go on the BBQ but our winds kicked up so I...

Time 1h35m

Number Of Ingredients 7

1 pound cleaned " tail on " shrimp ~ 26/30 count
½ cup sliced green onions " white and green parts "
2 & ½ tablespoons sesame seeds
1 ~ 13 ounce jar plum preserves
¼ cup soy sauce
1 cup pineapple juice from a 20 ounce can of canned pineapple chunks " not in heavy syrup " reserving the pineapple for another meal
1 teaspoon sriacha hot sauce " optional " but this really puts it over the top!

Steps:

  • 1. Place the shrimp and green onions in a large zip baggie and refrigerate.
  • 2. In a dry skillet roast/toast sesame seeds, till they are slightly toasted. You'll know they are done when you can smell them. Once you start to smell them, watch them carefully as they will burn in a nano second.
  • 3. Remove the pan off the hot part of the stove and let the seeds cool in the pan.
  • 4. Once the pan has cooled add the preserves, soy sauce, pineapple juice & hot sauce simmer very slowly till it had reduced by 1/2. This should be thick at this point. How long this part will take depends on your stove, everyone's is different. I simmered mine about 20 to 25 minutes. Just make sure you stir it every 5 minutes or so. Let it cool.
  • 5. This must be very cool before you add it to the shrimp!
  • 6. In the baggie with the shrimp and green onions add ½ of the cooled marinade and seal and refrigerate for at least 1 hour. Take it out and turn it over a couple of times so all the shrimp gets marinated.
  • 7. Reserve the other ½ of the marinade for another meal.
  • 8. Before you put the shrimp on the skewers you'll want to put them into a collider and drain them off for about 5 minutes. You'll want to do this to avoid flair ups if you are grilling them.
  • 9. When you are ready to grille the shrimp, take two skewers at a time holding them side by side, and put the shrimp on them " this is the messy part " once you have them all on the skewers, grill them for about 5 minutes per side.

The Asian Grilled Shrimp recipes are some of the most delicious and flavourful dishes out there. The shrimp is grilled to tender perfection and seasoned with a range of Asian-inspired spices and sauces, resulting in a dish that is bursting with flavour. But, making a perfect Asian Grilled Shrimp recipe is not always easy. There are a few things that you need to get right in order to achieve that perfect balance of flavour and texture. In this article, we will share some valuable tips that can help you create the perfect Asian Grilled Shrimp recipe. 1. Choosing the Right Shrimp Choosing the right shrimp is crucial for the success of any seafood recipe. When it comes to Asian Grilled Shrimp, you want to go for large, fresh, and raw shrimp that are deveined and peeled. Avoid frozen shrimp as they tend to be less flavourful and have a rubbery texture. 2. Marinating the Shrimp Marinating the shrimp is essential as it infuses the shrimp with flavours and tenderizes the meat. A good marinade will make the shrimp succulent and juicy. When making the marinade, use a combination of Asian-inspired ingredients such as soy sauce, ginger, garlic, lemongrass, and sesame oil. 3. Properly Seasoning the Shrimp Seasoning the shrimp is another important step in achieving a flavourful dish. Different recipes may require different spices, but a common addition is salt, pepper and paprika. The seasoning should be added sparingly to avoid overpowering the natural flavour of the shrimp. 4. Grilling the Shrimp Grilling the shrimp requires some skill and patience. It is important to preheat the grill to high heat for about 10 minutes before placing the shrimp on the grill. It would be best if you also sprayed or wiped vegetable oil on your grill grates to prevent the shrimp from sticking. When grilling the shrimp, avoid overcooking them as they can become tough and rubbery. It is, therefore, crucial to watch the shrimp closely and turn them as needed. Most grill shrimp recipes only need about 2-3 minutes per side of grilling. 5. Using Skewers Using skewers is a great way to keep the shrimp in place when grilling. The skewers also make it easy to flip the shrimp over without them falling through the grate. When using wooden skewers, it is important to soak them in water for about 30 minutes before using them to avoid them burning on the grill. 6. Experiment with Different Sauces Asian Grilled Shrimp recipes can be made with a variety of sauces, from sweet and sour to spicy and savory. While some recipes may call for a specific sauce, feel free to experiment with different sauces to discover your own favourite flavour combinations. A good example is honey soy sauce or teriyaki sauce. 7. Garnishing the Shrimp Finally, the presentation of your dish is just as important as the flavours. Garnish your dish with fresh herbs such as cilantro or basil, and sliced lemons or limes. You can also add some toasted sesame seeds or chopped peanuts to add texture to your dish. In conclusion, mastering the art of making Asian Grilled Shrimp recipes requires some effort and attention to detail. However, by following the tips outlined above, you can achieve that delicious and flavourful dish that you have always desired. Remember to experiment with different ingredients, sauces, and garnishes to discover your own unique twist on this classic dish.
