ASIAN CHICKEN SALAD WITH ORANGE-GINGER DRESSING
This Asian inspired salad makes for a lovely luncheon or supper. The contents of the salad can easily be adjusted to whatever you like or have on hand. If you prefer a vegetarian meal, omit the chicken or use tofu instead. Won't be chicken salad but will still be delicious.

Steps:
- Using a blender or food processor, blend all of the dressing ingredients (yogurt, orange juice, ginger, salt, sugar, orange peel, cayenne and cinnamon) until smooth and creamy. Refrigerate until ready to use.
- To assemble salads, place lettuce into large serving bowl or onto 4 serving plates. Toss together remaining ingredients except almonds on top of lettuce.
- Drizzle 1/2 of dressing on salad, reserving remaining portion so that guests can adjust amount to taste.
- Garnish with sliced almonds (optional).

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Mix duck fat, scallions, ginger, and salt together in a bowl.
- Place chicken in a baking dish. Add 1 tablespoon ginger pesto under the skin of each chicken breast; massage to spread evenly. Coat chicken with remaining pesto and season with additional salt.
- Roast in the preheated oven until chicken breasts are no longer pink in the center and juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center of a breast should read at least 165 degrees F (74 degrees C). Let rest for 5 to 10 minutes.

ASIAN CHICKEN MEATBALLS IN A GINGER MISO BROTH

Steps:
- Add all ingredients for meatballs together but only use two tablespoons of scallions reserve the rest for broth. roll into balls. Set aside
- Add all ingredients for broth together except for cilantro and lime. Bring to a boil. Reduce to a simmer and add meatballs a few at a time and poach until done removing them with a slotted spoon and repeat until all meatballs are done.
- Serve by placing meatballs in bowl pour broth over top, sprinkle with cilantro and a squeeze of lime juice.
ASIAN GINGER CHICKEN THIGHS
Steps:
- Preheat oven to 375 degrees F. Poke chicken thighs with a fork all over. Place in resealable plastic bag. Add 1/3 cup Kraft Asian dressing. Place in refrigerator to marinate at least one hour.
- Line baking pan with tin foil. Place marinated thighs on baking sheet. (Dispose of marinade in bag.) Season with ginger powder. Drizzle with sesame oil. Bake for 50 minutes until golden brown.
- Remove chicken from baking pan and place in a large bowl. Pour pan drippings over thighs and add green onions. Serve with brown rice for a delicious, quick and easy meal!

ASIAN GINGER CHICKEN SKEWERS
I like this recipe because it came straight out of my head one day when I was bored and wanted something different. This goes great with fried rice either from the frozen food department or a homemade version and some snow peas with soy sauce or the asian chili sauce on the side.

- Thaw Chicken
- Combine all ingredients except Chicken in a small pot, bring to a boil and then let cool.
- Cut Chicken into chunks and put on skewers and place in ziplock bag with sauce.
- Let the chicken marinade for 25 minutes.

This is one of my favorite and first recipes I learned from my mom. I marinate the chicken over night and back on reynolds wrap with the skin side up for 45 minutes until the skin is brown and crisp. I use the chicken renderings to season my rice and serve with a crunchy asian cucumber salad.
