- For the salad, combine all of the ingredients in a large bowl and toss to combine. If serving right away, drizzle the peanut dressing over top and toss; otherwise, serve the dressing on the side so the salad doesn't get soggy.

Steps:
- Roasted or rotisserie chicken takes on a new dimension in the quick salad. Adding ginger and soy sauce to a bottled oil and vinegar dressing gives it an Asian flavor. A mixture of baby or very young greens is called mesclun or sometimes field greens.
- Place chicken pieces, water chestnuts and scallions in a large bowl. Mix dressing, soy sauce, and ginger together and pour over the chicken. Toss well. Divide mesclun between 2 plates and spoon chicken salad on top.

Asian crunchy peanut chicken salad is a popular dish that's loved by many. This healthy and delicious meal is perfect for lunch or dinner and can even be served as an appetizer. The combination of the crunchy vegetables, tender chicken, and flavorful peanut sauce makes this dish a must-try. Here are some valuable tips that will help you achieve the perfect Asian crunchy peanut chicken salad:
1. Use Fresh Ingredients
The first tip to making a good Asian crunchy peanut chicken salad is to use fresh ingredients. This means using fresh vegetables, chicken, and herbs. Using fresh ingredients will enhance the flavor of your salad and make it taste better. It's essential to shop for your ingredients a day before you plan to make your salad to ensure that your ingredients are fresh and have not lost their flavor.
2. Don't Overcook the Chicken
When making an Asian crunchy peanut chicken salad, it's important not to overcook the chicken. Overcooking the chicken can make it dry and tough, which will negatively impact the texture of your salad. Cook the chicken on medium heat until it's cooked through but still juicy. Chunks of tender chicken will be perfect for your salad.
3. Use Crunchy Vegetables
The vegetables that you choose for your salad should be crunchy to create a crispy texture that contrasts well with the tender chicken. Carrots, cabbage, bell pepper, and cucumbers are popular choices that are crunchy and have a high nutritional value. You can also add other crunchy vegetables of your choice to make the salad more interesting.
4. Use a Variety of Colors
Using a variety of colors when making your salad is crucial for creating an appealing dish. The more colorful the ingredients, the more attractive the salad will look. Adding a variety of colors also ensures that your salad has a varied nutritional value. You can achieve this by combining green, red, yellow, and orange vegetables to create a vibrant plate.
5. Add Nuts for Extra Crunch
If you want your Asian crunchy peanut chicken salad to have extra crunch, adding nuts is the way to do it. Peanuts are the most popular choice to add crunch to your salad. Other nuts like almonds or cashew nuts can also be used for a different flavor. Ensure that the nuts you use are unsalted and roasted for extra flavor.
6. Make Your Own Peanut Sauce
The peanut sauce is the highlight of any Asian crunchy peanut chicken salad. Making it from scratch is the best way to ensure that it's flavorful and tastes good. Peanut butter is the main ingredient in making the sauce. Mix it with soy sauce, honey, rice vinegar, sesame oil, garlic, and red pepper flakes to create an appetizing sauce. Adjust the amount of each ingredient according to your taste preference.
7. Make a Dressing
After making the peanut sauce, you can make a dressing for your salad. Dressing adds flavor and moisture to the ingredients. Lime juice, rice vinegar, and soy sauce are popular ingredients for making a dressing for an Asian crunchy peanut chicken salad. Make sure to taste it and adjust the amount to suit your taste.
8. Prepare Your Ingredients Ahead of Time
The preparation process is crucial when making an Asian crunchy peanut chicken salad. Preparing your ingredients ahead of time saves time and ensures that nothing gets left out. Chop your vegetables, slice your chicken or tofu, and prepare your peanut sauce and dressing, if possible, a day before making the salad. This will also give you enough time to ensure that you have all the ingredients needed for the recipe.
9. Consider Serving Temperature
Serving temperature is another essential aspect to consider when making an Asian crunchy peanut chicken salad. This salad should be served chilled or at room temperature. Serving it hot can ruin its texture and taste. Allow the salad to cool down in the fridge before serving it or serve immediately at room temperature.
10. Use Leftover Ingredients
An Asian crunchy peanut chicken salad is a great meal to make when you have leftover ingredients in your fridge. Use leftover roasted chicken, vegetables, or nuts to make a unique and tasty salad. This will not only save you money but also time and effort.
Conclusion
In conclusion, making an Asian crunchy peanut chicken salad is an excellent way to enjoy a healthy and delicious meal. Using fresh ingredients, preparing ahead of time, and making your peanut sauce and dressing are critical in achieving the best results. Consider adding extra nuts or veggies for a crunchy sensation and using a variety of colors to create an aesthetically pleasing dish. By following these tips, you'll have a tasty and nutritious meal that everyone will love.
