1/2 cup sliced green onions
1/3 cup chopped cilantro
1/3 cup natural creamy peanut butter
2 Tbsp fresh lime juice
1 1/2 Tbsp rice vinegar
1 1/2 Tbsp soy sauce
2 Tbsp honey
1 1/2 Tbsp packed brown sugar
1 1/2 tsp sesame oil
1 tsp sriracha
2 tsp peeled and finely minced ginger
1 large clove garlic (, finely minced)

Steps:

  • Add all salad ingredients to a a medium salad bowl and toss. In a mixing bowl whisk together all dressing ingredients until well combined (if needed you can season with a little salt).

Sesame Oil- 1 tablespoon.
Ground Ginger- 1 teaspoon
Cilantro- 1/3 cup chopped.
Optional- seeds such as chia or sesame

4 cups prepared shredded coleslaw
2 cups prepared shredded carrots
1 red bell pepper, thinly sliced into bite-sized pieces
1 cup cooked and shelled edamame
2 medium scallions, finely sliced
½ cup chopped salted peanuts (or you can leave them whole)
½ cup loosely packed chopped fresh cilantro
