Yield 4 servings

Number Of Ingredients 21

1 cup mayonnaise
1 to 2 tablespoons chili sauce, such as Sriracha
1 tablespoon bruised and finely minced lemongrass
Zest and juice of 1 lime
Kosher salt and freshly ground pepper
1 1/2 pounds ground chicken, half dark and half white meat
2 tablespoons hoisin sauce
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
4 cloves garlic, minced
4 scallions, green and white parts minced
Kosher salt and freshly ground pepper
4 sesame-seed hamburger buns, halved and buttered
Pickled Asian Slaw, for serving, recipe follows
1/4 cup rice wine vinegar
2 tablespoons toasted sesame oil
2 cloves garlic, minced
Kosher salt and cracked black pepper
2 tablespoons thinly sliced pickled ginger
1/4 small head napa cabbage, finely shredded (about 3 cups)
1/4 red bell pepper, thinly sliced

Steps:

  • For the spicy lemongrass mayo: Mix together the mayonnaise, chili sauce, lime zest and juice and lemongrass in a small bowl. Season with salt and pepper and set aside. For the Asian chicken burger: Combine the chicken, hoisin, sesame oil, soy sauce, garlic and scallions in a large bowl. Mix together and form into 4 equal patties about 1/2-inch thick and 4 inches wide. This patty will be a bit wetter than your average patty because of the sauces and flavor in there. Sprinkle each side of the patties generously with salt and pepper. Create a small well in the center of each patty, using your thumb. Cook your patties on the griddle over medium heat until golden brown on each side and 160 degrees F, 4 to 5 minutes per side. Because of the sugar content in these patties, they can burn easily so watch your heat. Let rest 5 minutes. Place your buns on the griddle and toast them. For assembling: Place some of the spicy lemongrass mayo on each side of the buns. Add the chicken patties and top with the Pickled Asian Slaw. Finish with the top bun and serve with additional slaw and mayo on the side.
  • Add the rice wine vinegar to a mixing bowl and whisk in the sesame oil and garlic. Season with salt and pepper. Add the ginger, cabbage and peppers and toss to coat with the dressing. Adjust the seasoning and let sit 20 minutes to let the flavors meld together before serving. Yield: 2 cups.

Valuable Tips for Making an Asian Chicken Burger with Spicy Lemongrass Mayo and Pickled Slaw Burgers are a classic and beloved American dish that has become popular all over the world. Different cultures have added their own unique twists to the burger, creating a diverse range of flavor combinations. One such variation is the Asian chicken burger with spicy lemongrass mayo and pickled slaw. This burger has a bold and complex flavor profile that is sure to delight anyone who loves spicy and tangy flavors. Here are some valuable tips for making this delicious burger. Tip #1: Choose the Right Cut of Chicken The star of the Asian chicken burger is, of course, the chicken patty. The choice of chicken cut can make or break the burger. It's important to select the right cut for both flavor and texture. Chicken breast is a popular choice for burgers because it is lean and cooks quickly. However, it can be dry and tough if not cooked properly. Chicken thighs, on the other hand, are more flavorful and tender because they have more fat. They are also forgiving and don't dry out as easily. Ideally, you want to use boneless skinless chicken thighs for this burger. Tip #2: Seasoning the Chicken Patty In order to make a flavorful chicken patty, it's essential to season it well. A basic seasoning of salt and pepper is a must, but you can add more spices and herbs to elevate the flavor. A blend of Asian spices such as ginger, garlic, and lemongrass would be ideal for this burger. You can also add some chili flakes or cayenne pepper to make it spicy. It's important to mix the spices and herbs with the ground chicken thoroughly so that the flavor is evenly distributed. Tip #3: Forming the Chicken Patty The way you form the chicken patty can affect its texture and shape. It's essential to handle the ground chicken carefully and not overwork it. Overworking the meat can result in a tough and rubbery patty. To form the patty, take a golf ball-sized portion of the chicken mixture and gently press it into a round shape with your palms. Make sure the patty is even in thickness, so it cooks evenly. You can also create a slight indentation in the center of the patty to prevent it from puffing up during cooking. Tip #4: Cooking the Chicken Patty Cooking the chicken patty properly is crucial to achieving a juicy and tender texture. You can either grill, bake, or pan-fry the patty. Grilling is the best option for a smoky flavor and charred crust. Baking is a healthier option and ensures that the patty is fully cooked through. Pan-frying is the quickest and easiest method, but it can result in a greasy finish. Whichever method you choose, make sure the patty is cooked to an internal temperature of 165°F, to ensure that it's fully cooked and safe to eat. Tip #5: Making the Spicy Lemongrass Mayo The spicy lemongrass mayo is the perfect condiment to add some heat and tang to the Asian chicken burger. It's easy to make and requires only a few ingredients. The key ingredient is lemongrass, which adds a bright and citrusy flavor. You can either use fresh or dried lemongrass. To make the mayo, combine mayonnaise, finely chopped lemongrass, minced garlic, chili flakes, and lime juice in a bowl. Mix well and adjust the seasoning to your liking. You can make the mayo in advance and store it in the fridge until ready to use. Tip #6: Preparing the Pickled Slaw The pickled slaw is a refreshing and crunchy topping that complements the spicy lemongrass mayo and chicken patty. It's made by pickling thinly sliced vegetables such as cabbage, carrots, and cucumbers in a sweet and sour brine. You can use a basic pickling solution of water, vinegar, sugar, and salt. You can also add some spices and herbs to the brine to enhance the flavor. The slaw needs to be made in advance to allow the vegetables to pickle and soften. It's best to store the slaw in the fridge until ready to use. Tip #7: Assembling the Burger Assembling the Asian chicken burger is the final step in creating the perfect burger. To assemble, start with the bottom bun, spread a generous amount of the spicy lemongrass mayo, add the chicken patty, top it with the pickled slaw, and finish it off with the top bun. You can add some additional toppings such as sliced jalapenos, cilantro, or mint to add more flavor and texture. It's important to use a sturdy and toasted bun that can hold all the ingredients without getting soggy. Final Thoughts Making an Asian chicken burger with spicy lemongrass mayo and pickled slaw may seem daunting, but with the right tips and techniques, anyone can make it at home. The key is to select the right cut of chicken, season it well, cook it properly, and pair it with the right condiments and toppings. With these valuable tips, you can create a burger that's sure to impress your friends and family.
