- This dish must be prepared the night before you plan to bake it.
- In a large mixing bowl, beat together the eggs, salt, milk, tarragon and paprika. Add fresh ground pepper to taste. Mix the grated cheeses together in a bowl. Cut the bagels into small bite-size pieces.
- Grease a 2-quart souffle or casserole dish and, starting with the bagel pieces, place them in the dish in alternating layers with the grated cheese. Pour the egg mixture evenly over all, cover the dish, and place it in the refrigerator overnight.
- Bake it uncovered, in a pre-heated 350 degree oven for 1 hour, until the top is golden brown.

ASIAGO-PEPPER FRICO (CRISPY CHEESE WAFERS)
This is such an easy and different appetizer that can be made with a variety of cheese blends. The Asiago is especially yummy! It's from Bon Appetit magazine.

- Preheat oven to 350 degrees.
- Line 2 large baking sheets with parchment paper. Mix cheese, black pepper, and cayenne pepper in small bowl. Spoon cheese mixture by generous tablespoons in 6 mounds on each prepared baking sheet, spacing 3 inches apart. Using fingers, spread each mond evenly to 2 1/2" round.
- Bake frico until deep golden brown and crisp, about 12 minutes. Remove from oven. Slide parchment with frico onto ork surface and cool 5 minutes. Slide thin metal spatula under frico to loosen. Cool frico completely on parchment.
- Can be prepared 1 day ahead. Store in airtight container in single layer at room remperature.

Mild, slightly tangy Wisconsin Asiago is a cheese of excellent quality, and it adds special flavor to this dish. The recipe is from New York restaurant, Canteen.

- Preheat the oven to 350 degrees. Butter six individual gratin dishes.
- Boil the pasta until al dente. Drain and cool.
- In a medium saucepan over moderately low heat, melt 6 Tab of the butter. Add the flour and cook, stirring, 3 minutes. Whisk in the milk and raise the heat to high. When the milk begins to boil, reduce the heat to medium and cook, whisking occasionally, until thickened. Be careful that the milk doesn't burn. Add the mustard, cayenne, Tabasco, and Worcestershire and season with salt and pepper.
- In a large bowl, toss together the pasta, sauce, Asiago, Cheddar, 1 cup of the parmigiano-reggiano, the parsley, and chives. Spoon into the buttered gratin dishes. Mix together the bread crumbs and the remaining parmigiano-reggiano and sprinkle over the pasta. Dot lightly with the remaining butter and bake on the middle shelf until the crumbs are lightly browned and the sauce is bubbling, 25 to 30 minutes.
