Choose the Right Arugula The first step in making an excellent arugula salad with oranges and caramelized fennel is to choose the right arugula. Arugula is a leafy green that has a peppery flavor, and it is an essential ingredient in this salad. When buying arugula, choose the freshest leaves available. Fresh arugula has a bright green color, and the leaves are crisp and firm. Avoid wilted or yellow leaves. You should also check the expiration date to ensure that the arugula is still fresh. 2.
