1 red onion, sliced
3 cups arugula, washed, dried and coarsely chopped
Salt
Freshly ground black pepper
4 whole-wheat tortillas, 6-inches in diameter
2 ounces reduced-fat goat cheese

1 medium red onion, cut in half and sliced thinly
4 cups baby arugula
salt and pepper, to taste
4 whole wheat tortillas (or 2 of the larger ones)
