THE BEST STUFFED ARTICHOKES

The Best Stuffed Artichokes image

Stuffed artichokes were the "something special" on the table at all of my holiday gatherings and special occasions growing up. My grandmother would make them, and now the tradition has been passed on to the rest of the family. We would "fight" over the artichoke heart at the end. The filling is like a very moist dressing/stuffing you would have at Thanksgiving, but amped up with lots of garlic and cheese. The bottom of the artichoke leaves are tender and meaty with a subtle earthy, artichoke flavor. I like to dip the heart in a lemony mayo or butter at the end. Serve as a family-style appetizer or as part of a meal alongside a salad and grilled chicken.

Time 1h35m

Yield 8

Number Of Ingredients 10

4 large whole artichokes
1 lemon
1 ½ cups plain dry bread crumbs
1 cup grated Parmesan cheese
3 tablespoons chopped fresh parsley, plus more for garnish
6 cloves garlic, minced
4 teaspoons kosher salt, divided
1 teaspoon ground black pepper
½ cup olive oil
2 ½ cups water

Steps:

  • Cut top 1/4 of an artichoke off and discard. Trim off the top 1/2 inch from remaining leaves. Cut off bottom inch from stalk to create a flat bottom. Turn artichoke upside down and bang on surface to loosen the leaves. Zest 3/4 teaspoon of lemon zest from the lemon and set aside. Cut lemon in half and rub cut leaves and stem of artichoke with lemon. Repeat artichoke prep with remaining artichokes.
  • Combine reserved lemon zest with bread crumbs, Parmesan cheese, parsley, garlic, 2 teaspoons salt, and pepper in a medium bowl and stir well.
  • Sprinkle bread crumb mixture evenly into all the artichoke leaves, avoiding the thistle leaves in the direct center. Work mixture evenly into each crevice of each artichoke until all of the mixture is used.
  • Pour water in the bottom of a Dutch oven. Add remaining 2 teaspoons salt. Set artichokes in the pot so that they are touching, so that they may remain upright during cooking. Bring to a boil and reduce to a simmer. Cover and cook until the leaves release very easily, about 1 hour.
  • Let stand for 10 to 15 minutes before serving. Sprinkle with more parsley if desired. Serve warm or room temperature.

THE ULTIMATE STUFFED ARTICHOKE RECIPE

The Ultimate Stuffed Artichoke Recipe image

This Ultimate Stuffed Artichoke Recipe is packed with incredible, aromatic flavors and is out of this world. Serve it for a scrumptious vegetarian first or main course. And it's great for sharing too!*Serves about 6 as a starter, & 2 to 4 as a main course.

Provided by Valentina K. Wein

Categories     Appetizer

Time 1h35m

Number Of Ingredients 10

2 (approximately 1-pound) artichokes, (washed and dried (Lyons if possible))
juice of 3 lemons, (divided (about 1/2 cup))
½ cup plus 3 tablespoons unsalted butter
6 tablespoons shallots, (finely chopped )
3 tablespoons garlic, (minced)
⅓ cup dry white wine
3¼ cups fresh breadcrumbs
⅓ cup Italian parsley, (washed and dried, finely chopped)
2 tablespoons Parmesan cheese, (finely grated)
sea salt and freshly ground black pepper

Steps:

  • Fill a steamer pot with a few inches of water, and place a steamer basket on top. Cover the pot and bring the water to a boil. Turn the heat to low and let it simmer.
  • Use a Chef's knife to cut off about 1-inch from the top of each artichoke, and enough off of the bottom to form a nice base. Remove any especially tough outer leaves and discard them. Then use kitchen scissors to cut off the sharp tips of the leaves.
  • Using your hands, carefully pull the leaves away from the middle of the artichoke -- just enough so that you can see down to the choke. Now use a spoon to reach down and gently scrape away and discard all of the fuzz, to reveal a clean heart. (See above image.) This will take a bit of muscle, but must be done. Drizzle about 1 tablespoon of the lemon juice inside and over each one.
  • Place the artichokes, stem-end up, in the steamer basket, cover, and steam until they are almost tender, about 35 minutes. (They'll finish cooking in the oven.) Check for doneness by pulling off an outer leaf - it should come off fairly easily. Set them aside to cool.
  • While the artichokes are steaming, preheat the oven to 375°F.
  • Melt the butter in a large sauté pan over low-medium heat. Let it simmer until it begins to brown, about 3 minutes. Add the shallots and garlic and cook until soft, about 3 minutes. Pour in about ⅓ cup of lemon juice and the wine. Stir and let this simmer on low heat for about 4 minutes. Add the bread crumbs and parsley, stir to blend and remove from the heat. Season to taste with salt and pepper (here's how), and set aside to cool.
  • Place the artichokes, sitting on their bases, in a baking dish.
  • Use a spoon and/or your hands to carefully fill the center of each artichoke with the stuffing -- fill it to maximum capacity! (If you think there's too much stuffing, don't worry just pack it in.) Then fill all of the spaces between the leaves as much as possible. Sprinkle the top of each one with 1 tablespoon of the Parmesan.
  • Place the stuffed artichokes in the preheated 375°F oven and bake until the breadcrumbs are golden and the cheese has melted, 15 to 20 minutes.
  • I like serving these whole for sharing.

ROASTED ARTICHOKES WITH PARMESAN BREADCRUMBS

Roasted Artichokes with Parmesan Breadcrumbs image

Artichokes were one of those vegetables that really intimidated me. They just seemed so hard to prepare. But, once you get the hang of it, it's really easy. I like to serve mine with a lemon-garlic aioli for dipping.

Provided by Kardea Brown

Categories     side-dish

Time 45m

Yield 4 servings

Number Of Ingredients 13

2 lemons
2 medium artichokes
Nonstick cooking spray, for the baking dish
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1/2 cup panko breadcrumbs
Zest of 1 lemon
2 tablespoons shredded Parmesan
1 tablespoon chopped fresh parsley
1 cup mayonnaise
2 tablespoons lemon juice
2 cloves garlic, minced
Kosher salt and freshly ground black pepper

Steps:

  • For the artichokes: Preheat the oven to 475 degrees F. Cut the lemons in half and squeeze the juice into a bowl. Add water.
  • Trim the top 1 inch off the tops of the artichokes. Use kitchen shears to trim the pointy edges off the leaves. Trim the ends of the artichokes. Cut the artichokes in half through the centers. Use a spoon to scoop out the fuzzy chokes and the purple leaves. Place the artichokes in the lemon water as you work to prevent them from browning.
  • Shake off the water from the artichokes and place, cut-sides down, in a small baking dish coated with cooking spray. Drizzle with 2 tablespoons olive oil and sprinkle with salt and pepper. Bake until the artichokes are tender, 25 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet. Add the panko and cook until toasted, about 2 minutes. Remove to a small bowl and let stand until room temperature, about 10 minutes. Stir in the lemon zest, Parmesan and parsley.
  • Make the lemon-garlic aioli: Stir together the mayonnaise, lemon juice and garlic in a small bowl. Season with salt and pepper.
  • To serve, turn over the artichokes and sprinkle with the panko mixture, stuffing some between the leaves. Drizzle or dip with the aioli.

STUFFED ARTICHOKES WITH LEMON ZEST, ROSEMARY AND GARLIC

Stuffed Artichokes With Lemon Zest, Rosemary and Garlic image

Provided by Melissa Clark

Categories     dinner, appetizer

Time 1h30m

Yield 4 servings

Number Of Ingredients 14

1 1/2 lemons, zested, then halved
4 large globe artichokes (about 12 ounces each before trimming)
2 1/4 cups plain bread crumbs
1/3 cup grated Parmesan cheese
1/3 cup chopped fresh parsley, plus 4 whole sprigs
1 tablespoon finely chopped fresh rosemary
8 garlic cloves, smashed and peeled
2 carrots, peeled
1 1/2 tablespoons chopped capers
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1 small onion, thinly sliced
1/3 cup extra virgin olive oil, for drizzling
1/2 cup dry white wine

Steps:

  • Heat oven to 400 degrees. Fill a large bowl with water and squeeze juice from two lemon halves into water. Cut off artichoke stems, peel them with a vegetable peeler, rub them all over with remaining lemon half (this prevents browning) and drop them into water.
  • Use a heavy, sharp knife to cut top 1 1/2 inches off an artichoke. Pull out pale inner leaves from center. At the bottom, where leaves were, is a furry bed, the choke. Use a spoon (a grapefruit spoon works wonderfully) to scoop out choke. Next, using kitchen shears or a pair of scissors, trim pointy ends from outer leaves of artichoke. As you work, rub lemon half over cut parts of artichoke. When you are finished trimming, drop artichoke into bowl of lemon water. Repeat with remaining artichokes.
  • To prepare stuffing, in a large bowl combine lemon zest, bread crumbs, Parmesan, chopped parsley and rosemary. Mince 6 garlic cloves and add to bowl. Finely chop one carrot and add to bowl along with capers, 1 teaspoon salt and 1/4 teaspoon pepper. Toss.
  • In a small roasting pan or baking pan large enough to hold artichokes, scatter onion slices. Add reserved artichoke stems, 4 sprigs parsley and remaining garlic cloves. Slice remaining carrot into rounds and add to pan.
  • Holding artichokes over stuffing bowl, stuff choke cavity and in between the leaves with bread crumb mixture. Stand stuffed artichokes upright in pan and generously drizzle olive oil over center of each artichoke.
  • Fill pan with water until it reaches 1/4 way up the artichokes. Add wine and remaining salt and pepper to water. Cover pan with foil and poke several holes in foil. Bake artichokes for about 1 1/2 hours, or until tender; when done, a knife should be easily inserted into artichoke and a leaf should be easily pulled out.

Number Of Ingredients 9

2 lemons
4 medium artichokes

1/3 cup freshly grated Pecorino Romano cheese
6 tablespoons extra-virgin olive oil
2 to 3 tablespoons coarsely chopped fresh flat-leaf parsley
2 tablespoons coarsely chopped fresh oregano
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Zest one lemon; set zest aside. Cut the lemon in half, and squeeze juice into a large bowl of water, add lemon rinds. Peel stem and place in acidulated water. Gently spread artichoke leaves away from center, revealing choke. Remove choke with a spoon and discard. Place artichoke in acidulated water. Repeat with remaining artichokes.

Place 1/2 cup water in bottom of a 9-by-9-inch baking dish. Fit artichokes into baking dish. Drizzle with remaining 2 tablespoons oil. Cover with aluminum foil. Bake until heart is soft when pierced with the tip of a knife, 30 to 40 minutes. Remove foil; bake until breadcrumbs are golden brown, about 10 minutes more. Artichokes stuffed with lemon garlic breadcrumbs are a delicious and healthy appetizer that can elevate any dinner party. This dish is not only visually stunning, but it is also packed with flavor and nutrition. Preparing stuffed artichokes may seem challenging at first, but with the right tools and ingredients, it can be a breeze. In this article, we will provide valuable tips for making the perfect artichokes stuffed with lemon garlic breadcrumbs.

Tip 1: Choosing the Right Artichokes

Selecting the right artichokes is the first and the most crucial step in preparing this dish. The ideal artichoke should look plump and heavy with tightly closed leaves. The leaves should be green without blemishes, yellowing, or signs of mold. If you press against the artichoke, it should feel firm, and you should hear a crisp sound. Do not choose an artichoke that feels soft or mushy to the touch.
Tip 1.1: Artichoke Size
Aside from appearance, the size of the artichoke also matters. For this recipe, we recommend selecting medium-sized artichokes, as they are easier to handle and cook evenly. Large artichokes may take longer to cook and can result in uneven stuffing. Smaller artichokes may be more challenging to stuff.

Tip 2: Prepping the Artichokes

After selecting the right artichokes, you need to prepare them before stuffing. This includes washing, cutting, and removing the choke. First, rinse the artichokes under cold water to remove any dirt or debris. Then, cut off the top inch of the artichoke using a sharp knife. Next, trim the tip of the leaves using kitchen scissors to get rid of any sharp edges.
Tip 2.1: Removing the Choke
Removing the choke is another crucial step in preparing the artichokes. The choke is a fibrous and inedible part of the artichoke that needs to be removed before stuffing. Using a spoon, gently scoop out the fuzzy cone in the center of the artichoke. Be careful not to remove any of the heart or the leaves. The choke removal process may take some time, but it is necessary to achieve the perfect stuffed artichoke.

Tip 3: Making the Breadcrumbs

The stuffing for the artichokes requires the perfect blend of breadcrumbs, garlic, lemon zest, and herbs. For this recipe, we recommend using fresh breadcrumbs and not the packaged variety. Fresh breadcrumbs will give you better control over the texture and ensure that the flavor permeates through the stuffing.
Tip 3.1: Toasting the Breadcrumbs
Toasting the breadcrumbs is another critical step that many people tend to overlook. Toasting the breadcrumbs can bring out their flavor and make them crispier, which, in turn, will give the stuffing more texture. Heat a skillet over medium heat and add the breadcrumbs, stirring occasionally, until they turn golden brown. You can also mix the breadcrumbs with a pinch of salt and olive oil or butter to enhance the flavor.

Tip 4: Seasoning the Stuffing

The stuffing for the artichokes needs to be flavorful, but not overpowering, to let the artichoke's natural flavor shine through. For this recipe, we recommend using a blend of garlic, lemon zest, fresh parsley, and grated Parmesan cheese to create a well-balanced stuffing.
Tip 4.1: Adding Additional Seasonings
If you want to add additional flavors, you can experiment with different herbs, such as thyme, rosemary, or basil, to match your preferences. You can also add other ingredients, such as chopped sun-dried tomatoes, olives or capers, to create a more complex, flavorful stuffing.

Tip 5: Cooking the Artichokes

The final step is cooking the stuffed artichokes. The best way to cook them is by steaming them, as it retains the artichokes' natural flavors and nutrients. Arrange the stuffed artichokes in a large pot and pour water up to the bottom of the pan. Add a clove of garlic, a slice of lemon, and a sprig of thyme to the water for added flavor. Then, cover the pot with a lid and let them simmer for about 40-45 minutes, or until the leaves are tender and easily pulled off.
Tip 5.1: Testing the Doneness of the Artichokes
To test if the artichokes are fully cooked, gently tug one of the outer leaves to see if it comes off quickly. If it does not come off quickly, then the artichokes need more time to cook. Additionally, you can test the doneness by cutting off a leaf tip with a knife and gently pulling it off using your teeth. The flesh should come off quickly and easily.

Conclusion

In conclusion, artichokes stuffed with lemon garlic breadcrumbs are a perfect appetizer that can impress any dinner party. Following the five valuable tips mentioned above, you can prepare this dish with ease and confidence. By selecting the right artichokes, prepping them correctly, making flavorful breadcrumbs, seasoning the stuffing, and knowing how to cook them, you can create the perfect artichokes stuffed with lemon garlic breadcrumbs.
