BRIE AND ARTICHOKE DIP

Brie and Artichoke Dip image

I took inspiration from GrammaJeanne's Recipe #279676 and made it my own. The original recipe is very good but I tweaked it a bit to suit our tastes. I'm always asked to bring this dip whenever we get together for celebrations with friends and family. I hope you enjoy it as much as we do!

Time 2h

Yield 10 to 12 servings

Number Of Ingredients 13

One 10-ounce box frozen leaf spinach, thawed, drained
4 ounces cream cheese, at room temperature
2 tablespoons mayonnaise
2 tablespoons sour cream
1 small clove garlic, grated
1/4 cup canned artichoke hearts (about 2), drained well and coarsely chopped
1/4 cup shredded whole-milk mozzarella
2 tablespoons grated Parmesan
Kosher salt and freshly ground black pepper
1 large egg, lightly beaten
One sheet frozen puff pastry (from a 17.3-ounce box), thawed
One 16-ounce wheel of brie
Crackers and crostini, for serving

Steps:

  • Put the spinach in a clean kitchen towel over a bowl or the sink and twist to squeeze out all the moisture. Coarsely chop.
  • Put the cream cheese, mayonnaise, sour cream and garlic in a large bowl; mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and Parmesan, mixing to combine. Season with salt and pepper, then refrigerate until ready to use.
  • Line a baking sheet with parchment paper. Whisk the egg with a splash of water in a small bowl. Roll out the puff pastry to a 13-by-12-inch wide rectangle. Cut a 1-inch wide strip of dough off the shorter end to create a 12-by-12-inch square, reserving the strip for decorating. Transfer the square to the prepared baking sheet. Place the wheel of brie in the center of the dough. Top with the chilled spinach-artichoke mixture. Fold the puff pastry up and over the brie, brushing the edges with a little egg wash and pinching to seal. Form the reserved strip of dough into a bow. Brush a little egg wash on the center of the pastry and gently press the bow on top to secure. Brush the bow and the entire exterior of the pastry with the egg wash, then return it to the refrigerator to chill, about 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Bake until the pastry is golden brown and cooked through, about 40 minutes. Let sit for 15 minutes, then serve warm with crackers and/or crostini.

Whether it's a fancy event or a casual get-together, the artichoke and brie spread is always a crowd-pleaser. Here are some useful tips to keep in mind when making artichoke and Brie spread recipes:

Choosing the right ingredients

The first step to making a delicious artichoke and Brie spread is to carefully choose the ingredients. The star ingredients, artichoke hearts and Brie cheese, should be fresh and of high quality. You can use canned or jarred artichoke hearts for convenience, but make sure to drain them well and chop them into small pieces. When purchasing Brie cheese, look for a soft and creamy texture with a mild flavor. It's important to remove the rind before mixing it in with the rest of the ingredients. You can also substitute Brie with other creamy cheeses such as cream cheese, goat cheese, or feta cheese. Other ingredients that can be added to the spread include sour cream, mayonnaise, garlic, lemon juice, parmesan cheese, and herbs such as thyme, rosemary, and parsley. These ingredients not only add flavor but also help balance out the richness of the cheese.

Mixing and blending ingredients

Once you have all the ingredients, it's important to mix and blend them well. You can use a food processor, blender, or a hand mixer to achieve a smooth consistency. However, if you prefer a chunky texture, you can mix the ingredients by hand, using a wooden spoon or spatula. It's important to mix the ingredients well while ensuring that the spread doesn't become too runny or soft. If the mixture is too thick, add a tablespoon of milk, sour cream, or lemon juice to loosen it up. If it's too runny, add more cheese or mayonnaise to thicken it.

Seasoning the spread

Seasoning is key to any successful recipe, and artichoke and Brie spread is no exception. You can season the spread with salt, pepper, garlic powder, or any other herbs and spices of your choice. However, be careful not to overdo it, as the cheese and other ingredients already have a distinct flavor. Tasting the spread as you season it is important to ensure you're getting a balanced taste. Use a spoon or cracker to taste, and adjust seasoning as you see necessary.

Serving and storage

Once you've made the artichoke and Brie spread, it's time to serve it! Transfer the spread to a serving bowl or dish and arrange your choice of crackers, bread, or vegetables around it. Some popular options include sliced baguettes, pita bread, or celery sticks. When storing the leftover spread, cover the bowl with a plastic wrap or lid and store it in the refrigerator. The spread will last for up to 3-4 days in the fridge. However, it's best to serve and finish the entire batch within the same day for maximum freshness and flavor.

Variations and tweaks

There are many variations and tweaks you can experiment with when making artichoke and Brie spread. Try adding roasted red peppers, sun-dried tomatoes, jalapenos, or bacon for a different flavor profile. You can also swap out the artichokes for other vegetables such as spinach, kale, or mushrooms. For a healthier option, you can replace the sour cream and mayo with Greek yogurt or hummus, and use low-fat or fat-free cheese. Similarly, you can also make the dip vegan by using vegan mayonnaise and cheese alternatives. In conclusion, artichoke and Brie spread is a versatile and delicious dip that can be customized to your liking. Whether you're looking for a fancy or casual appetizer, this cheesy dip is guaranteed to be a hit among your guests. With these tips, you can create a flavorful spread that will keep everyone coming back for more.
