15 ounces cannellini beans, canned, drained
1 garlic clove, minced
1 teaspoon olive oil
14 1/2 ounces low sodium chicken broth
salt, to taste
fresh ground black pepper, to taste
chopped of fresh mint, for garnish
1/4 cup fat free croutons, for garnish

Steps:

  • Puree artichoke hearts and beans in the food processor.
  • Heat the oil over medium heat in a small saucepan.
  • Add the garlic and saute.
  • Add the artichoke/bean puree and the broth and heat through.
  • Season with salt and pepper.

2 cups vegetable broth (or 1 cube vegetable bouillon dissolved in 2 cups hot water)
2 cups small white beans (canned or cooked)
1 (13 ounce) jar artichoke hearts, chopped (packed in water, drained)
1 roasted red pepper, chopped and drained (packed in water)
1/2 medium onion, chopped
4 garlic cloves, minced
lemon juice (one small lemon's worth)
2 sage leaves, chopped
1 bay leaf
1/2 teaspoon salt
black pepper
