AIR FRYER BAKED BRIE WITH PESTO, SUNDRIED TOMATOES AND ARTICHOKE HEARTS

Air Fryer Baked Brie with Pesto, Sundried Tomatoes and Artichoke Hearts image

Thanks to the air fryer, not only does puff pastry get perfectly golden brown and flakey, the overall cook time is a fraction of what it would take in a standard oven. Layered with pesto, sundried tomatoes and marinated artichoke hearts, this crowd-pleaser is loaded with flavor and festive charm.

Provided by Food Network Kitchen

Categories     appetizer

Time 1h15m

Yield 6 servings

Number Of Ingredients 11

1 demi baguette, thinly sliced on the bias
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/3 cup marinated artichoke hearts, chopped
1/3 cup sundried tomatoes, chopped
3 tablespoons store-bought basil pesto
1 large egg
All-purpose flour, for dusting
One sheet frozen puff pastry (from a 17.3-ounce box), thawed
One 8-ounce wheel of brie
Crackers, sliced red bell peppers and endive, for serving

Steps:

  • Preheat an air fryer to 350°F.
  • Brush both sides of the sliced bread with the olive oil and season with a pinch of salt and several grinds of black pepper. Transfer to the air fryer basket, shingling the slices so they all fit snuggly. Air fry until golden brown and toasted, flipping halfway through, about 4 minutes.
  • Meanwhile, stir together the artichokes, sundried tomatoes and 2 tablespoons of the pesto in a medium bowl until evenly combined. Set aside. Whisk the egg with a splash of water in a small bowl and set the egg wash aside.
  • Dust a clean worksurface or cutting board lightly with flour. Roll out the puff pastry to a 14-by-12-inch rectangle. Cut 1/4-inch-wide strips of dough off the shorter end to create a 12-by-12-inch square, reserving the strips for decorating.
  • Brush the center of the square of puff pastry lightly with the egg wash. Lay the reserved strips at an angle in a crisscross pattern in the center of the square of pastry, 4 going in one direction and 4 in the other. Press down gently to adhere. Place a piece of parchment paper on top of the puff pastry, then use the parchment paper to help flip the whole thing over so the crisscross pattern is now facing down.
  • Spoon the artichoke-sundried tomato mixture into the center of the dough, then top with the remaining 1 tablespoon of pesto and the wheel of brie. Fold the puff pastry up and over the brie, brushing the edges with a little egg wash and pinching to seal. Flip the puff pastry-wrapped brie over so the crisscross design is now on top. Brush the entire exterior of the pastry with the egg wash, then refrigerate until the pastry is chilled, 20 to 30 minutes.
  • Preheat an air fryer to 375°F. Place the brie in the center of the air fryer basket and air fry until the pastry is golden brown and cooked through, about 18 minutes.
  • Let sit for 5 minutes, then serve warm with the toasted bread, crackers, sliced bell peppers and endive.

ARTICHOKE LEMON PESTO CHICKEN PASTA

ARTICHOKE LEMON PESTO CHICKEN PASTA image

Categories     Chicken     Wheat/Gluten-Free     Casserole/Gratin

Number Of Ingredients 12

1 lb Chicken Breast, boneless, skinless, cubed (or chicken thights if you prefer)
1 Spaghetti Squash, large, cut in half lengthwise (get a BIG one)
12-15 Artichoke Hearts, cut in half (I used jarred artichokes that were in olive oil for more flavor)
1/3 cup Organic Walnuts
4-5 Tbsp Extra Virgin Olive Oil
4-5 Tbsp Vegetable Broth
2 clove Garlic, minced
1/2 cup Parsley, fresh
1/2 cup fresh Basil
1 Lemon, juice only
Salt and Pepper, to taste
3-5 cup Spinach, optional

Steps:

  • Preheat oven to 405 degrees (not 450, stop questioning me) Cut the squash in half lengthwise, place cut side down on a baking sheet and bake for 30-35 minutes or until squash gives when you poke the outside of it. Use a spoon to remove the excess seeds then a fork to thread the strings from the squash. To make spaghetti, duh. But while the squash is baking, make the pesto and chicken. Place a large pan over medium-high heat, add a splash of fat and 1 minced garlic clove. As soon as the garlic becomes fragrant, add the halved artichokes. Sprinkle with salt and pepper and let cook until slightly browned and tender on all sides. Once artichokes are browned, add them to a food processor along with the walnuts, olive oil, vegetable broth, and second garlic clove. Puree until smooth. Then add the parsley, basil, lemon, and salt and pepper. Puree once more until smooth. Taste and add more lemon and salt and pepper to your preference. Once pesto is done pureeing, add the chicken to the same pan that you sautéed the artichokes in. Cook chicken over medium-high heat until browned on all sides. Sprinkle with a bit of salt and pepper. Once chicken is cooked through, add in about ¼ of a cup of the pesto to the chicken along with the spinach, in the pan and mix well to coat. Cover and let cook for 2-4 minutes or until spinach is wilted. Then add the threads of spaghetti squash to the pan (or a large mixing bowl if you need more room). Mix spaghetti squash, pesto, and chicken all together. Serve with some fresh basil on top.

CRISPY ARTICHOKE PESTO-STUFFED CHICKEN

Crispy Artichoke Pesto-Stuffed Chicken image

Pesto transforms a simple Italian-inspired dish into something special. And since it's packed with flavor, the pesto only needs a few other ingredients -- artichokes, Parmesan and provolone cheese -- to make a filling fit for these crispy, golden brown chicken cutlets.

Provided by Food Network Kitchen

Categories     main-dish

Time 55m

Yield 6 servings

Number Of Ingredients 10

One 12-ounce jar marinated quartered artichoke hearts, drained
1/2 cup pesto
1/2 cup grated Parmesan
6 thin chicken cutlets (4 to 6 ounces each, pounded to 1/8 inch thick)
Kosher salt and freshly ground black pepper
4 ounces sliced provolone, cut into 1/2-inch pieces
2/3 cup all-purpose flour
2 large eggs
1/2 cup plain breadcrumbs
4 tablespoons olive oil

Steps:

  • Position an oven rack in the upper third of the oven and preheat to 400 degrees F. Fit a rimmed baking sheet with a baking rack.
  • Combine the artichoke hearts, pesto and 1/4 cup of the Parmesan in a food processor and pulse until finely chopped, 10 to 12 pulses. Set aside.
  • Sprinkle the chicken cutlets with salt and pepper and arrange them pounded-side up on a work surface. Divide the provolone evenly among the cutlets, leaving a 1/4-inch border around the edges, then top evenly with the pesto and artichoke filling. Starting at the short end of each cutlet, roll up to enclose the filling. Secure with a wooden skewer and season with more salt and pepper.
  • Put the flour in a shallow dish. Put the eggs in a second shallow dish and beat until very loose. Mix the breadcrumbs and remaining 1/4 cup Parmesan in a third shallow dish. Coat the chicken roll-ups first in the flour, then dip in the egg, letting any excess drip off. Last, coat fully with the breadcrumb mixture and transfer to a plate.
  • Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Put 3 of the roll-ups in the skillet seam-side down and cook, flipping as needed, until golden brown on all sides, about 5 minutes. Transfer to the prepared baking sheet. Wipe out the skillet and heat the remaining 2 tablespoons oil. Cook the remaining roll-ups in the same method, then transfer to the baking sheet. Bake the roll-ups until cooked through, about 15 minutes. Remove the skewers before serving.

Serving suggestions from the Cibo company: spread for French bread, sandwich condiment, or slather approximately two-three tablespoons pesto on a chicken breast or thigh and bake in oven until chicken is done, add some mayonnaise to the pesto for "instant aioli", etc. Many uses!

GARLIC, ARTICHOKE HEARTS, SUN-DRIED TOMATOES, AND PESTO PIZZA

Garlic, Artichoke Hearts, Sun-Dried Tomatoes, and Pesto Pizza image

Based on a pizza from Romio's, a regional chain of pizza & pasta restaurants. One of our very favorite pizzas! The first time I ever had it, DH made it for me the night we got engaged. Ahh, the memories! :D

Provided by Halcyon Eve

Categories     European

Time 35m

Yield 8 slices, 4-6 serving(s)

Number Of Ingredients 10

1 (12 inch) pizza crusts, unbaked (I buy or make dough)
2 -4 tablespoons olive oil
6 large garlic cloves, very thinly sliced (a garlic mandolin works well for this)
1/4 cup sun-dried tomato
simmering water
1 cup pizza sauce (more or less according to taste)
2 1/2 cups shredded part-skim mozzarella cheese, divided (or according to taste, I like it cheesy)
1 (14 ounce) can quartered water-packed artichoke hearts, drained
1/4 cup shredded parmesan cheese (or Romano or Asiago) (optional)
1 (7 ounce) container fresh basil pesto

Steps:

  • Preheat oven to 425* F. Stretch dough over a 12-inch greased pizza pan. Brush with olive oil and scatter garlic slices evenly over crust. Place in oven and bake for about 10 minutes or until just starting to turn golden brown.
  • Meanwhile, place sun-dried tomatoes in a heat-resistant, non-reactive bowl (such as Pyrex). Pour enough simmering water over to completely cover tomatoes. Let soak about 5-10 minutes or until tender; drain liquid and slice into strips.
  • When crust is ready, spread sauce over garlic slices (try not to shift them around any more than can be helped). Top with about 1 1/2 cups mozzarella, or to taste. Scatter strips of sun-dried tomatoes evenly over cheese. Place artichoke heart quarters evenly across pizza, then top with remaining mozzarella and the parmesan, if using.
  • Return to oven and bake at 425* F for about 8-10 minutes, or until cheese is melted, bubbly, and turning golden brown in spots.
  • Remove from oven and allow to rest 3-4 minutes to set up. Cut into slices.
  • Top pizza slices with dollops of pesto and serve.

Provided by Ryan Hardy

Categories     Blender     Citrus     Garlic     Vegetable     Appetizer     Sauté     Artichoke     Spring     Wheat/Gluten-Free     Peanut Free     Soy Free     No Sugar Added

Yield Makes 10 servings

Number Of Ingredients 12

2 medium lemons
4 large artichokes
2 tablespoons extra-virgin olive oil
1 medium onion, thinly sliced
1 leek, white and pale green parts only, coarsely chopped
4 heads green garlic,* toughest green part removed and coarsely chopped
1 medium Yukon Gold potato, peeled and cut into 1-inch chunks
4 cups chicken stock or low-sodium chicken broth
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
Nettle-walnut pesto crostini
*Green garlic is young garlic before it begins to form cloves. It resembles a baby leek, with a long green top and white bulb, and has a milder flavor than mature garlic. If you can't find green garlic, mild elephant garlic makes a good substitute. Use 4 large cloves.

Steps:

  • Fill large bowl with ice water and juice from 1/2 lemon, then drop same lemon half into water. Cut off artichoke stems and discard. Using serrated knife, cut top inch off artichokes. Working with 1 artichoke at a time, bend back outer leaves until they snap off close to base. Discard several more layers of leaves in same manner until exposed leaves are pale green at top and pale yellow at base. Cut off green tips. Gently pull open center of artichoke and, using melon baller or spoon, scoop out small, purple-tipped leaves and fuzzy choke. Using sharp paring knife, trim outside of base until no dark green areas remain, then quarter artichoke, rub cut surfaces with other lemon half, and drop into water. Trim remaining artichokes in same manner.
  • In heavy 6-quart pot over moderate heat, heat oil until hot but not smoking. Add onions, leek, and garlic, and sauté, stirring occasionally, until soft, about 8 minutes. Drain artichokes and add to pot along with potato chunks, chicken stock, salt, pepper, and 4 cups water. Bring to simmer, then reduce heat to low, cover, and cook until artichokes and potato are soft, about 20 minutes.
  • Working in 4 batches, purée soup in blender until very smooth, then pour through fine-mesh strainer into clean pot. Set over moderately low heat and stir in juice of remaining lemon. Ladle into shallow bowls and gently place nettle-walnut pesto crostini in center of each.

SPINACH, ARTICHOKE, & PESTO LASAGNA

Spinach, Artichoke, & Pesto Lasagna image

The base idea for this recipe came from a diet cookbook, but I've made a great many changes over the years. This is one of my favorite recipes, because it's very flavorful and reheats well. I usually use no-boil lasagna noodles for convenience, but have also had very good results with whole-wheat lasagna noodles boiled just to the point of being slightly "under cooked". Also, the shredded mozzarella can be replaced with pre-shredded "mixed Italian cheeses" available at most grocery stores. Finally, the Classico brand pesto tends to be very liquid, which is good for this recipe. If you can't find this brand and the pesto that you use is very thick, try mixing in a teaspoon or so of olive oil.

Artichoke pesto is a delicious, healthy, and versatile sauce that can be used for a variety of dishes, including pasta, sandwiches, dips, and more. Artichokes are an excellent source of folate, fiber, vitamin C, and K, and they also contain antioxidants that help to protect the body against disease. Pesto incorporates these essential nutrients, along with other healthful ingredients like garlic and olive oil, making it a nutritious sauce that can easily be added to your diet. If you are looking for some valuable tips to help you make the perfect artichoke pesto, here are some helpful suggestions that will ensure your sauce turns out great every time.

Tip 1: Selecting the Right Artichokes

The key to making an excellent artichoke pesto is to use fresh, high-quality artichokes. When selecting artichokes, look for those that are firm, heavy, and have tightly packed leaves. The leaves should be a rich green color, and the tips should be slightly pink or red. Avoid any artichokes that have brown or black spots on the leaves, as they are likely to be past their prime.
Tip 1.1: Preparing the Artichokes
Before you can use artichokes in your pesto, you need to prepare them properly. Start by washing the artichokes in cold water and then cutting off the top third of the artichoke. Cut off the stem, so the artichoke can sit flat. Next, use a pair of kitchen shears to trim the tips of the remaining leaves. Be sure to remove any small leaves at the base of the artichoke that may be tough or inedible.

Tip 2: Getting the Ratio Right

To make a good artichoke pesto, you need to get the ratio of ingredients right. The key ingredients in pesto are basil, garlic, olive oil, and Parmesan Cheese. To this base recipe, you'll add artichokes, walnuts, and lemon juice. Keep in mind that the exact ratio will depend on your personal preference, so don't be afraid to adjust the flavors to suit your taste buds.
Tip 2.1: Experiment with Different Nuts
While walnuts are the traditional nut used in pesto, you can also experiment with other types of nuts. Pistachios, almonds, and pine nuts are all excellent choices that can add a unique flavor to your pesto.

Tip 3: Use High-Quality Olive Oil

Olive oil is a crucial ingredient in artichoke pesto, as it helps to bind the other ingredients together while also providing a rich, buttery flavor. When selecting olive oil, look for an extra-virgin variety that is rich in flavor and color. Be sure to add the oil slowly and gradually while pulsing the mixture in a food processor to ensure a smooth and creamy texture.
Tip 3.1: Ditch the Bottled Lemon Juice
For the best flavor, always use fresh-squeezed lemon juice in your pesto. Bottled lemon juice can have a sour, acidic taste that can overpower the other flavors in your sauce.

Tip 4: Avoid Over Processing

When making artichoke pesto, it's important to avoid over-processing your ingredients. Overprocessing can break down the basil leaves, making your pesto bitter and losing its vibrant green color. To avoid this, pulse the ingredients in a food processor for just a few seconds at a time until the desired texture is achieved.
Tip 4.1: Use a Mortar and Pestle
If you prefer a chunkier texture, consider using a mortar and pestle instead of a food processor. A mortar and pestle will crush the ingredients slightly, resulting in a coarser, rustic texture that is perfect for dipping or spreading.

Tip 5: Adjust the Salt and Pepper

Salt and pepper are essential ingredients in artichoke pesto that add flavor and depth to the sauce. However, both can be overdone, and too much can spoil the flavor of your pesto. Add the salt and pepper slowly and taste as you go, adjusting the seasoning to your liking.
Tip 5.1: Add Salt at the End
It's always best to add the salt at the end of the recipe. This is because the salt will cause the artichoke leaves to release water, which can make your pesto runny if added too early in the process.

Conclusion

In conclusion, making artichoke pesto is a delicious way to incorporate artichokes into your diet. Use these valuable tips to help you make the perfect sauce every time. By selecting high-quality ingredients, getting the ratio right, using fresh lemon juice, and avoiding overprocessing, you'll create a delicious and healthy sauce that's perfect for any dish.
