1/4 lb thinly sliced bacon
1 (14 ounce) can artichokes, drained,cut in half or 1 (10 1/2 ounce) package frozen artichoke hearts, thawed,cut in half

Steps:

  • Preheat the broiler.
  • Cut the bacon slices in half, place on a baking sheet, and broil for 3 minutes.
  • Let the bacon cool enough to handle.
  • Wrap each artichoke half in a piece of bacon, broiled side facing inward, and secure with a toothpick.
  • Broil 4 to 5 minutes, or until the bacon is brown and crisp.

5 slices center-cut bacon
One 12-ounce bag frozen artichoke hearts, thawed
1 tablespoon canola oil
2 garlic cloves, minced
1/4 teaspoon red chile flakes
One 15-ounce container part-skim ricotta
1 tablespoon lemon zest
1/4 cup grated Parmesan, plus more for sprinkling
1/2 teaspoon kosher salt, plus additional as needed
Freshly ground black pepper
3 tablespoons freshly squeezed lemon juice
1 sheet lavash
1 cup baby arugula
Olive oil, for drizzling

Steps:

  • Preheat the oven to 425 degrees F and line a sheet tray with parchment paper.
  • Cook the bacon in a large saute pan over medium-high heat until it is golden and crispy, about 3 minutes per side. Transfer the bacon to a paper towel-lined plate to drain, then chop into bite-sized pieces. Remove all but 1 tablespoon of the bacon grease and add the artichoke hearts. Cook over medium heat until they are golden brown, 3 to 4 minutes. Add the canola oil, then the garlic and chile flakes. Saute until the garlic is fragrant, another minute. Remove from the heat and set aside.
  • Combine the ricotta, lemon zest, Parmesan, salt, pepper and 2 tablespoons lemon juice in a medium bowl and stir until smooth. Trim the lavash as necessary to fit on a sheet tray and spread the ricotta mixture in an even layer over the top. Top with artichokes and bacon and bake until the cheese is melted and the lavash has crisped at the edges, about 10 minutes.
  • Toss the arugula with olive oil and the remaining tablespoon lemon juice and season with salt and pepper. Drizzle the flatbread with olive oil, then top with arugula and cut into slices.

3 (14-ounce) cans whole artichoke hearts
2 scallions, finely sliced
1 cup shredded red cabbage
1 cup shredded carrot
1/4 cup Italian dressing
Kosher salt and freshly ground black pepper
1 tablespoon sesame seed, for garnish

Steps:

  • Pull out the center of the artichoke with your fingers to form a cup, and then slice a bit off the bottom to make a flat surface so the cups sit upright. Repeat with remaining artichokes. The artichoke centers can be used in a salad or omelet.
  • In a large bowl, toss together the scallions, cabbage, and carrots. Add the dressing, taste, and adjust the seasoning with more salt and pepper, if necessary. Fill the artichoke cups with the slaw, garnish with sesame seeds, and serve.

Nonstick cooking spray, for the baking sheet, optional
14 round salted butter crackers
4 fresh basil leaves
2 tablespoons finely grated Parmesan cheese
1 tablespoon fresh flat-leaf parsley leaves
1/4 teaspoon garlic salt
One 24-ounce jar marinated quartered artichoke hearts, drained
Marinara sauce, for serving

Steps:

  • Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick cooking spray or line with parchment paper.
  • In a food processor, combine the crackers, basil, cheese, parsley and garlic salt and process to fine crumbs (the texture of breadcrumbs). Roll the artichoke hearts in the cracker crumb mixture and place on the prepared baking sheet.
  • Bake until the cracker crumbs are golden brown, about 30 minutes. Arrange the artichokes on a serving platter with toothpicks. Serve with marinara sauce for dipping, if desired.

Steps:

  • 1. Preheat oven to 425 degreesF. Line a baking sheet with aluminum foil.
  • 2. Drain artichoke heart quarters and reserve liquid.
  • 3. Wrap each artichoke heart with the half slice of bacon and secure with a toothpick.
  • 4. Place on lined bacooking sheet and drizzle reserved liquid fronm the artichokes. Roast for 12- 15 minutes or until lightly browned and cooked through.

Steps:

  • Cut your bacon strips in half. Wrap a half slice of bacon around each quarter of an artichoke. Spear with a toothpick to hold it together.

3 tablespoons Dijon mustard
1/4 cup half-and-half cream or 1/4 cup heavy cream

Steps:

  • Preheat oven to 400°F.
  • Cut each artichoke heart into 8 equal pie shaped wedges.
  • Cut each bacon slice into fourths.
  • Wrap bacon around artichoke wedges and secure with a toothpick.
  • Place on a foil lined, rimmed cookie sheet and bake for 20 to 30 minutes or till bacon is crisp.
