Time 1h20m

Yield 6

Number Of Ingredients 16

2 cups Idahoan® Steakhouse Cheesy Hashbrowns, rehydrated
¼ cup zucchini, shredded
¼ cup sweet potato, shredded
¼ cup carrot, shredded
4 tablespoons butter, melted
1 teaspoon salt
4 large eggs
1 ½ cups whip cream, un-whipped (or half and half for a lighter quiche)
8 ounces artichokes hearts, coarse chop
½ cup leeks, chopped and sauteed to soften
¾ cup cooked ham, small dice
1 cup Swiss cheese, shredded
⅛ teaspoon cayenne red pepper
1 teaspoon dried sage
¾ teaspoon salt
Crunchy onion packet for garnish

Steps:

  • For the crust: Preheat oven to 450 degrees F.
  • Mix veggies and hash browns together. Gently press between paper towels to remove as much moisture as possible. In a large nine inch pie plate, toss the veggie mixture with the melted butter. Sprinkle 4 tablespoons of the cheese packet from the box of Steakhouse Hash Browns over hash brown mixture and blend. Using the bottom of a measuring cup, press mixture into the bottom and up the sides to firmly form a crust. Place rack on the lower third of the oven. Bake for 20-25 minutes until golden brown and the edges begin to crisp. While crust bakes, make the filling.
  • For the filling: Blend the eggs and cream until smooth. Stir in the artichokes, leeks, ham, cheese and seasonings.
  • When the hash brown crust is ready, lower the oven temperature to 350 degrees F and pour the filling into the crust. Bake for 30 minutes then sprinkle the crunchy onion topping on the quiche. Continue to bake for another 15 minutes or until the quiche is light golden brown and firm in the middle. Quiche will settle as it cools.

ARTICHOKE AND HAM STRATA

Artichoke and Ham Strata image

Nothing but rave reviews when I've made this! I tend to put in a little more cheese and mix it up with Havarti and play with other ingredients like mushrooms, but straight from the recipe is superb, as well! Makes for a great dish if you're entertaining for brunch- just make sure you plan ahead! The Cooking Light editors recommend at least 8 hours (or overnight) to let the dish sit in the fridge.

Ingredients

To create this delicious appetizer, there are a few key ingredients that you will need to have on hand. These include:
Puff Pastry
Puff pastry is a light, flaky pastry that is perfect for making all sorts of appetizers and pastries. It can be found in the frozen section of most grocery stores.
Cream Cheese
Cream cheese is used to add a creamy texture and tanginess to the filling.
Ham
Ham is the main protein used in the filling. It is important to choose a high-quality ham to ensure the best flavor.
Artichokes
Artichokes provide a unique, tangy flavor that pairs perfectly with the ham and cream cheese.
Egg
An egg is used to create the egg wash that will be brushed on top of the puff pastry to create a golden-brown color.

Instructions

Step 1: Prepare the Filling
Begin by preparing the filling for your puffs. To do this, finely chop the ham and drain the artichokes. In a mixing bowl, combine the ham, artichokes, cream cheese, and any additional seasonings or spices that you prefer.
Step 2: Prepare the Pastry
Defrost your puff pastry according to the instructions on the package. Once the pastry is thawed, lightly flour your work surface and roll out the pastry to a thickness of about a quarter inch.
Step 3: Cut the Pastry
Using a sharp knife or pizza cutter, cut the pastry into small squares, about 2-3 inches per side.
Step 4: Fill the Pastry
Place a spoonful of the filling in the center of each pastry square. Be careful not to overfill the puffs or they may burst while baking.
Step 5: Fold and Seal
Fold the corners of the pastry up and over the filling, forming a little bundle. Press the edges together with your fingers to seal the pastry shut.
Step 6: Brush with Egg Wash
In a small bowl, whisk together an egg and a tablespoon of water. Use a pastry brush to lightly brush the egg wash onto the top of each pastry.
Step 7: Bake
Place your puffs on a lined baking sheet and bake at 400 degrees Fahrenheit for 20-25 minutes, or until the pastry is puffed up and golden brown.

Variations

While the classic ham and artichoke combination is delicious, there are many variations that you can try out to create different flavors and textures.
Spinach and Feta
Replace the ham and artichokes with cooked spinach and crumbled feta cheese for a vegetarian variation.
Mushroom and Gruyere
Substitute the ham and artichokes with sautéed mushrooms and grated gruyere cheese for a rich and flavorful twist.
Buffalo Chicken
Mix shredded cooked chicken with buffalo sauce and cream cheese for a spicy buffalo chicken filling that is sure to be a hit.

Choose the right ingredients The key to making great artichoke ham puffs is to choose fresh and high-quality ingredients. Make sure to buy fresh artichokes, ham, cheese, and puff pastry. You can use canned artichokes, but fresh ones taste better. You can also use different types of ham, such as prosciutto or cooked ham. Choose a mild cheese that melts easily, such as Gruyere or Swiss cheese. 2. Prepare the artichokes To prepare the artichokes, rinse them under cold water and remove the outer leaves and thorny tips. Cut off the top third of the artichoke and trim the bottom stem. Cut the artichoke into quarters and remove the fuzzy choke. Cut the artichoke quarters into small pieces and set aside. 3. Cook the ham To cook the ham, heat a large skillet over medium heat. Add the ham and cook for a few minutes until it is lightly browned. Remove from the heat and set aside. 4. Prepare the cheese To prepare the cheese, grate it into small pieces and set aside. This will make it easier to mix with the other ingredients. 5. Make the filling To make the filling, mix together the artichokes, ham, cheese, and other ingredients in a large bowl. You can add chopped onions, garlic, or herbs to enhance the flavor. Mix until everything is well combined. 6. Roll the puff pastry Roll out the puff pastry on a lightly floured surface until it is about 1/8 inch thick. Cut the pastry into small circles using a cookie cutter or a glass. You can also use a square or rectangular shape if you prefer. Place the pastry circles on a baking sheet lined with parchment paper. 7. Add the filling Add a small spoonful of the filling onto each pastry circle. Brush the edges of the pastry with beaten egg, and fold the pastry over the filling to create a half-moon shape. Press the edges together with a fork to seal the pastry. 8. Bake the puffs Preheat the oven to 400 degrees Fahrenheit. Brush the tops of the pastry with beaten egg and bake for 15-20 minutes, or until the puffs are golden brown and puffed up. Remove from the oven and let cool for a few minutes before serving. Conclusion: Artichoke ham puffs are a great appetizer that can be served at any gathering or party.
