A neat twist on a familiar dip. Chefs Beverly Mills and Alicia Ross recommend using a thin and crispy pizza crust, such as Boboli, as the base. Sure to be a hit with cocktails.

1 thin prepared pizza crust
1 (14 ounce) can artichoke hearts, water-packed and drained
4 ounces lump crabmeat or 4 ounces backfin crab meat
2/3 cup grated parmesan cheese
2/3 cup light mayonnaise (i use regular)
1 teaspoon minced garlic
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/4 cup pitted kalamata olive, sliced and drained well
1/4 cup finely chopped red bell pepper

Steps:

  • Heat oven according to the pizza crust directions and heat the pizza until it is light golden brown, Remove pizza and set aside, leaving the oven on.
  • Chop the artichoke hearts and combine with the crabmeat, cheese, mayonnaise, garlic, salt and pepper, stirring to mix well.
  • Spread over the pizza crust, and sprinkle with the olives.
  • Return the pizza to the oven and bake 12 to15 minutes, or until the top is slightly browned and bubbling along the edges.
  • Remove and sprinkle with the red bell pepper.
  • Slice into small squares and serve with remoulade sauce, if desired.

2 (14 ounce) cans artichoke hearts, well drained
1 cup freshly grated parmesan cheese
1 cup mayonnaise (for best results, don't use Miracle Whip, it's too sweet)
1/4 teaspoon Worcestershire sauce
1/4 teaspoon garlic salt or 1/4 teaspoon garlic powder
Tabasco sauce, to taste (or any hot sauce)

Steps:

  • Preheat oven to 350F degrees.
  • Spray a 4-cup casserole dish with Pam, or lightly grease it; set aside.
  • Chop drained artichokes and place in a mixing bowl.
  • Add all other ingredients and combine; put mixture into casserole dish.
  • Bake in preheated oven until hot and bubbly, about 20 minutes.
  • Serve with crackers, melba toast, or your favourite dippers.

3 Tbsp. CLASSICO Traditional Basil Pesto Sauce and Spread
60 roasted garlic woven wheat crackers
1 can (14.5 oz.) artichoke hearts, drained, cut into 60 pieces

Steps:

  • Pour boiling water over tomatoes in small bowl; let stand 10 min.
  • Drain tomatoes, reserving liquid. Place reserved liquid, Neufchatel and pesto in blender; blend until smooth. Add tomatoes; blend just until combined. (A few chunks can remain.) Spoon into bowl.
  • Refrigerate 1 hour.
  • Top each cracker with 1 tsp. Neufchatel mixture and 1 artichoke piece just before serving.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Unroll crescent roll dough into rectangles; press into the bottom and sides of a 15x10x1-inch jelly roll pan or baking sheet. Seal perforations together.

2 (6 ounce) jars marinated artichoke hearts, divided
1 small onion, finely chopped
1 ½ cloves garlic, minced
4 large eggs, beaten
¼ cup dry bread crumbs
¼ teaspoon salt
⅛ teaspoon ground black pepper
¼ teaspoon dried oregano
½ teaspoon hot pepper sauce (such as Tabasco®)
¾ pound sharp Cheddar cheese, shredded
2 tablespoons minced fresh parsley
1 teaspoon grated Parmesan cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Grease a 10x7x2-inch baking dish.
  • Drain marinade from one jar of artichoke hearts into a skillet.
  • Pour artichoke hearts from drained jar and the entire second jar (marinade and artichoke hearts) into a food processor. Blend until artichoke hearts are coarsely chopped and set aside.
  • Cook and stir onion and garlic in the skillet with marinade over medium-low heat until onions are light brown, 5 to 7 minutes. Remove from heat and transfer to a large bowl.
  • Stir onion mixture, eggs, bread crumbs, salt, black pepper, oregano, and hot pepper sauce together until well mixed.
  • Stir sharp Cheddar cheese, parsley, Parmesan cheese, and chopped artichoke heart mixture into the onion mixture. Pour mixture into prepared baking dish.
  • Bake in preheated oven until top is golden, 25 to 30 minutes. Cut into 1-inch squares and serve warm or cold.

  • Pita Chips:.
  • Preheat oven to 400 degrees.
  • Cut each Pita bread into 8 triangles & place on lined baking sheet.

  • Sprinkle seasonings over chips.

  • Let cook and put onto platter or dish that can go into oven.

1-1/2 cups sour cream
1/2 cup butter, melted

2 cups shredded Monterey Jack cheese

1/4 cup grated Parmesan cheese
1 jar (6-1/2 ounces) marinated artichoke hearts, drained and chopped
4 garlic cloves, minced
2 tablespoons minced fresh parsley
2 teaspoons lemon-pepper seasoning

Steps:

  • Cut bread in half lengthwise; hollow out, leaving 1/2-in. shells. Set aside. Place removed bread in a food processor; cover and process until crumbly. , In a large bowl, combine the bread crumbs, sour cream, butter and sesame seeds; spread onto a baking sheet. 8 oz cream cheese, softened
1/2 c mozzarella cheese, freshly shredded, divided
1/4 c sour cream
1/4 c parmesan cheese, grated

6 oz marinated artichoke hearts, drained & chopped, 1 jar
5 - 6 oz chopped spinach, frozen variety, thawed and drained
salt, kosher variety, to taste
black or white pepper, freshly ground, to taste
OPTIONAL ITEMS
a bit of cayenne pepper, for kick
a drop or two of hot sauce, i prefer frank's
sliced black olives, mixed in, or used as a garnish

Steps:

  • 1. PREP/PREPARE
  • 2. You will need an ovenproof dish to make this recipe. Something you can bake in and take directly to the table. Just make sure everyone knows that it will hot, hot, hot.
  • 3. This dip is a bit thicker than most, so I would not suggest just dipping a chip into it because you will wind up with a lot of broken chips. Instead, have each guest spoon off a bit onto their plates, break it up slightly, and then proceed to scoop it up.
  • 4. Gather your ingredients (mise en place).
  • 5. Drain and chop the artichokes, and defrost the chopped spinach, then allow them to drain on a couple of paper towels. Place a rack in the middle position, and preheat the oven to 355f (180c) In a mixing bowl, combine the cream cheese, sour cream, parmesan cheese, 1/4 cup of the mozzarella, minced garlic, and some salt and pepper, to taste
  • 6. Make sure that the cream cheese is softened.
  • 7. With all the cheese, this dish is already going to be a bit salty, so take care with the salt.
  • 8. Carefully fold in the artichoke hearts and spinach. Lightly oil or butter a small baking dish. Place into the baking dish and sprinkle the top with the remaining 1/4 cup of shredded mozzarella. Place in the preheated oven and bake until the dish is bubbly, and the top begins to brown, about 20 - 25 minutes.
  • 9. Once it begins to brown, it is a quick step from brown-to-black, so keep an eye on it.
  • 10. PLATE/PRESENT
  • 11. Serve hot with chips, toasted bread, whatever you fancy. Enjoy.
  • 12. Keep the faith, and keep cooking.

  • Mix crabmeat with celery heart, onion, lemon juice and mayonnaise. Place mixture on rinsed and dried artichoke bottoms. Mix together cream cheese, mustard, egg yolk, and onion until creamy. Spread carefully on top of crab mixture in the artichoke bottoms. Broil on bottom rack until lightly browned.

1 loaf unsliced French bread (1 lb.)
1-1/2 C. (12 oz.) sour cream
1/2 C. butter, melted
2 T. sesame seeds (optional)
2 C. (8 oz.) shredded monterey jack cheese
1 C. (4 oz.) shredded cheddar cheese
1/4 C. fresh grated parmesan cheese
1 jar (6-1.2 oz.) marinated artichoke hearts, drained and chopped
4 garlic cloves, minced
2 T. minced fresh parsley
2 t. lemon-pepper seasoning

Steps:

  • Cut bread in half lengthwise, hollow out, leaving 1/2" shells. Set aside. Place removed bread in a food processor, cover and process until crumbly. In a large bowl, combine the bread crumbs, sour cream, butter and, if you would like, sesame seeds; spread onto a baking sheet. Broil 4" from the heat for 8-10 minutes or until lightly browned, stirring once. In a large bowl, combine the crumb mixture, cheeses, artichokes, garlic, parsley and lemon pepper. Spoon into bread shells. Place on baking sheet. Bake at 350 degrees for 25 minutes or until golden brown. Slice and serve warm.
