PUERTO RICAN ARROZ CON LECHE (RICE WITH MILK)

Puerto Rican Arroz Con Leche (Rice With Milk) image

In Puerto Rico this recipe is simply a rice soup made with milk. Usually made for babies, children, or when someone has a bad stomach. It is a comfort food. In other Latin American countries 'Arroz con leche' might be a dessert made with sugar and cinnamon. Our rice dessert is called Arroz con dulce, made with coconut.

RICE PUDDING -- MEXICAN STYLE, ARROZ CON LECHE

Rice Pudding -- Mexican Style, Arroz Con Leche image

This arroz con leche recipe comes from a calender cookbook called Mexico, The Beautiful Cookbook. My Mother-in-law was about to throw it out and I found this wonderful rice pudding recipe in it. It is by far the best I have ever tasted. I omit the the lime and orange peel but I am sure it's probably great with it. uuum, uuum good. *I have made no changes to the recipe but want to make a note that many Food.com users state a frustration with the stirring time so feel free to turn the heat up a little but I posted the recipe exactly as it was on the calendar. I apologize to anyone that has been frustrated. The end result is always wonderful though : ) THANKS for all the wonderful reviews, it is very much appreciated. Enjoy!!!

RICE ATOLE (MEXICAN RICE PUDDING/ARROZ CON LECHE)

Rice Atole (Mexican Rice Pudding/Arroz Con Leche) image

My mom adapted this from several recipes she found, in an attempt to copy the arroz con leche that we had while I was studying in Merida, in Mexico's Yucatan Peninsula. The bakery sold it in little plastic cups, at room temperature. This isn't a true 'pudding' since it doesn't have any eggs--but it sure is good! I haven't actually made this myself yet--just enjoyed it at mom's house! Warming the milk before adding to the rice helps to avoid longer cooking times. Simply warm the milk in the microwave or in another pan shortly before adding it to the rice. This dish can easily be halved if you don't need such a large amount (or doubled if you need more). This is a nice recipe to pour into individual serving dishes (custard cups or ramekins work well) while still warm. Sprinkle with a little extra cinnamon to garnish, cool, and eat cold or at room temperature.

ARROZ CON GANDULES Y LECHE DE COCO

Arroz Con Gandules Y Leche De Coco image

This recipe goes well with baked chicken or pork chops. As always a nice side salad to make it great! With the touch of coconut milk, this recipe will bring a touch of the Puerto Rico in to your kitchen.

Provided by Chef Riveratime

Categories     < 60 Mins

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 13

1 (15 1/2 ounce) can coconut milk (goya)
1/4 teaspoon sazon goya with coriander and annatto
1 (15 1/2 ounce) can pigeon peas (gandules, goya)
1/2 lb ham (not sliced)
1 (8 ounce) can tomato sauce (goya)
1/2 cup oil (canola oil is healthier)
4 cups water
3 cups rice (goya medium grain rice or long is fine)
2 teaspoons adobo seasoning
2 teaspoons onion powder
2 teaspoons garlic powder
salt
2 teaspoons sofrito sauce

Steps:

  • In a large pot add sazon, oil, sofrito, onion powder, garlic powder, adobo, ham, gandules, coconut milk, and tomato sauce. Simmer over medium fire. Stir ingredients together and let heat up for about 3 minutes. Add water continue to mix all ingredients together.Add salt to taste. Let it simmer until it comes to a boil. When water is boiling add rice. Stir in the rice so it all evens out with taste. Cover the pot. When you see all the water has dried stir rice so it all cooks evenly. Covering the the rice allows it to cook but also helps to keep it nice and moist not dry and hard. (if rice seems a bit hard just sprinkle a bit a water on top and cover) at times this will happen if it's your first time making rice.

ARROZ CON LECHE

Arroz Con Leche image

This recipe for arroz con leche came to us from Veronica Garcia of Houston. The original came from her maternal grandmother, but Ms. Garcia has since made a few adjustments: a little less sugar, a split vanilla bean and no raisins. But she still soaks and rinses the rice two times, making it a little lighter than a traditional rice pudding.

Provided by Sam Sifton

Categories     custards and puddings, dessert

Time 1h15m

Yield 10 to 12 servings

Number Of Ingredients 7

2 cups long-grain white rice
8 cups whole milk
3/4 cup granulated sugar
1 (12-ounce) can evaporated milk
1 fresh vanilla bean, split
2 small cinnamon sticks
Ground cinnamon, for topping

Steps:

  • Fill a medium pot halfway with water and bring to a boil. Remove from heat and add rice. Set aside 20 minutes.
  • Meanwhile, combine whole milk, sugar, evaporated milk, vanilla bean and cinnamon sticks in a large heavy-bottomed pot (at least 4 quarts) and set over medium heat. Cook, stirring occasionally, 40 minutes. If mixture starts to boil, reduce heat so it is just barely simmering.
  • While milk mixture cooks, drain the rice, rinse it and set it aside. Fill the medium pot halfway with fresh water and bring to a boil. Add drained rice to the boiling water, turn down heat, and simmer 6 minutes. Drain rice again.
  • Add drained rice to the milk mixture and continue to cook at a gentle simmer, stirring occasionally, until the mixture has thickened considerably, another 20 to 25 minutes. Let cool slightly (mixture will thicken more as it cools), then remove cinnamon sticks and vanilla bean. Serve warm, room temperature or cold, sprinkled with ground cinnamon to taste.

Arroz con leche is a classic dessert that is very popular in Latin America and Spain. This simple and delicious dessert is a creamy rice pudding that is flavored with cinnamon and is topped with raisins or toasted almonds. The origins of this dessert can be traced back to Spain, but it has been adopted and modified by various Latin American countries, each with its own unique twist on the recipe.

Traditional Arroz con Leche Recipe

The basic recipe for arroz con leche consists of rice, milk, sugar, cinnamon, and vanilla. To make this dessert, the rice is cooked in milk with cinnamon and sugar until it becomes thick and creamy. Once the rice pudding is ready, it is typically served chilled and topped with raisins or toasted almonds.
Ingredients:
  • 1 cup of rice
  • 4 cups of milk
  • 1 cup of sugar
  • 1 cinnamon stick
  • 1 teaspoon of vanilla extract
  • 1 cup of raisins or toasted almonds (optional)
Instructions:
  1. First, rinse the rice in water until the water runs clear. This helps to remove excess starch that can make the pudding gluey.
  2. In a medium-sized pot, combine the rice, milk, cinnamon stick, and sugar. Bring to a boil over medium-high heat, stirring occasionally to prevent the rice from sticking to the bottom of the pot.
  3. Once the mixture comes to a boil, reduce the heat to low and let it simmer for about 25-30 minutes, or until the rice is tender and the pudding has thickened.
  4. Remove the pot from the heat and stir in the vanilla extract. Let the pudding cool to room temperature, stirring occasionally to prevent a skin from forming on top.
  5. Once the pudding has cooled, refrigerate it for at least 2 hours or until it is completely chilled. Serve in individual bowls and top with raisins or toasted almonds, if desired.

Arroz con Leche, also known as rice pudding, is a popular dessert in many Latin American countries. This sweet and creamy dish is made by cooking rice with milk, sugar, and cinnamon. It's easy to make and requires only a few ingredients, making it a great dessert to serve for any occasion.

Tip #1: Choosing the Right Type of Rice

The type of rice you use for your arroz con leche recipe can make a big difference in the final result. It's important to choose a rice that's short-grain, such as Arborio or Calrose rice. These types of rice are starchier and will give your rice pudding a creamier texture.

Tip #2: Use Whole Milk

When making arroz con leche, it's best to use whole milk. This will give your rice pudding a creamier and richer flavor than if you were to use skim or low-fat milk. If you want to make it even richer, you can substitute some of the milk for heavy cream.

Tip #3: Add Condensed Milk

Adding condensed milk to your arroz con leche recipe will give it a sweeter and creamier flavor. You can use this to replace some of the sugar in your recipe. If you do decide to use condensed milk, be sure to reduce the amount of sugar you add to your recipe accordingly.

Tip #4: Use Cinnamon Sticks

Using cinnamon sticks in your arroz con leche recipe will infuse it with a warm and fragrant flavor. Be sure to use whole cinnamon sticks instead of ground cinnamon. You can add the cinnamon sticks to the pot of milk and let it simmer until the rice is cooked.

Tip #5: Cook the Rice Properly

To ensure that your rice pudding has the right consistency, it's important to cook the rice properly. First, you should rinse the rice to remove any excess starch. Then, you should add the rice to the pot of milk and let it simmer on low heat for about 20-25 minutes. Be sure to stir the rice regularly to prevent it from sticking to the bottom of the pot.

Tip #6: Let it Cool Before Serving

Once your arroz con leche is cooked, it's best to let it cool before serving. This will allow the pudding to thicken and give it a better consistency. You can refrigerate it for a few hours before serving, or let it sit at room temperature for about an hour. Just be sure to stir it occasionally to prevent a skin from forming on top.

Tip #7: Experiment with Different Toppings

One great thing about arroz con leche is that it's a blank canvas for toppings. You can experiment with different toppings to add flavor and texture to your pudding. Some popular toppings include whipped cream, toasted almonds, raisins, or fresh fruit. You can also sprinkle some cinnamon on top for an extra burst of flavor.

Tip #8: Serve in Small Portions

Arroz con leche can be quite rich, so it's best to serve it in small portions. You can use ramekins, small bowls, or even shot glasses to serve your pudding. This will also make it easier for your guests to try different toppings if you decide to serve them separately.

Conclusion

Arroz con leche is a delicious and easy dessert to make for any occasion. With a few simple tips, you can create a creamy and flavorful rice pudding that your guests will love. Whether you prefer it warm or cold, arroz con leche is sure to satisfy your sweet tooth.
