ARROZ CON GANDULES (PUERTO RICAN RICE WITH PIGEON PEAS)

Arroz con Gandules (Puerto Rican Rice With Pigeon Peas) image

Every step and ingredient adds something important to this recipe from the Puerto Rican-born chef and writer Reina Gascón-López. Annatto seeds steeped in oil give the rice its signature marigold hue. The banana leaf imparts a subtle tropical aroma to the rice as it cooks. Olives, ham, beer and peppers with their brine offer salt, fat, acid, umami and a bright pop of color. The sheer number of flavors layered into this dish make it a delight to unpack. The most exhilarating layer is the last one: pegao, the crisp, glassy shards of rice at the bottom of the pot. Gandules (pigeon peas) make this version of rice and beans distinctly Caribbean. Ms. Gascón-López prefers to start with dry gandules, which her family sometimes ships to her from Puerto Rico, then flavors the pot with some sofrito, a bay leaf or two and a smoked pork neck. If you have trouble finding dry pigeon peas, they are often labeled as toor at Indian grocery stores.

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 24

Fresh or thawed frozen banana leaves, washed and wiped for steaming and serving
1/4 cup neutral oil, such as canola
2 teaspoons annatto seeds
1 1/2 ounces ham or pork fatback, small diced (about 1/4 cup)
1/4 cup sofrito (recipe below)
2 tablespoons sliced manzanilla olives
1 tablespoon store-bought or homemade sazón spice blend with achiote (see Tip)
1 1/2 cups cooked pigeon peas, drained (reserve 2 1/2 cups cooking liquid, if possible)
Store-bought or homemade adobo spice blend (see Tip), to taste
Fine sea salt and freshly ground black pepper
1 1/2 cups medium-grain or jasmine rice
1/2 cup pale, lager-style beer
1 jarred roasted red pepper, thinly sliced, plus 3 tablespoons brine
1 teaspoon extra-virgin olive oil
1/2 large yellow onion, large diced (about 1 cup)
1/2 medium red bell pepper, stem, ribs and seeds removed, then large diced
1/2 medium green bell pepper, stem, ribs and seeds removed, then large diced
1/2 large cubanelle or Italian frying pepper, stemmed and seeded, then large diced
5 garlic cloves
1 loosely packed cup cilantro, roughly chopped
3 scallions, trimmed and roughly chopped
1 1/2 ají dulce peppers, stemmed and seeded (optional)
1/4 loosely packed cup roughly chopped culantro (optional)
3/4 teaspoon store-bought or homemade sazón spice blend with achiote (see Tip)

Steps:

  • Lay 1 banana leaf (or more, if needed) flat on a large cutting board, then set the lid of a large Dutch oven or similar pot on top. Use a paring knife to trace around the lid, and cut the leaf (or leaves) so that they will fit properly inside the pot. Cover with a clean dishcloth and set aside.
  • In a small saucepan, cook the neutral oil and annatto seeds over medium heat, allowing the seeds to infuse the oil. After 2 to 3 minutes, when the oil begins to bubble and the seeds start to crackle, turn off the heat and allow the oil to cool completely. Pour the cool oil through a fine-mesh strainer, reserving seeds for another round of infusing, if desired.
  • Make the sofrito: Use a food processor or high-speed blender to pulse the onion, red and green bell peppers, cubanelle pepper, garlic, cilantro, scallions, ají dulce peppers (if using) and culantro (if using), adding 1 to 2 tablespoons of water if needed to achieve a smooth, salsa-like consistency. Stir in 3/4 teaspoon sazón and set aside. (The sofrito makes about 2 cups. Refrigerate it for up to 5 days or portion it into ice cube trays or plastic containers, and freeze up to 6 months.)
  • Set the large Dutch oven or similar pot over medium-high heat. Add 3 tablespoons annatto oil and the ham or fatback. Sauté until crisp and most of the fat has rendered, about 6 minutes. Add 1/4 cup sofrito, the olives and 1 tablespoon sazón, stirring until sofrito is fragrant, about 3 minutes.
  • Next, add pigeon peas and sauté for another 3 minutes. Season with adobo, salt and black pepper to taste.
  • Reduce heat to medium. Add rice, stirring until grains are all coated, seasoned and starting to toast. If there isn't enough oil to generously coat all of the rice and peas in the pot, add the remaining tablespoon of annatto oil. This will help form a delicious golden bottom crust called pegao.
  • Once the rice is toasted, stir in the beer and cook for about 3 minutes, then add the reserved pigeon-pea liquid (or 2 1/2 cups water) and roasted red pepper brine. Taste the cooking liquid and adjust salt as needed; it should be pleasantly salty.
  • Gently stir rice, then spread about half the thinly sliced roasted red pepper over the rice. Drizzle with olive oil. Cover rice with prepared banana leaves, then cover pot with its lid and cook for 22 minutes.
  • Once the time has passed, remove the lid, open the banana leaves and gently fold the rice onto itself from the outside in to form a mound in the center of the pot. Reduce heat to medium-low, replace banana leaves and lid and continue cooking for 20 to 25 minutes to allow pegao to form at the bottom of the pot.
  • To serve, spoon rice atop a platter layered with fresh banana leaves. Garnish with remaining sliced roasted peppers. Use a metal spatula to scrape pegao out of the pot and serve on a separate plate. Be careful, because everyone will fight over it!

ARROZ CON GANDULES

Arroz con Gandules image

Arroz con gandules is a combination of rice and pigeon peas cooked in the same pot with sofrito. This is Puerto Rico's national dish along with roasted pork. I make a whole pot of arroz con gandules at least once a month just for me. I eat it all week long with nothing but lots of hot sauce. This rice dish is a must for all family events, gatherings or even a day at the beach.

ARROZ CON GANDULES RECIPE BY TASTY

Arroz Con Gandules Recipe by Tasty image

A traditional Puerto Rican dish, arroz con gandules is rice cooked with green pigeon peas. This orange-hued dish is full of flavor from the herby, peppery sofrito and pairs nicely with stewed chicken, pork, or red beans. Don't worry if the bottom layer burns a bit as you finish cooking the rice--this crispy layer is called pegao and is one of the best parts of the dish!

ARROZ CON GANDULES (RICE AND PIGEON PEAS)

Arroz Con Gandules (Rice and Pigeon Peas) image

This recipe starts with fresh pigeon peas and I am translating it from Spanish. It comes from an old cookbook, originally published in 1954 called "Cocina Criolla" by Carmen Aboy Valldejuli who was born in 1912. So I suppose she would know Puerto Rican cooking if anyone does!

Provided by threeovens

Categories     Rice

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 16

1 lb pigeon peas, picked over and rinsed clean (fresh gandules)
10 cups water, divided
4 teaspoons kosher salt
1/2 ounce bacon, minced
1 ounce ham, minced
1 medium onion, minced
1 aji bell peppers, seeded and minced (small sweet pepper that resembles an habanero)
1 green bell pepper, seeded and minced
1 medium tomatoes, minced
3 stems culantro, minced
3 fresh cilantro stems, minced
3 tablespoons achiote oil (Achiote Oil)
1/4 cup tomato sauce
3 pimento stuffed olives
1/2 teaspoon capers
2 1/4 cups long grain white rice

Steps:

  • Soak pigeon peas overnight in 6 cups of water; drain and discard water.
  • In a large, covered pot, combine peas with 4 cups water and bring to a boil over high heat; cover, reduce heat to medium, and cook 30 minutes.
  • Season with salt and cook 15 minutes more; drain, reserving 3 cups of the cooking liquid (you may need to add more water to end up with the 3 cups).
  • Meanwhile, in a Dutch oven, lightly brown the bacon and ham; add in the remaining sofrito ingredients and saute, over low heat until all the ingredients are tender and the tomatoes break down.
  • Stir in the additional ingredients and combine well; stir in the peas and rice.
  • Add the 3 cups of reserved cooking liquid and let cook, uncovered, until almost dry (it will look like little volcanos are erupting); stir up the rice from the bottom.
  • Cover and turn the heat down to the lowest setting and let cook 30 minutes, turning the rice, from the bottom, once halfway through cooking.
  • NOTE: This is how the dish is supposed to be cooked. I prefer to add the olives after the last turning of the rice for a "cleaner" flavor.

BROWN RICE AND PIGEON PEAS (ARROZ CON GANDULES)

Brown Rice and Pigeon Peas (Arroz Con Gandules) image

This is one of my favorite recipes of any kind. It's tasty, healthy, easy, quick, and I'm happy eating it for days on end. It's based on a Goya recipe that I adapted to use brown rice for better nutritional value. If you want to eat more whole grains but just can't find appetizing ways to prepare them, give this a try. It can also be made with long-grain white rice if you prefer (not jasmine rice or anything like that, just the ordinary kind). The canned pigeon peas and sazon can both be found in the latino/hispanic/international section of most US supermarkets.

Categories     Rice Sides

Time 1h5m

Number Of Ingredients 17

1 1/2 lb pork loin, cut in bite size pieces, be sure to buy pok loin
1/2 large sweet onion such as vidalia diced
1/2 large sweet bell pepper diced
4 clove fresh garlic smashed or put through a garlic press
1 c canola oil or lard
1/4 c good white table wine, not cooking wine
1 can(s) small can (8 ounces) tomato sauce
1/4 c diced culantro or cilantro (culantro is a long wide leaf with a hearty aroma like cilantro
1/2 tsp oregano, dried
1 Tbsp achiote/annato seeds or ground annato powder
1 Tbsp salt
1/4 tsp ground black pepper
2 c long grain white rice or jasmin rice
2 1/2 c chicken broth if available or water
1 small packet goya sazon seasonig with culantro and achiote
1 can(s) pigeon peas strained of all liquid
1/2 tsp garlic powder to season pork meat

Steps:

  • 1. Over a low flame first take the cup of the oil, add the annato seeds or achiote seeds and heat until just shimmering. Be careful not to use a high flame as the seeds will burn easly. The oil will turn a bright orange color as the seeds give up their color and flavor. Shut off the flame and strain the seeds from the oil. Discard the seeds. If you cant find annato or achiote seeds use ground annato or achiote powder, pour a tablespoon into the oil and slowly heat until the oil turns a bright orange color. Next strain oil in a lined wire mesh strainer fitted with a large coffee filter. Set the strainer over a pot or bowl and pour the oil into the filter little by little. With a spoon I move the annato or achiote powder all around to let the oil pass through the filter. When done discard the filter and keep the oil in a covered container to cook and flavor Latino dishes. Achiote or annato flavored oil is used alot in Puerto Rican and Mexican recipes. You can also use a clean cheese cloth, to strain seed or annato powder from the oil.
  • 2. Have your pork loin pieces at room temperature. Season the meat with garlic powder, salt, black pepper and a little oregano. In a heavy skillet add about a 1/4 cup of the annato or achiote flavored oil when hot (not to hot) add the meat and sear lightly on all sides. When the meat is browned all over remove from the pot with a slotted spoon into another dish.
  • 3. In the same pot you seared your meat add diced onion, garlic, bell pepper, cilantro or culantro and a little more flavored annato oil. Saute until the veggies are limp next add the wine, seasonings, oregano, salt pepper, Goya Sazon packet and tomato sauce. Continue to saute. Then add one can of pigeon peas, drained of all the liquid and continue to saute for about another minute. Now return the meat to the pot add one cup of broth or water and stir well to incorporate everything and bring up the heat to medium high
  • 4. Next rinse your rice in cool water twice to remove excess starch strain all the water and pour into the meat mixture. Add the remaining broth or water stir well. Taste the cooking liquid to see if there is enough seasonings, salt. Cover with a tight lid lower the flame to simmer and cook rice for 30 to 40 minutes. When time has elapsed, uncover fluff with a fork and serve. Enjoy
  • 5. Note: In Mexico annato seeds are kept in a container and hot lard is poured over them. When cooks are going to prepare their meals the lard is melted down and the strained lard is poured right into a fry pan or pot. Annato flavored oil is kept already prepared for cooking.

  • In a large pot add sazon, oil, sofrito, onion powder, garlic powder, adobo, ham, gandules, coconut milk, and tomato sauce. Simmer over medium fire. Stir ingredients together and let heat up for about 3 minutes. Add water continue to mix all ingredients together.Add salt to taste. Let it simmer until it comes to a boil. When water is boiling add rice. Stir in the rice so it all evens out with taste. Cover the pot. When you see all the water has dried stir rice so it all cooks evenly. Covering the the rice allows it to cook but also helps to keep it nice and moist not dry and hard. (if rice seems a bit hard just sprinkle a bit a water on top and cover) at times this will happen if it's your first time making rice.

RICE COOKER ARROZ CON GANDULES

Rice Cooker Arroz Con Gandules image

Through years of friendship with a large Puerto Rican family, I've picked up several tasty recipes, including this staple which is served at every family dinner. It works fine as a side dish, but I've often eaten it as a main dish as well (sometimes I sprinkle it with shredded cheese before serving). It was easy to adapt...

Arroz con gandules is a traditional Puerto Rican dish that has gained immense popularity in recent years. It translates to "rice with pigeon peas" in English and is a staple dish in family gatherings and celebrations.

History

The dish's origins date back to the island's colonization era, where the Spaniards brought over a variety of spices and ingredients. The African slave trade also brought in new cooking techniques and ingredients that eventually blended with the existing cuisine to create what we know today as Puerto Rican cuisine. Arroz con gandules, in particular, is believed to have originated from the Caribbean region and is now enjoyed by many across the world.

Ingredients

The traditional arroz con gandules recipe calls for rice, pigeon peas, sofrito (a mixture of onions, peppers, garlic, and other herbs and spices), sazón (a seasoning blend consisting of cumin, coriander, garlic, and other spices), tomato sauce, and sometimes ham or bacon.
Rice
The type of rice used in arroz con gandules is usually long-grain, and the ratio of water to rice is crucial in obtaining the perfect texture.
Pigeon peas
Traditionally, the pigeon peas are cooked from scratch by boiling them in water with a few seasonings. However, canned pigeon peas can be used as a convenient alternative.
Sofrito
The sofrito is the foundation of many Puerto Rican dishes and can be bought pre-made or made from scratch. The herbs and vegetables used in the sofrito add depth of flavor and aroma to the dish.
Sazón
Sazón is a seasoning blend essential to Puerto Rican cuisine, and it adds color and taste to the dish. It can be bought pre-made or made from scratch.
Tomato sauce
Tomato sauce adds a savory element to the dish and enhances the flavor.
Ham or bacon
Adding ham or bacon to the dish is optional, but it adds a smoky flavor that complements the other ingredients.

Preparation

The preparation of arroz con gandules is relatively simple but requires attention to detail to achieve the desired outcome. Here are the steps involved:
Step 1: Cooking the pigeon peas
If using canned pigeon peas, drain and rinse them before use. If cooking from scratch, add the washed pigeon peas to a pot with enough water to cover them and boil until tender.
Step 2: Preparing the sofrito
Heat a pan over medium heat and add the sofrito. Cook until fragrant, stirring occasionally.
Step 3: Adding the rice
Add the rice to the sofrito and cook for a few minutes, stirring occasionally. This helps the rice absorb the flavors of the sofrito.
Step 4: Adding the remaining ingredients
Add the sazón, tomato sauce, and water to the pot and stir to combine. Add the cooked pigeon peas and ham or bacon, if using.
Step 5: Cooking the rice
Cover the pot and bring it to a boil. Reduce the heat to low and let it simmer until the rice is fully cooked and the liquid is absorbed. This should take about 20-25 minutes.

Variations

There are several variations of arroz con gandules, depending on the region and personal preferences. Some popular variations include:
Arroz con gandules y pollo (rice with pigeon peas and chicken)
This variation adds chicken to the dish, making it a complete meal in itself. The chicken can be seasoned with the sofrito and sazón before being added to the pot.
Arroz con gandules con coco (rice with pigeon peas and coconut)
This variation adds coconut milk to the dish, giving it a creamy texture and a slightly sweet taste. The coconut milk can be added in place of some of the water or tomoto sauce.
Arroz con gandules con patitas de cerdo (rice with pigeon peas and pig's feet)
This variation involves adding pig's feet to the dish, which gives it a distinct flavor and tenderizes the meat. The pig's feet are cooked separately and added to the pot with the other ingredients towards the end of cooking.

Conclusion

Arroz con gandules is a flavorful and comforting dish loved by many. Its simplicity and adaptability make it a go-to recipe for family dinners or celebrations. It’s a dish that has become a symbol of Puerto Rican culture and heritage, and its popularity is a testament to its deliciousness.

Tips for Making Delicious Arroz con Gandules Recipes

Arroz con gandules is a traditional Caribbean dish that is loved by many. This flavorful rice and pigeon pea combination is the perfect side dish for any meal. When making arroz con gandules, there are several tips that can help you create a delicious and authentic dish that will impress your family and friends. Here are some tips to keep in mind:
1. Use High-Quality Ingredients
The quality of the ingredients you use will significantly impact the flavor of your arroz con gandules. It's crucial to use fresh and high-quality ingredients, including rice, pigeon peas, sofrito, and sazon. Make sure the rice is washed and drained before cooking to help remove excess starch, which can cause the rice to become sticky.
2. Don't Be Stingy with the Sofrito
Sofrito is a crucial ingredient in arroz con gandules, and it's vital to use enough to enhance the flavor of the dish. Don't be stingy with the sofrito; instead, use enough to achieve the desired flavor. You can find pre-made sofrito in most ethnic grocery stores, or you can make your own by blending onions, peppers, garlic, cilantro, and other herbs in a food processor.
3. Use the Right Rice
Choosing the right type of rice is essential when making arroz con gandules. It's best to use medium-grain or short-grain rice, as they are better suited for absorbing the liquids and flavors in the dish. Avoid using long-grain rice, as it tends to become too dry and doesn't absorb the flavors as well.
4. Add Extra Flavor with Sazon
Sazon is a popular seasoning used in many Caribbean dishes, including arroz con gandules. It's a blend of spices that adds flavor and color to the dish. Sazon can be found in most grocery stores, or you can make your own by mixing together cumin, coriander, garlic powder, onion powder, and achiote powder.
5. Cook the Pigeon Peas Separately
Pigeon peas are an essential ingredient in arroz con gandules, but they should be cooked separately from the rice. If cooked together, the rice may become mushy, and the pigeon peas may not have the right texture. Cook the pigeon peas according to the package instructions before adding them to the rice.
6. Use Chicken Broth for Extra Flavor
Using chicken broth instead of water when cooking the rice will add extra flavor to your arroz con gandules. The chicken broth provides a savory depth of flavor that water simply cannot match. If you're vegetarian, you can use vegetable broth instead.
7. Don't Overcook the Rice
Overcooking the rice will result in a mushy and unappetizing dish. Use a timer and follow the cooking instructions carefully, checking the rice periodically to ensure it's cooked to perfection. It's better to slightly undercook the rice than to overcook it, as you can always add more liquid and continue cooking until it reaches the desired texture.
8. Let the Rice Rest Before Serving
After the rice is cooked, allow it to rest for a few minutes before serving. This will help the rice absorb any excess liquid and allow the flavors to meld together. Fluff the rice with a fork before serving to ensure it's light and fluffy.
9. Garnish with Fresh Cilantro
Fresh cilantro is a traditional garnish for arroz con gandules and adds a bright and refreshing flavor to the dish. Chop up some fresh cilantro and sprinkle it over the top of the rice before serving.
10. Serve with Lime Wedges
Lime wedges make a great accompaniment to arroz con gandules, as the citrusy flavor helps cut through the richness of the rice. Squeeze a wedge of lime over the rice before eating for an extra burst of flavor. In conclusion, arroz con gandules is a delicious and versatile side dish that can be enjoyed with a variety of meals. By following these tips and using high-quality ingredients, you can make a flavorful and authentic arroz con gandules recipe that will delight your taste buds.
