1 lb lean ground beef
1 lb ground lamb
1 lg onion, diced small
1 green bell pepper, diced small
1 c fresh chopped parsley, chopped fine
2-3 T tomato paste
1/2 t allspice
1 t black pepper
2 t salt
1/4 t cayenne pepper
1/4 c flour
1 T fresh lemon juice

Steps:

  • - Mix all of the ingredients together until well blended - Form into oval patties - Grill or broil to preferred done-ness (I don't have a grill, so I use a panini press or grill pan)

1 pound ground beef
1 pound ground lamb
1 medium onion, halved and sliced
1 can (6 ounces) tomato paste
2 jalapeno peppers, seeded and diced
1/4 cup minced fresh parsley
2 tablespoons harissa chili paste
2 tablespoons dry red wine
1 tablespoon ground sumac
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon pepper
8 flour tortillas (6 inches)
Cooking spray
1 medium lemon, cut in wedges

Steps:

  • Preheat broiler. In a large skillet, cook and crumble beef and lamb with onion over medium-high heat until meat is no longer pink, 5-7 minutes; drain., Mix together next nine ingredients. Add to meat mixture; cook, stirring occasionally, until well blended and heated through. Remove from heat., In batches, spritz both sides of tortillas with cooking spray and place on a baking sheet; broil 4-5 in. from heat until crisp and lightly browned, 45-60 seconds per side. Spread meat mixture over tortillas. Serve with lemon wedges.

3/4 lb ground lamb, not too lean
1/4 lb ground beef
1 medium onion, chopped
2 tablespoons chopped parsley
2 tablespoons green peppers, chopped fine
3/4 cup tomato juice
salt and pepper

Steps:

  • Knead all the ingredients together.
  • Let stand for 5 hrs in the fridge,.
  • Shape into patties, place on a baking pan and broil both sides. Serve with the drippings.
  • These can also be pan fried or grilled, but it's not the same. So I very much recommend cooking them as directed in the recipe, as the pan drippings are pretty much key in this. Broiling/cook time will depend on the thickness of your patties and how well you like them done. I'm gonna say 18 minutes just for a roundup/ballpark est.

This recipe comes from The Armenian Kitchen. This lamb burger is really good I think you will be suprised how good lamb is.

- 1 1/4 pound lamb shoulder
1 teaspoon(s) salt
3/4 teaspoon(s) allspice
3/4 teaspoon(s) coriander
1/2 teaspoon(s) ground red pepper
1 medium onion chopped

Steps:

  • Add the seasoning to the lamb and mix thoroughly. Make a small patty and cook on the stove to test the mix before proceeding.
  • Divide the meat into 6 even portions and shape each by rolling between your hands.
  • Cook on a hot grill ( charcoal rather than gas if you can ). Turning frequently with tongs. Serve well done.
  • Grill some veggies like tomatoes squash and bell pepper if you want.
  • Serve on flat bread. Place each burger on a piece of bread and add onion and parsley.

ARMENIAN KUFTA

This would be categorized as a 'stuffed' meatball! It's a recipe that cousin Debbie, sister Diane and I worked on this winter, trying to replicate our grandmother's kufta. It's been many many years since we've had this, and I think we have it down pretty well. It can be made as a side dish or a main dish soup, by adding pasta and vegetables to the broth when you add the meatballs.

1 1/2 lbs ground lamb or 1 1/2 lbs beef
2 cups cracked wheat, fine ground
1 small onion, minced
1 tablespoon parsley, minced
2 teaspoons salt
1/2 teaspoon black pepper
1 lb ground lamb or 1 lb beef
1 large onion, chopped
1/2 cup parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
2 quarts broth, beef or 2 quarts chicken

Steps:

  • For the outside shell, mix 1-1/2 lbs. ground lamb, bulghur, onion, salt, pepper and parsley together with 1 cup of water. Knead until it becomes cohesive and dough like.
  • Set aside and brown 1 lb lamb with large chopped onion until meat is cooked. Add parsley, salt and pepper and cool.
  • In the meantime, roll outside shell mixture into balls the size of a small egg. Use a bowl of ice water to keep mixture from sticking to your hands. Shape into cups by inserting your thumb into ball and rotating in your opposite hand until you form a thin shell. Keep wetting your hands in the ice water to keep shell from cracking.
  • Fill shell with cooked meat mixture, about 1 tablespoon, close shell, wetting hands with ice water, and seal opening.
  • Set aside on a sheet pan, continue to roll balls. Place tray in refrigerator to chill.
  • Boil 2 quarts of broth, add pasta and vegetables. Add meatballs and cook them 10 minutes or until they rise to the top.
  • Sometimes served with yogurt on the side.
