1 cup butter, softened
3 ounces cream cheese, softened
1 cup sugar
1/4 teaspoon salt
1 large egg
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
FROSTING:
3 cups confectioners' sugar
1/3 cup butter, softened
1-1/2 teaspoons vanilla extract
2 to 3 tablespoons 2% milk
Food coloring, optional
Assorted sprinkles or candies

Steps:

  • In a large bowl, cream butter, cream cheese, sugar and salt until light and fluffy. Beat in egg and vanilla. Gradually beat in flour. Refrigerate, covered, 1-2 hours or until firm enough to roll., Preheat oven to 375°. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with floured cookie cutters. Place 1 in. apart on ungreased baking sheets., Bake 7-8 minutes or until edges are lightly browned. Cool on pans 1 minute. Remove to wire racks to cool completely., In a small bowl, beat confectioners' sugar, butter, vanilla and enough milk to reach desired consistency. If desired, add food coloring. Decorate cookies with frosting and sprinkles.

1/2 cup unsalted butter (room temperature)
4 oz cream cheese (room temperature)
1 1/2 cups powdered sugar
1 large egg
1 tsp vanilla extract
2 cup all-purpose flour
1/2 tsp baking powder
1/4 teaspoon salt

Steps:

  • Start off by adding 1/2 cup unsalted softened butter and 4 ounces softened cream cheese to a large mixing bowl. Use an electric half mixer to cream them together really well.
  • Now mix in 1 1/2 cup powdered sugar and mix it at low speed.
  • Then add, 1 large egg and 1 teaspoon vanilla extract and mix it in.
  • Now sift in 2 cups all-purpose flour, 1/2 tsp baking powder, and 1/4 teaspoon salt.
  • Mix the dry ingredients well. Now scoop out the cookie dough using a medium-sized cookie scoop.
  • Then use your hands to round the dough into balls.
  • Place the cookies on a baking sheet lined with parchment paper and bake in a preheated 375 degree Fahrenheit oven for 10 minutes. Make sure to bake on the center rack.

ARKANSAS: Munch your way across the USA. Years ago our church gave each of us, who submitted recipes to the church cookbook, a cookie recipe book called "Capitol Cookies". This book has cookie recipes to represent each US state, as well as Washington, DC. This paticular recipe is by the Henderson United Methodist Women in Little Rock, Arkansas, Marjorie Christian, Chairperson. I have only tried a few of these recipes and this is one I made on 2/13/11. They are very good and my husband says it's a keeper.

2 stick(s) butter, room temperature
8 ounce(s) cream cheese, room temperature
1 cup(s) granulated sugar
2 cup(s) all purpose flour
3/4 cup(s) chopped nuts (optional)
1/2 teaspoon(s) vanilla extract
- dash of salt

Steps:

  • Cream butter, cream cheese and sugar together. Stir in flour, salt, nuts and vanilla and combine well. The dough will be stiff and a bit sticky until chilled.
  • Roll up (log style) making three (3) logs. Wrap each log roll in plastic wrap or foil if freezing. If cooking the next day, just wrap logs in plastic wrap or wax paper then wrap a damp cloth around logs and place in fridge overnight. This is a very important step.
  • Preheat oven to 350. Line cookie sheet with aluminum foil and spray with Pam. Remove dough from cloth & wrap, slice thin and place onto cookie sheet 2" apart. Bake on 350 for approximately 13-15 minutes.
  • NOTE: I also froze one of the log rolls and they do great this way, too.
