1 large broiler-fryer chicken
1 tablespoon salt
3 tablespoons butter
1 egg, slightly beaten
1/4 teaspoon salt
2 tablespoons butter
1 cup chicken broth (cooled)
2 cups all-purpose flour

Steps:

  • Boil chicken in 2 quarts of water, to which salt and butter have been added, until tender. Remove chicken, strain, and reserve broth. Remove skin of chicken and bone. Cut meat into large pieces.

  • Mix egg, salt, butter, and broth together. Add flour, mixing with a fork, a small amount at a time. Knead in flour until a stiff dough is formed. Roll out very thing. Cut in strips. Bring chicken broth to a boil. Pull apart and stretch strips of dough as you drop into broth. Reduce heat and cook about 10 minutes (covered), stirring occasionally. Add cut-up chicken to dumplings and enjoy!

2 whole boneless skinless chicken breasts
2 eggs, beaten
3 tablespoons paprika
salt and pepper
3 tablespoons cornstarch
1/4 cup oil
oil (for frying)

Steps:

  • Cut chicken into strips 1/2" by 3".
  • Place them in bowl, add eggs seasonings, cornstarch,and 1/4 cup oil.
  • Mix well and let it set for about 10 minutes.
  • Drop each strip separately into oil and fry for about 2 minutes.
  • Remove and drain on paper towels.
  • Serve with favorite veggies.

2 bone in skin on chicken breasts
1 cup self rising flour
2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon ground ginger
peanut oil (for frying)

Steps:

  • Directions: Heat oil in deep fryer to 375 degrees F.
  • Rinse and pat dry chicken breasts.
  • In a large Zip Loc bag, combine flour, salt, pepper, and ginger.
  • Place chicken, one breast at a time in bag, seal and shake well.
  • Repeat process with both breasts until each one is breaded twice.
  • Place both chicken breasts in hot oil and reduce temperature to.
