2 pork tenderloins (about 1 lb each)
1 tablespoon paprika
2 teaspoons EACH: onion powder and garlic powder
1 teaspoon EACH: oregano, salt, and pepper
1 tablespoon cooking oil
½ cup beef broth
1 tablespoon apple cider vinegar
1 tablespoon butter (can sub ghee for dairy-free)
Minced parsley (to serve)

Steps:

  • Preheat your oven to 400 degrees. Dry the pork tenderloins well with paper towels.
  • Mix the paprika, onion powder, garlic powder, oregano, salt, and pepper together in a small bowl. Rub this spice mix over all sides of the pork.
  • Heat the oil in a large frying pan over medium-high heat. Add the pork, working in 2 batches if your pan is not big enough to fit both tenderloins without them touching. Sear the pork on all sides until it is brown, about 6 minutes total. Take the pan off the heat.

1 lb pork chops
1 Tbsp arizona dreaming
4 c cooked rice, noodles or mashed potatoes
SAUCE:
1 Tbsp canola oil
1 large onion, chopped
1 - 2 Tbsp arizona dreaming
1 1/2 c water, divided
1 1/2 c chopped fresh tomatoes, roasted red peppers or stewed tomatoes
2 tsp honey
1/3 c sour cream
salt and pepper

Steps:

  • 1. Preheat oven to 325. Wash pork, pat dry. Season with the Arizona Dreaming. Place in a skillet with hot oil or butter and fry until done. Remove chops and set aside, but keep warm while making sauce.
  • 2. For the sauce, remove all but 1 - 2 tbsp of oil in pan. Add the onion. After about 3 minutes, when the onion is turning translucent but not brown, add the Arizona Dreaming and stir. Then add 1 cup of the water, the tomatoes or peppers and honey. Cook 15 minutes, stirring frequently. After 20 minutes, add the remaining water, along with the minced cilantro if using.
  • 3. Remove the pan of sauce from the heat. using a slotted spoon, mix about half of the sauce into the cooked rice. The slotted spoon helps you get the chunkier bits and less liquid into the rice. Pour the remaining sauce into a medium bowl and gently mix in the sour cream.

1 1-lb. pork tenderloin
1 TB. ARIZONA DREAMING
4 Cups cooked rice
1 TB. canola oil
1 large onion, chopped
1-2 TB. ARIZONA DREAMING
11/2 Cups water, divided
11/2 Cups chopped fresh tomatoes (we used cherry tomatoes)
2 tsp. honey
1-2 TB. fresh cilantro, finely minced (optional)
1/3 Cup sour cream

Steps:

  • Preheat oven to 325°. Wash pork, pat dry. Season with the ARIZONA DREAMING. Place in a roasting pan and cook until the desired doneness is reached (165° will take 40-50 minutes). While the pork is in the oven, prepare the sauce. For the sauce, heat the oil in a large skillet over medium heat. Add the onion. After about 3 minutes, when the onion is turning translucent but not brown, add the ARIZONA DREAMING and stir. Then add 1 cup of the water, the tomatoes and honey. Cook 20 minutes, stirring frequently to break up the tomatoes. After 20 minutes, add the remaining water, along with the minced cilantro if using. Remove the pan of sauce from the heat.
