Peel of 1 orange, cut into 1 by 1/8-inch strips
Peel of 1 lemon, cut into 1 by 1/8-inch strips
3 sugar cubes
6 whole cloves
2-inch cinnamon stick
1 cup cognac
1/2 cup curacao or other orange liqueur
2 cups fresh strong black coffee

Steps:

  • Light the burner under a brulot bowl or chafing dish and adjust the flame to low. Drop the orange and lemon peel, sugar cubes, cloves, and cinnamon stick into the bowl or pan, pour in the cognac and curacao, and stir to dissolve the sugar. When the mixture is warm, ignite it with a match. Stirring gently, pour the coffee into the bowl in a slow, thin stream; continue to stir until the flame dies out. Ladle into brulot cups or demitasse cups and serve at once.

1 1/2 -ounce Amaretto
3/4-ounce white Creme de Menthe
Whole almonds, for garnish

Steps:

  • Fill a cocktail shaker half full of ice cubes. Pour all ingredients into shaker and shake well. Strain drink into a martini glass and garnish with whole almonds.
  • Cook's Tip: Place a folded paper towel on a dessert plate and add 2 tablespoons of Amaretto. On another dessert plate, put 1 tablespoon crushed almonds. Rim the top of the martini glass with the Amaretto and crushed almonds, then pour the drink into the glass and serve.

6 boneless skinless chicken breast halves
salt
pepper
garlic powder
curry powder
flour
1/4 cup butter
1/2 lb fresh mushrooms, thickly sliced
1/4 cup Amaretto
1 grated lemon, juice and zest of
1 1/2 cups chicken broth
1 tablespoon cornstarch
pepperidge farm patty shell

Steps:

  • Cut chicken into 1 inch wide strips. Sprinkle with salt, pepper, garlic powder and curry powder.
  • Roll strips in flour. Heat butter in large skillet. Brown chicken pieces on all sides. Add mushrooms, Amaretto, grated lemon rind and juice. Simmer 5 minutes.
  • Mix chicken broth and cornstarch. Stir mixture into skillet. Stir over low heat until mixture bubbles and thickens.
  • Season to taste with salt, if necessary. Spoon mixture into baked patty shells. Garnish with parsley and diced tomato, if desired. Makes 6 servings.

5 boneless chicken breasts
3 tablespoons flour
1 1/2 teaspoons salt
1 1/2 teaspoons pepper, Ground
2 teaspoons paprika
1 tablespoon vegetable oil
3 tablespoons butter
1 1/2 tablespoons Dijon mustard
1 can frozen orange juice
1 cup Amaretto

Steps:

  • Mix the can of frozen orange juice with a half can of water.
  • Preheat oven to 350 degrees.
  • Combine flour, salt, pepper, paprika and garlic salt.
  • Coat chicken with this mixture.
  • Heat oil and butter in skillet and saute chicken until brown.
  • Remove and put in casserole.
  • To skillet, add mustard, orange juice and Amaretto.
  • Increase heat and boil, stirring constantly, until thick.
  • Pour sauce over chicken and bake, covered, for 45 minutes. this can be frozen and reheated later.
