BLACKBERRY GIN FIZZ FLOAT
Steps:
- Heat the blackberries, sugar, and water in a small pot over medium-high heat. While warming, smash with a potato masher, until a thick even consistency is reached, about 8 minutes.
- Pour the blackberries through a sieve, into a bowl, pushing some flesh through with the juices, making sure to catch the seeds. Cool in the refrigerator for at least 10 minutes.
- Fill a cocktail shaker with 2 tablespoons of blackberry puree, 2 tablespoons of the mint leaves, 2 ounces of gin, 1 tablespoon lime juice, and a handful of ice. Shake vigorously 5 to 6 times until the drink is ice cold. Strain the mixture into a tall glass. Top with 6 ounces of ginger ale and stir lightly. Repeat for the remaining 3 servings. Finish and serve with a scoop of sorbet or ice cream.
AQUAFABA MAYONNAISE
Steps:
- Add the aquafaba, vinegar, mustard, honey and a generous pinch of salt to a high-powered blender or to a tall glass or jar if using an immersion blender. Blend on high speed until foamy, about 30 seconds.
- With the blender running on high, begin to stream in the oil. Incorporate the oil very slowly, 1 to 2 minutes. (If using an immersion blender, raise and lower the blender near the end to incorporate air.) If mixture seems too thin, stream in more oil until the desired consistency is achieved. Use immediately or store in an airtight container in the fridge for up to 1 week.

Steps:
- Cook's Note: Orange flower water is available at better liquor stores and Middle Eastern markets. Be very careful when adding this to your cocktail as it can easily overwhelm the flavors in this delicious drink.
- Add the gin, half-and-half, simple syrup, orange flower water, vanilla if using, egg white and lemon and lime juices in a cocktail shaker. Shake vigorously for 3 minutes, or blend with an immersion blender until frothy, about 20 seconds. Pour into an ice-filled highball glass, and top with the seltzer water.
- Food Network Kitchens suggest caution in consuming raw and lightly-cooked eggs due to the risk of Salmonella or other food-borne illness. To reduce this risk, we recommend you use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell. For recipes that call for eggs that are raw or undercooked when the dish is served use shell eggs that have been treated to destroy Salmonella, by pasteurization or another approved method.

Steps:
- For the honey simple syrup: Combine the honey with 1/2 cup water in a small saucepan and bring to a boil over medium heat. Turn down to a simmer and cook until the honey completely melts, 2 to 3 minutes. Remove from the heat and chill completely before using. Store in an airtight container in your refrigerator for up to 10 days.
- For the cocktail: Muddle the chopped apple in a cocktail shaker. Add the gin, 1 teaspoon simple syrup, lemon juice and egg white. Shake vigorously until frothy, 1 to 2 minutes. Add ice to the cocktail shaker and shake again until chilled. Strain into martini glasses, then top each with a splash of club soda and garnish with the apple slices. Enjoy!
