SHRIMP SPRING ROLLS WITH SPICY APRICOT MUSTARD DIP

Shrimp Spring Rolls with Spicy Apricot Mustard Dip image

Provided by Sandra Lee

Time 40m

Yield 4 servings or 8 rolls

Number Of Ingredients 9

1 cup chopped cooked shrimp
2 cups broccoli slaw
2 tablespoons prepared sesame-ginger marinade
1 (4.7-ounce) package spring roll wrappers
Canola or vegetable oil, for deep frying
1 tablespoon sesame-ginger marinade
1/2 cup apricot preserves
1/4 cup spicy brown mustard
1/2 teaspoon hot sauce

Steps:

  • For the dip: In a small bowl, stir together the marinade, preserves, mustard and hot sauce.
  • For the spring rolls: In a bowl, mix together the shrimp, slaw and marinade. Place a spring roll wrapper on your work surface with 1 of the corners facing you so it looks like a diamond. (Keep the spring roll wrappers covered with a damp towel so they don't dry out). Place 2 tablespoons filling on the lower third of the wrapper. Spread the filling out in a line from side to side. Roll the bottom corner up over the filling, and then fold in the sides. Moisten the top corner with some water, using your finger or a brush, and roll the filling over it so it sticks to itself and forms a seal. Place seam-side down on a plate and keep covered with a damp towel while you make the remaining rolls.
  • When you are ready to cook, fill a large, heavy-bottomed pot with enough oil to come up about 3 inches from the bottom. Place over medium-high heat and bring to 360 degrees F. Add the spring rolls, a few at a time, and cook until they are golden brown, 2 to 3 minutes. Drain on paper towels and keep warm while you fry the rest. Serve with the spicy apricot mustard dip.

What are Apricot Rolls?

Apricot rolls are a sweet treat made using apricot jam or dried apricots. The base of the roll is usually a pastry dough, which can be made using ingredients like flour, butter, sugar, and eggs. The dough is rolled out, and the apricot filling is placed on top. The dough is then rolled up into a log, sliced into rounds, and baked until golden brown.

History of Apricot Rolls

The origins of apricot rolls are unclear, but they are believed to have originated in Eastern Europe, particularly in Hungary and Poland. The pastry is traditionally served during the holiday season, especially during Christmas and New Year’s Eve.

Types of Apricot Rolls

There are several variations of apricot rolls, including:
1. Yeast-Based Apricot Rolls
These rolls are made using yeast in the dough, which gives it a slightly leavened texture. The dough is left to rise for several hours, making it fluffy and airy. The yeast-based rolls are also called sweet rolls or sweet bread.
2. Puff Pastry Apricot Rolls
These rolls are made using puff pastry dough, which is a flaky pastry that is rolled out and folded over several times to create layers. The layers give the pastry its signature flakiness and crispiness. The puff pastry apricot rolls are also called apricot strudel.
3. Traditional Apricot Rolls
These rolls are made using a simple pastry dough recipe, which is rolled out and filled with apricot jam or dried apricots. They are then baked until golden brown and served with powdered sugar on top.

Health Benefits of Apricot Rolls

While apricot rolls are a tasty treat, they are also quite nutritious. Apricots are rich in vitamins A and C, which are essential for maintaining healthy skin, hair, and eyes. They are also a good source of fiber, which can aid in digestion and weight loss. Additionally, apricots are rich in antioxidants, which can help protect against cancer and other diseases.

Conclusion

Apricot rolls are a delicious and nutritious pastry that can be enjoyed during the holiday season or any time of the year. There are several variations of the pastry, each with its own unique flavor and texture. Whether you prefer yeast-based rolls, puff pastry rolls, or traditional rolls, there is a recipe out there that will satisfy your taste buds.
Apricot rolls make for a delicious and satisfying treat that can be enjoyed at any time of the day, whether as a snack or as part of a meal. They are also a great way to use up any leftover apricots that may be too ripe to eat fresh. Making these rolls does not require a lot of time or effort, and they can be easily customized to meet your taste preferences.

Tips for Making the Perfect Apricot Rolls

1. Choose the Right Apricots
The first step to making delicious apricot rolls is to choose the right apricots. You want to ensure that the apricots you choose are ripe, but not overly soft or mushy. Furthermore, it is important to select apricots that are rich in flavor and have a sweet and slightly tangy taste. You can use fresh or dried apricots, depending on your preference.
2. Use Quality Flour
The dough used to make apricot rolls plays a significant role in the overall taste and texture of the final product. Therefore, it is crucial to use quality flour when making the dough. All-purpose flour is a good option, but you can also use bread flour, which has a higher protein content and will make the dough more elastic.
3. Add a Few Sprinkles of Sugar
Adding a little sugar to the dough can enhance the flavor and help balance the tanginess of the apricots. Granulated sugar is a good option, and you can add a pinch or two to the dough before rolling it out.
4. Roll the Dough Thinly
Rolling the dough thinly is key to creating light and delicate apricot rolls. It also makes it easier to wrap the dough around the apricot filling, resulting in a neater and more uniform shape. Aim for a thickness of about 1/8 inch.
5. Seal the Edges Properly
To prevent the filling from spilling out during baking, it is important to seal the edges of the dough properly. You can use a fork to crimp the edges or simply press them together with your fingers. Make sure to seal the edges tightly to avoid any leaks.
6. Egg Wash for a Golden Brown Finish
Brushing the dough with an egg wash before baking gives it a beautiful golden brown finish. To make the egg wash, beat an egg and brush it lightly over the surface of the dough. You can also sprinkle a little sugar on top to add some sweetness and crunch.
7. Let Them Cool
It may be tempting to dive right into your freshly baked apricot rolls, but allowing them to cool for a few minutes is essential. This will not only prevent you from burning your mouth, but it will also allow the filling to cool slightly and set. Waiting a few minutes before serving will result in a more satisfying and enjoyable experience.
8. Store Them Properly
Storing apricot rolls properly will ensure that they stay fresh and tasty for longer. You can store them in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week. If you want to freeze them, wrap them tightly in plastic wrap and store them in an airtight container or freezer bag for up to three months.
9. Experiment with Flavors
While apricot rolls are delicious on their own, they can also be enhanced with other flavors and ingredients. For example, you can add a sprinkle of cinnamon or nutmeg to the dough or the filling, or mix in some chopped nuts for added texture. You can also substitute the apricot filling with other fruits such as peaches, cherries, or berries.

Conclusion

Making apricot rolls at home is easy and fun. Just remember to choose the right apricots, use quality flour, and seal the edges tightly. Experimenting with different flavors and ingredients can also be a fun way to customize your rolls and create your own unique recipe. With these tips, you can become a pro at making delicious apricot rolls that everyone will love.
